My coworker Lori makes this salad whenever she is in charge of Friday breakfast and we all absolutely love it...and it's so easy. Absolutely no cooking required, so it's great during the warm summer months.

  • Place spinach in a large bowl. Arrange bananas, strawberries, mandarin oranges, cranberries, and pine nuts on top. Toss with poppy seed dressing before serving.

5-6 cups fresh baby spinach
1/2 clove minced garlic
1 overflowing tablespoon balsamic vinegar
1 1/2 tablespoons extra-virgin olive oil
pinch of sea salt and freshly cracked black pepper

Steps:

  • Put your spinach into a big bowl. If you're using any add-ins, go ahead and add them now. (See notes for ideas.)
  • Mix all of the dressing ingredients together in a small jar or container with a tight-fitting lid. Shake them up until it's well mixed.
  • Pour the dressing over the spinach right before you're ready to serve.
  • Enjoy!

This classy spinach salad is a salad to impress! Smoky pecans and a creamy balsamic vinaigrette make the best counterpoint to this green.

2 hard boiled eggs or 1 large crisp tart apple
1/2 cup whole pecans*
1 tablespoon soy sauce (or tamari or coconut aminos)
1 1/2 tablespoons maple syrup or sugar
1 teaspoon smoked paprika
2 pinches kosher salt or flaky sea salt
1 recipe Best Balsamic Vinaigrette
6 cups baby spinach leaves or chopped standard spinach
1 shallot
1/2 cup feta cheese crumbles (optional)

Steps:

  • Make the hard boiled eggs, if using (or make them in advance). Chop them into bite-sized pieces.
  • Add the pecans, soy sauce, maple syrup and smoked paprika to a small non-stick skillet over medium heat. When it just starts to bubble, reduce the heat to low but still slowly bubbling. Simmer 6 to 8 minutes, stirring occasionally. In the last minute when the liquid is mostly evaporated, stir continuously until it is totally cooked out and the nuts start clumping together. Immediately remove from the heat and transfer the pecans to a sheet of parchment paper in a single layer. Sprinkle with 2 pinches kosher salt and allow to cool to room temperature, about 5 minutes.
  • Make the Balsamic Vinaigrette.
  • Thinly slice the shallot. If using apple instead of hard boiled egg, thinly slice the apple.
  • Place the spinach on plates or in bowls. Top with hard boiled eggs or apple slices, smoky pecans, sliced shallot, and feta cheese crumbles.

5oz baby spinach
1 tablespoon lemon juice
3 tablespoons olive oil
1/3 cup grated parmesan or Romano cheese
2 tablespoons diced walnuts
fresh ground black pepper

Steps:

  • Optional: To toast the walnuts*. Add walnuts to a small ungreased skillet over medium heat. Let the diced walnuts warm up, stirring occasionally until they just begin to darken and become fragrant, this usually takes about 5-6 minutes. Remove the skillet from the heat, give the walnuts a little shake, and let the walnuts rest on the warm skillet 2-3 more minutes to finish toasting until ready to add to the salad.
  • Meanwhile add the spinach to a large bowl and drizzle with lemon juice and olive oil.
  • Toss the spinach to coat in the lemon juice and olive oil. Add cheese, walnuts, and a dash of freshly cracked pepper. Toss again and serve immediately.

At the time I lived a few hours away and was only able to get to Seattle every month or so...so I improvised and tried to duplicate the salad at home. Nothing beats The Metro but this really is a fantastic salad...goes great with so many different dishes.

1 (6 ounce) bag Baby Spinach, rinsed again and dried thoroughly
3 button mushrooms, wiped clean and sliced thinly
1/3 cup mozzarella cheese, freshly grated for best taste and texture
3 tablespoons canola oil
3 tablespoons seasoned rice vinegar
2 teaspoons sugar (or 1 packet splenda...this is what I do)
1/4 teaspoon salt
1 pinch black pepper
1 egg, hard boiled, chopped (optional)
1/4 lb bay shrimp (optional)
4 slices bacon, cooked crispy and crumbled (optional)

Steps:

  • For the dressing-in a small bowl whisk the oil,vinegar,salt and pepper, and sugar or splenda all together until everything is disolved.
  • In a large bowl place the spinach in then gently add the mushrooms and the mozerella.
  • Give the dressing one last whisk and pour it over the salad.
  • Gently toss the salad and plate them up.
  • If using the optional ingredients neatly garnish the salads with them now.
  • You can also add a bit of freshly ground black pepper.
  • I try to chill my salad dishes before using them when I have the chance.
