This tangy dressing, enriched with flavorful bacon drippings, is great over any hearty green but is especially tasty with sweet spinach. Add grilled chicken or salmon and call it a meal.

3 strips bacon
1/4 cup extra-virgin olive oil
2 tablespoons white wine vinegar
1 tablespoon finely chopped capers
1 teaspoon whole-grain mustard
1 hard-boiled egg, finely chopped
1 tablespoon finely minced fresh chives
1 tablespoon finely chopped fresh parsley
5 ounces baby spinach leaves (about 8 cups)
Kosher salt and freshly ground black pepper

Steps:

  • Cook the bacon in a large skillet over medium heat, turning once, until very crisp, 7 to 9 minutes. Transfer the bacon to a paper towel-lined plate. Spoon up 1 tablespoon of the remaining drippings and add them to a small measuring cup along with the olive oil.
  • Whisk together the vinegar, capers, mustard, egg and oil mixture in a large salad bowl. Stir in the chives and parsley. Add the spinach to the bowl and toss to coat. Finely chop the reserved bacon and sprinkle over the top of the salad. Season to taste.

1 whole Red Onion, Small
1 package Mushrooms, White Button
8 oz. weight Baby Spinach, Washed Dried And Stems Removed
3 tbsp. Reserved Bacon Grease
3 tbsp. Red Wine Vinegar
2 tsp. Sugar
1/2 tsp. Dijon Mustard
1 dash Salt

Steps:

  • Cook eggs: cover with water, bring to a boil, then turn off heat and allow to sit in water for 20 minutes. Drain off water and add ice on top of eggs.Fry bacon until crispy/chewy. Remove to a paper towel. Remove 3 tablespoons grease and set aside. Add 2 add'l tablespoons of grease to a separate skillet over medium heat.Slice red onions very thinly, then add to skillet. 1 (10 ounce) package fresh spinach, finely chopped
1/2 lemon
1/3 cup of cooked chopped bacon
1 chopped hard-boiled egg
1 egg
salt and pepper
1/2 cup white vinegar
1 tablespoon celery salt
1 tablespoon cracked pepper
1/2 teaspoon dry mustard
1 tablespoon maggi seasoning (Asian section of supermarket)
2 teaspoons salt
1 lemon, juice of
3 cups vegetable oil

Steps:

  • Sprinkle salt and pepper in wooden bowl; squeeze juice from 1/2 lemon and add raw egg.
  • Stir well.
  • Add bacon, chopped egg and spinach.
  • Mix well.
  • Sprinkle with a little lemon juice and serve.
  • Must be served cold.
  • Serve with gooseneck dressing.
  • Gooseneck Dressing: Dissolve all of the dressing ingredients in the vinegar except the oil.
  • Add oil, slowly.
  • Keep whisking until well blended.
  • Refrigerate.

1/3 cup buttermilk
1/4 cup sour cream
2 tablespoons crumbled blue cheese (about 1 ounce)

8 cups baby spinach (about 5 ounces)
1 small head red-leaf lettuce, torn (about 6 cups)
1/2 English cucumber, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F. Soak the red onion in a small bowl of ice water, about 30 minutes. Drain and pat dry.
  • Meanwhile, make the croutons: Mash the anchovies with a fork. Combine the olive oil, mashed anchovies, 1 grated garlic clove and a pinch each of salt and pepper in a medium bowl. Let stand 5 minutes. Add the torn bread and toss with your hands until the bread absorbs the oil. Spread on a baking sheet and bake, stirring halfway through, until golden brown and crisp, 20 to 25 minutes. Let cool.
  • Whisk the buttermilk, sour cream, blue cheese, vinegar, parsley, the remaining grated garlic, 1/2 teaspoon salt and a few grinds of pepper in a large bowl until combined. Add the spinach, lettuce, cucumber, red onion and croutons; toss well.

1 package white button mushrooms
3 tablespoons red wine vinegar
2 teaspoons sugar

1 dash salt
8 ounces baby spinach, washed, dried and stems removed

Steps:

  • Place the eggs in a saucepan, cover with water and bring to a boil. Then turn off the heat and allow to sit in the water for 20 minutes. Drain off the water and add ice on top of the eggs.
  • Fry the bacon in a skillet until crispy/chewy. Remove to a paper towel. Drain the fat into a bowl and reserve. Give the skillet a wipe with kitchen paper.
  • Slice the red onion very thinly, and then add to the skillet. Cook slowly until the onions are caramelized and reduced. Remove to a plate and set aside.

  • Add 3 tablespoons of the reserved bacon fat, vinegar, sugar, Dijon and salt to a small saucepan or skillet over medium-low heat. Whisk together and heat thoroughly until bubbly. Add the spinach to a large bowl. Arrange the onions, mushrooms and bacon on top. Pour the hot dressing over the top; toss to combine. Arrange the eggs over the top and serve.

2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.
