3/4 cup vinegar
3/4 cup sugar
1 1/2 cup oil
3/4 teaspoon mustard (dry)

1 1/2- 2 purple onions (sliced thin)
2 bunches spinach (fresh)
1 head lettuce (iceberg)
1 1/2 pound bacon (cooked and crumbled)
3 cups swiss cheese (grated 3/4 lb)
1 cup cottage cheese (drained)
*chicken (avocados or fruit are great additions)

Steps:

  • In a mason jar or bowl, whisk together the poppy seeds, vinegar, sugar, oil, mustard and salt.
  • Add the onions and combine.
  • Store in the fridge in a jar until ready to serve.
  • Toss all of the ingredients together in a large bowl and then drizzle in the dressing and toss again.
  • Only dress as much as you'd like, no need to use the whole jar if you only want a little dressing.

3/4 cup raw pecans
1/2 small red onion (very thinly sliced)
10 ounces fresh baby spinach (I also love a 50/50 arugula and spinach blend)
1 quart strawberries (hulled and quartered (about 1 pound))
3/4 cup crumbled feta cheese (buy the block-style feta, not pre-crumbled; the texture is much better)
1/4 cup balsamic vinegar
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons poppy seeds
1 1/2 tablespoons honey
1/2 teaspoon Dijon mustard
1/2 teaspoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Toast the pecans: Preheat the oven to 350 degrees F. Spread the pecans in a single layer on an ungreased baking sheet. Bake for 8 to 10 minutes, until the pecans smell fragrant and the center of a pecan is tan when the pecan is broken in half. (Do not walk away from the oven in the last few minutes of cooking. This is when nuts love to burn.) Transfer to a cutting board and roughly chop.
  • Place the sliced onions in a bowl and cover with cold water. Let sit while you prepare the rest of the salad (this keeps their flavor but removes the harsh onion bite).
  • Prepare the dressing: In small mixing bowl or large liquid measuring cup, whisk together all of the dressing ingredients-vinegar, oil, poppy seeds, honey, mustard, salt, and pepper-until well combined. (Alternatively, you can shake the ingredients together in a mason jar with a tight-fitting lid).
  • Assemble the salad: Place the spinach in a great big serving bowl. Add the strawberries. Drain the red onion and add it as well. Drizzle about half of the dressing over the salad and toss to coat the leaves. Assess the amount of dressing. You want the spinach leaves to be nicely moistened but not swimming in dressing. Add a little more if needed to suit your preferences. Add the feta and pecans. Toss lightly to combine. Serve immediately, with extra dressing on the side as desired.

1 cup croutons
3/4 cup sliced button mushrooms, (rinsed and drained)

1/4 cup of sliced red onions
1/4 cup chopped tomatoes
3 large hard-boiled eggs, (sliced)
3/4 cup canola oil
1/2 cup white vinegar
1/4 cup granulated sugar
1 Tablespoon grated yellow onion
1 teaspoon salt
1/4 teaspoon dry mustard
1/2 Tablespoon poppy seeds

Steps:

  • Place the spinach in a large salad bowl and top with the bacon, croutons, mushrooms, cheese, cranberries, onions, tomatoes, and egg.
  • Place all of the dressing ingredients into a blender except for the poppy seeds. Blend on high for 30-60 seconds, or until the dressing is emulsified.
  • Add the poppy seeds and pulse the blender 1-3 times or until the poppy seeds are evenly distributed.

2 tsp dijon mustard

1/3 cup extra virgin olive oil

1 apple, (cored and thinly sliced)
1 cup red seedless grapes ((sliced in half or quartered if large))

Be sure to make the dressing the night before! The original recipe called for 1 lb. of swiss cheese. I think that's a bit much and usually make it with 1/2 lb.

1/4 cup sliced almonds

  • Caramelize pistachios according to directions. Set aside.*

1 Tbsp milk, (if needed)

Steps:

  • For the dressing: In a small mixing bowl whisk together vinegar, sugar and salt until sugar and salt have dissolved.
  • Add mayonnaise, honey and poppy seeds and whisk until combined. Mix in milk to thin if desired. Store in refrigerator until ready to use.
  • For the salad: In a salad bowl layer spinach, mandarine oranges, pomegranate arils, avocado, almonds and walnuts.
  • Pour desired amount of dressing over top (or alternately just dress each serving). Serve immediately.
