4 garlic cloves, sliced
2 tablespoons olive oil
2 large onions, chopped
1 pound fresh baby spinach
1 can (15 ounces) cannellini beans, rinsed and drained
1/2 cup white wine or reduced-sodium chicken broth
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large nonstick skillet, saute garlic in oil until tender. Remove garlic and discard. Add onions to pan; saute until crisp-tender. , Stir in the remaining ingredients. Cook and stir over medium heat for 10-12 minutes or until spinach is wilted. Serve with a slotted spoon.

I wanted something different, other than scalloped or au gratin potatoes, and liked the different colors of the potatoes and spinach. A nice side dish for holiday baked ham. Nice because I did it all ahead of time and then just reheated it.

5 cups small red and yellow potatoes
3 tablespoons butter
¼ cup chopped green onion
¼ cup all-purpose flour
2 cups milk
1 teaspoon salt
1 cup shredded Cheddar cheese, or more to taste
1 pinch salt and ground black pepper to taste
1 cup chopped fresh spinach
1 tablespoon diced pimento pepper
4 slices cooked bacon, crumbled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potatoes into a large pot, cover with water, and bring to a boil. Cook potatoes until tender and still firm, about 15 minutes; drain and set aside to cool.
  • Melt butter in a saucepan over medium heat; cook and stir green onion in the hot butter until softened, 1 to 2 minutes. Whisk flour into green onion and butter; gradually stir in milk, whisking constantly, until mixture is thickened and bubbly. Stir salt and Cheddar cheese into sauce, mixing until cheese has melted.
  • Slice potatoes and place about half the potatoes into the bottom of a casserole dish; sprinkle with salt and black pepper. Layer half the spinach and half the pimentos over potatoes and pour half the cheese sauce over the spinach. Repeat layers, ending with remaining cheese sauce. Cover casserole dish tightly with aluminum foil.
  • Bake in the preheated oven until bubbling, about 50 minutes; uncover dish and continue baking until browned on top, 5 to 10 more minutes. Sprinkle with crumbled bacon.

2 Tbsp olive oil
1 small yellow onion, diced
1/3 c jarred roasted red peppers, diced
2 clove garlic, minced
coarse salt and fresh black pepper
1 c chicken broth
2 can(s) (14 oz.ea.) cannellini beans, drained and rinsed
4 c baby spinach, stems removed
1 Tbsp fresh chopped basil or rosemary
1 c grated parmesan cheese, divided, plus more for serving
3 slice bacon, cooked crispy and crumbled

Steps:

  • 1. In a large skillet, heat the olive oil over medium-low heat. Add onion, red pepper and garlic, season with salt and pepper. Cook about 5 minutes until onion is tender, stirring frequently.
  • 2. Add the broth, all the beans except 1/2 cup and the spinach. Bring to a boil and simmer for about 5 minutes until the spinach is wilted. Mash the 1/2 cup beans with a fork and mix them into the skillet.
  • 3. Remove from heat, stir in the basil and 1/2 cup of the Parmesan cheese.
  • 4. Transfer to a greased 8x8-inch casserole dish and sprinkle the remaining Parmesan over the top. Bake in a preheated 400-degree oven for 20 minutes. Sprinkle the bacon over the top and serve with more Parmesan if desired.

Sauteed Spinach with Bacon image

The bacon gives a nice salty crunch and flavor to this side dish of spinach.

2 slices bacon (about 2 ounces total), cut crosswise into 1/2-inch strips
3 bunches flat-leaf spinach (about 2 pounds total), thick stems removed, well washed and dried
Coarse salt and ground pepper
2 teaspoons white-wine vinegar

Steps:

  • In a large skillet over medium heat, cook bacon until crispy, 5 to 8 minutes. With a slotted spoon, remove bacon, leaving fat in skillet; drain on a paper towel. Set aside.
  • Increase heat to high; fill skillet with as much spinach as will fit. Season with salt and pepper. Cook, tossing spinach and adding more as it wilts (it may take up to 2 minutes to fit it all). Continue to cook until tender, 1 to 3 minutes.
  • Tilt skillet to drain water from spinach (using slotted spoon or a spatula to hold spinach back). Mix in vinegar; season with salt and pepper. Serve sprinkled with crispy bacon.

A yummy vegetarian dish my MIL made for us one night. My hubby enjoyed this immensely and asked for the recipe. She got it from The Outer Banks the Bountiful cookbook. The recipe claims to be enough for 6 side servings, but my MIL says that it is enough for 2 to share for a main meal. She also says that she has not had any success doubling this recipe.

1 tablespoon butter or 1 tablespoon olive oil
1 medium onion, chopped
3 cloves garlic, finely chopped
1 (15 ounce) can small white beans or 1 (15 ounce) can black beans, drained
1 (14 1/2 ounce) can vegetarian chicken broth
1 (16 ounce) can whole tomatoes, in tomato juice
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon rosemary
1/8 teaspoon cayenne pepper
1 (10 ounce) package fresh spinach, washed and dried
1/4 lb mozzarella cheese, shredded

Steps:

  • Melt butter in a 10-inch cast iron skillet.
  • Add onion and saute until translucent.
  • Add garlic and saute 1 minute more.
  • Add drained beans, chicken broth, tomatoes with juice, and spices.
  • Cook over medium heat stirring occasionally for 15 minutes.
  • Add spinach a cup at a time, adding more as the spinach wilts.
  • Cover with cheese and place skillet under a broiler until cheese is bubbly and a little browned.
