Steps:
- Preheat oven to 375°F.
- Saute beef, onion, and garlic in large saucepan until beef is browned.
- Add tomato sauce, salt, chili powder, and vinegar. Add more salt/chili powder to taste preference. Simmer.
- Layer in a casserole dish chips, cheese, spinach, and meat mixture. Repeat until all of ingredients are used. Top layer should be cheese.
- Bake 20-25 minutes uncovered.
- Serve with hot sauce.

MEXICAN SPINACH CASSEROLE

Steps:
- Dice the peppers and onions, cook in some oil until translucent
- (Optional) Chop up some jalapenos and add to the peppers and onions
- Transfer peppers and onions into a large prep bowl
- Add the spinach to the pan and cook until thawed (optionally, microwave and drain), try to remove as much moisture as possible from the spinach
- Move the spinach to the prep bowl
- Add ground pork to the pan, cook until browned
- Add taco seasoning and mix
- Transfer to the prep bowl
- Drain the Rotel and add to the prep bowl
- Add sour cream, mozzarella and cream cheese to prep bowl, mix
- Transfer to either one large baking dish or an 8" square and a 9x13
- Bake for 40 minutes at 350

MEXICAN SPINACH CASSEROLE
This is a great way to sneak veggies into a meal.Feel free to substitute ground turkey for an even healthier dish.

- 1. Preheat oven to 325 degrees. Mix taco seasoning into raw ground meat before cooking it.I find this makes the meat taste more flavorful than sprinkling on after cooking.
- 2. Brown ground meat until fully cooked on medium heat.After cooked, add water and simmer 3 minutes on low until some of the water is cooked off but not all of it.
- 3. While meat is cooking, microwave or cook frozen spinach until just warm. Squeeze out most of the liquid.Too much liquid in the meat or spinach makes for soggy tortillas. Too little makes it a bit dry.
- 4. Spray casserole with cooking spray.First layer 3 tortillas to cover bottom of pan. May overlap slightly.If your size tortilla doesn't fit, just tear them in half to make fit your oval casserole or 9x13 pan.
- 5. Divide your meat and cooked spinach for 3 layers.On top of tortillas, spread meat then spinach. Continue for 2 more layers. End with tortillas.
- 6. Cover casserole with lid or foil. Bake 325 for 45 minutes until hot.Top with shredded mozzarella and bake 5 more minutes until cheese is melted and lightly browned.
- 7. You may make this recipe to serve 4 by using an 8x8 casserole, 1 lb meat, 1 package taco seasoning, 6 tortillas, 1 box spinach, 1/2 cup water and 1 cup cheese.Still takes about 30-40 minutes to heat through in oven.
- 8. I serve with shredded lettuce,salsa and sour cream.You may add sliced black olives to your layering.May use shredded leftover cooked chicken-very versatile recipe.
TACO TUESDAY CASSEROLE
This is a great Mexican dish for our bigger family. Could be made ahead for potlucks too! This recipe I threw together with what I had on had one night that sounded good together! Could be done with chicken as alternative too. I served this with cooked spinach and put my portion of casserole over the spinach.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until almost browned and crumbly, about 5 minutes. Add onion; cook and stir until beef is browned and onion is softened, about 5 minutes more. Mix water and taco seasoning into beef mixture; simmer until water evaporates, about 5 minutes.
- Line the prepared baking dish with tortillas and top with 1/2 of the ground beef mixture. Spoon 1/2 of the corn over the beef layer and top with 1/3 of the Cheddar cheese. Crush tortilla chips over cheese layer. Repeat layers with remaining ingredients, ending with Cheddar cheese, tomatoes, and olives.
- Bake in the preheated oven until heated through and cheese is melted, 15 to 20 minutes.
