MUSHROOM STUFFING



Mushroom Stuffing image

This traditional bread stuffing features assorted mushrooms -- choose any variety you like.

4 tablespoons butter, plus more for baking dish
2 large onions, cut into 3/4-inch dice
6 stalks celery, sliced crosswise 1/4 inch thick
Coarse salt and ground pepper
1 1/2 pounds assorted mushrooms, trimmed and halved or quartered (for uniform pieces)
2 loaves Italian bread (1 pound total), cut into 1-inch cubes (about 16 cups) and dried
1 can (14.5 ounces) reduced-sodium chicken or vegetable broth
1 cup coarsely chopped fresh parsley
3 large eggs, lightly beaten

Steps:

  • Preheat oven to 400 degrees. Butter an 8-inch square (or other shallow 2-quart) baking dish for extra stuffing.
  • Heat butter in a large skillet over medium heat; add onions, celery, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Cook, tossing often, until beginning to brown, 12 to 15 minutes.
  • Add mushrooms. Cover; cook until they release liquid, 5 to 7 minutes. Uncover; cook, tossing occasionally, until tender and liquid has evaporated, 10 to 12 minutes more. Transfer to a large bowl; let cool completely.
  • Add bread, broth, parsley, and 3/4 cup water to bowl; toss well. Season with salt and pepper; mix in eggs.
  • Prepare and stuff turkey. Transfer extra stuffing to prepared baking dish, and cover with buttered foil. Refrigerate until ready to cook.
  • During last 20 minutes of turkey roasting time, put covered dish in oven. Bake 25 minutes. Remove foil; bake until golden, 20 to 25 minutes.

1 (6 ounce) package Stove Top stuffing mix, Monterey Style with Mushroon & Onion
1 2/3 cups hot chicken broth
1/4 cup butter
2 (10 ounce) packages frozen chopped spinach, thawed and drain
2 cups grated parmesan cheese
1 cup chopped fresh mushrooms
1 small onion, finely diced
3 -4 eggs

Steps:

  • Heat oven to 400°F.
  • Mix stuffing, water and butter in a large bowl. Add all additional ingredients and mixed until well blended.
  • Shape into 60 balls, about 1 inch across.
  • Place in a single layer on a greased baking sheet. Chill 2 hours.
  • Bake 15 to 20 minutes or until lightly browned.

I made this stuffing the first time I hosted our family Thanksgiving and it has been a requirement ever since. You can use any type of bread with this, but I think pumpernickle & rye are the best combination. Although the list of ingredients looks a bit long, it is easy-peasy to put together, tastes great & has a nice presentation.

1 (10 ounce) package frozen chopped spinach, thawed
12 ounces pork sausage
3/4 cup onion, chopped
2 medium sweet peppers, chopped
1 cup celery, chopped
1/2 cup butter
2 teaspoons dried sage, crushed
1/2-1 teaspoon salt
1/4 teaspoon ground black pepper
9 cups dry bread cubes
1 -1 1/2 cup chicken broth

Steps:

  • Preheat oven to 325
  • Drain all liquid from thawed spinach & place in a large bowl.
  • Brown sausage in a large oven safe pan & drain fat.
  • Add sausage to spinach.
  • Saute onion, sweet peppers & celery in butter until tender (use same large pan).
  • Add seasonings.
  • Add bread cubes & spinach/sausage
  • Drizzle with broth until moist.
  • Cover & bake for 45 minutes.

1 (10 3/4 ounce) can cream of mushroom soup
1 cup Velveeta Mexican cheese, shredded
1 small onion, chopped
1/2 cup butter, melted
1 (10 ounce) package frozen chopped spinach, thawed and well drained

Steps:

  • Preheat oven to 350.
  • Comine first five ingredients in a mixing bowl.
  • Place spinach in a glass baking dish.
  • Spread stuffing mix over spinach.
  • Bake 30 minutes.
