SAUSAGE SPINACH BAKE
A friend gave me the recipe for this delicious dish, which uses a packaged stuffing mix. A salad and bread of your choice is all you'll need for a filling lunch or dinner. It's so versatile, you can even serve it at brunch. -Kathleen Grant, Swan Lake, Montana

Steps:
- Prepare stuffing according to package directions. Meanwhile, crumble sausage into a large skillet. Add onions; cook over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain., In a large bowl, combine the stuffing, sausage mixture and spinach. Transfer to a greased 11x7-in. baking dish; sprinkle with Monterey Jack cheese. In a small bowl, combine cream and eggs; pour over sausage mixture., Bake at 400° until a thermometer reads 160°, 35-40 minutes. Sprinkle with Parmesan cheese; bake until bubbly, about 5 minutes longer.

I couldn't find a sausage and spinach ball, so I came up with this recipe. My kids love them!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Place a large baking stone in the oven to preheat.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until slightly browned, 3 to 4 minutes. Remove from heat and let cool enough to handle, about 10 minutes.
- Mix sausage, spinach, Cheddar cheese, flour, egg, salt, and nutmeg together in a large bowl until well combined.
- Form mixture into balls and place on the preheated baking stone.
- Bake in the preheated oven until browned, 20 to 25 minutes. Let cool slightly before enjoying.

- Heat a saute pan with 1 Tablespoon Olive Oil on medium low. Add sausage (casings removed) and saute for about 5 minutes or until half way done, break sausage up into small pieces while cooking. Add onions and garlic and cook until sausage is cooked through and onions are soft. Remove from heat.
- Microwave frozen chopped spinach for 2-3 minutes and drain excess water. Push down on spinach to remove as much water as you can. Melt butter.

- In a small skillet, melt butter over medium heat. Add the onion and sauté for 5-7 minutes or until soft and translucent. Add garlic and sauté for another minute. Remove from heat to cool.
