- Heat oven to 350°F. Melt butter in 10-inch skillet until sizzling; add onion and chicken strips. Cook over medium heat, stirring occasionally, 5-7 minutes or until chicken is no longer pink.
- Combine sour cream, milk, soup, spinach, garlic powder and onion powder in medium bowl; mix well. Spread 1 cup sour cream mixture onto bottom of greased 13x9-inch baking dish.
- Divide chicken mixture among tortillas. Top each 1 slice American cheese; roll up. Place tortillas in prepared dish, seam-side down.
- Spread with remaining sour cream mixture. Sprinkle with mozzarella cheese. Bake 30-35 minutes or until heated through and bubbly.

- Preheat oven to 350 degrees F (175 degrees C).
- Cook pasta in a large pot of boiling water until al dente. Drain.
- In a large skillet, cook and stir ground beef and chopped onion over medium heat until brown. Mix in tomato soup, diced tomatoes, and taco seasoning mix. Stir in pasta.
- Spoon beef mixture into a 9x13 inch baking dish. Sprinkle crumbled taco chips and grated cheese on top.
- Bake for 30 to 35 minutes, until the cheese is melted. Serve with chopped green onions and sour cream, if desired.

- Dice the peppers and onions, cook in some oil until translucent
- (Optional) Chop up some jalapenos and add to the peppers and onions
- Transfer peppers and onions into a large prep bowl
- Add the spinach to the pan and cook until thawed (optionally, microwave and drain), try to remove as much moisture as possible from the spinach
- Move the spinach to the prep bowl
- Add ground pork to the pan, cook until browned
- Add taco seasoning and mix
- Transfer to the prep bowl
- Drain the Rotel and add to the prep bowl

- 1. Brown ground beef in a Dutch oven. Drain fat and return to pan.
- 2. Stir in taco seasoning.
- 3. Add Rotel, tomato paste and spaghetti.
- 4. Cover with 6 cups of water.
- 5. Bring to a boil and then reduce the heat to simmer. Cover and cook until pasta is cooked and water is absorbed, approximately 15 minutes.
- 6. Pour spaghetti into a sprayed 13x9 casserole dish.
- 7. Top with the shredded cheese and bake at 350 until the cheese is melted and bubbly.
- 8. You can also cook this completely on the stove top, just add the cheese after step 3 and cover & simmer until cheese is melted. I prefer the cheese to be melted in the oven until golden and bubbly. Serve with sour cream and cilantro (both optional).

- 1. Brown ground beef in a skillet and drain the grease off. Add in the refried beans, taco seasoning and salsa. Cook for 5 minutes and remove from heat.
- 2. In a 9 x 13 casserole dish spread 2 C. tortilla chips around the bottom. Evenly spread the meat mixture over the top. Top that with 1 1/2 C. cheese, 1/2 the green onions and 1/2 of the chopped tomatoes. Bake at 350 degrees for 20 minutes.
- 3. Remove from oven and top with shredded lettuce, remaining green onions, tomatoes, a few more chips and then the remaining cheese. Enjoy!
