SPINACH-STUFFED CHICKEN PARMESAN

Spinach-Stuffed Chicken Parmesan image

Every time I buy a loaf of bread, I use the heels to make bread crumbs. Just pop them in the toasters and crush them into a labeled baggie. That way I always have them on hand for quick recipes like this. -Kellie Foglio, Salem, Wisconsin

SPINACH BALLS

Spinach Balls image

I got this recipe from my mother-in-law, who says these were my veggie-hating husband's favorite childhood snack. They are a great way to get kids to eat spinach!! Prep time includes chill time. This can be a little salty depending on the butter, cheese and bread crumbs you use, if you are concerned about saltiness use unsalted butter and garlic powder in place of the garlic salt. I have also made these with only 1/2 cup of melted butter (1 stick) and they are just as good but you need to spray the cookie sheet because they will stick.

  • First, prepare the panko breadcrumb topping. Melt the butter in a small skillet over medium low heat, and then add the panko breadcrumbs. Stir occasionally as the breadcrumbs reach a golden color. Then sprinkle a tablespoon of Parmesan over the breadcrumbs and stir. It is important to sprinkle the Parmesan and not to dump it in, this prevents the cheese from clumping up as it melts. Stir the Parmesan in, and then pour the toasted breadcrumbs into a bowl and set aside.
  • Next, prepare the spinach. Thinly slice the shallot and finely chop the garlic. Heat the olive oil in a skillet over medium heat. Add the garlic and shallot and cook until the shallot is translucent.
  • Add the spinach a handful at a time, letting it wilt before you add more. This way you won't overcrowd the pan. Once you have added all of the spinach, add the cream cheese and another tablespoon of Parmesan. Stir until the cheese has melted. Season the spinach with salt and pepper to taste.
