A friend gave me the recipe for this delicious dish, which uses a packaged stuffing mix. A salad and bread of your choice is all you'll need for a filling lunch or dinner. It's so versatile, you can even serve it at brunch. -Kathleen Grant, Swan Lake, Montana

1 package (6 ounces) savory herb-flavored stuffing mix
1/2 pound bulk pork sausage
1/4 cup chopped green onions
1/2 teaspoon minced garlic
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1-1/2 cups shredded Monterey Jack cheese
1-1/2 cups half-and-half cream
3 large eggs
2 tablespoons grated Parmesan cheese

Steps:

  • Prepare stuffing according to package directions. Meanwhile, crumble sausage into a large skillet. Add onions; cook over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain., In a large bowl, combine the stuffing, sausage mixture and spinach. Transfer to a greased 11x7-in. baking dish; sprinkle with Monterey Jack cheese. In a small bowl, combine cream and eggs; pour over sausage mixture., Bake at 400° until a thermometer reads 160°, 35-40 minutes. Sprinkle with Parmesan cheese; bake until bubbly, about 5 minutes longer.

I couldn't find a sausage and spinach ball, so I came up with this recipe. My kids love them!

1 pound bulk sweet Italian sausage
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 pound shredded Cheddar cheese
1 cup self-rising flour
1 egg
¼ teaspoon salt
1 pinch ground nutmeg

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Place a large baking stone in the oven to preheat.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until slightly browned, 3 to 4 minutes. Remove from heat and let cool enough to handle, about 10 minutes.
  • Mix sausage, spinach, Cheddar cheese, flour, egg, salt, and nutmeg together in a large bowl until well combined.
  • Form mixture into balls and place on the preheated baking stone.
  • Bake in the preheated oven until browned, 20 to 25 minutes. Let cool slightly before enjoying.

2 cups finely crushed herb-seasoned dry bread stuffing mix
½ cup grated Parmesan cheese
2 teaspoons garlic powder
½ teaspoon ground black pepper
1 teaspoon Italian seasoning
½ cup melted butter
3 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine spinach, stuffing mix, Parmesan cheese, garlic powder, black pepper, Italian seasoning, melted butter and eggs. Shape into walnut-sized balls and place on a baking sheet.
  • Bake in preheated oven for 20 minutes, or until heated through and browned.

1 cup tomato pasta sauce, if desired

Steps:

  • Heat oven to 400°F. Spray cookie sheet with cooking spray. In large bowl, mix all ingredients, except pasta sauce. Shape mixture into 1-inch balls; place on cookie sheet.
  • Bake 10 to 15 minutes or until golden brown. Immediately remove from pan. Serve with pasta sauce.

Steps:

  • Preheat oven to 350 degrees.
  • Cook and drain spinach according to package directions.

1 medium onion, chopped
3/4 cup parmesan cheese, grated
1 (16 ounce) package spicy bulk sausage, cooked & drained
1/2 teaspoon black pepper
3 cups pepperidge farm seasoned stuffing mix
5 eggs, beaten
1 1/2 cups mild cheddar cheese, grated
1 1/2 teaspoons garlic powder
1/2 teaspoon red cayenne pepper
salt

Steps:

  • Preheat oven to 325 degrees.
  • Cook and drain chopped spinach. Squeeze spinach until dry with paper towel.
  • Combine other ingredients and mix well.
  • Shape into 1 inch balls.
  • Place on ungreased baking sheet and bake in 325 degree oven for 15 minutes.

1 pound spicy Italian sausage, casings removed
4 cups grated extra-sharp Cheddar
2 cups baking mix, such as Bisquick
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • In a large bowl, combine the sausage, Cheddar, baking mix, garlic powder and salt and knead with your hands until a homogenous dough forms (this will take about 5 minutes). Pinch off golf ball-size pieces of dough, roll them into balls and arrange them 1 inch apart on the prepared baking sheets.
  • Bake until the sausage balls are golden brown and cooked through, about 25 minutes. Let cool for 5 minutes and serve warm or at room temperature. Store any leftover sausage balls in an airtight container for up to 1 week.
