1/3 cup vegetable oil
1/4 cup cider or red wine vinegar
2 tablespoons sugar
1-1/2 teaspoons diced onion
1 teaspoon poppy seeds
1/2 teaspoon salt
1/4 teaspoon ground mustard
10 cups torn fresh spinach
3 cups torn iceberg lettuce
1/2 pound mushrooms, sliced
1 cup 4% cottage cheese
1 cup shredded Swiss cheese
1 cup chopped dates
1/2 large red onion, sliced
2 hard-boiled large eggs, sliced

Steps:

  • Combine the first seven ingredients in a blender; cover and process for 30 seconds. Pour into a jar with a tight-fitting lid; chill for 2-3 hours. In a large bowl, toss remaining ingredients. Shake dressing; pour over salad.

Baby Spinach Salad With Dates and Almonds image

Sumac, a tart, deep-red spice, is a key ingredient for this recipe from Yotam Ottolenghi, which was featured in a Times article about his cookbook with Sami Tamimi, "Jerusalem." Procuring the spice may be the most challenging thing about this refreshing, well-balanced salad. The pita and almonds are cooked for a few minutes on the stovetop, but that is the only heat required. As for the sumac, it can be found at Middle Eastern groceries, in a well-stocked spice aisle or, as always, online.

1 tablespoon wine vinegar
1/2 medium red onion, thinly sliced
3 1/2 ounces dates (100 grams), preferably Medjool, pitted and quartered lengthwise
Salt
2 tablespoons unsalted butter (30 grams)
2 tablespoons olive oil, divided
2 small pitas (about 3 1/2 ounces, or 100 grams), roughly torn into 1 1/2 -inch pieces
1/2 cup whole unsalted almonds (75 grams), coarsely chopped
2 teaspoons sumac
1/2 teaspoon chile flakes
5 to 6 ounces baby spinach leaves (150 grams)
2 tablespoons freshly squeezed lemon juice

Steps:

  • Put vinegar, onion and dates in a small bowl. Add a pinch of salt and mix well with your hands. Leave to marinate for 20 minutes, then drain any residual vinegar and discard.
  • Meanwhile, heat butter and 1 tablespoon olive oil in a medium frying pan over medium heat. Add pita and cook for 4 to 6 minutes, stirring all the time, until pita is golden. Add almonds and continue cooking until pita is crunchy and browned and almonds are toasted and fragrant, about 2 minutes more. Remove from heat and mix in sumac, chile flakes and 1/4 teaspoon salt. Set aside to cool.
  • When ready to serve, toss spinach leaves with pita mix in a large mixing bowl. Add dates and red onion, remaining 1 tablespoon olive oil, the lemon juice and another pinch of salt. Taste for seasoning and serve immediately.

2 pitted dates
1/3 cup plus 1/4 cup vegetable oil, divided
1 teaspoon finely grated lime zest
1/4 cup lime juice
Salt
Pepper
4 thinly sliced large shallots
1 trimmed bunch flat-leaf spinach
3/4 cup chopped dates

Steps:

  • Blend 2 pitted dates, 1/2 cup vegetable oil, 1 teaspoon finely grated lime zest, and 1/4 cup lime juice in a blender until smooth; season with salt and pepper. Heat 1/4 cup vegetable oil in a medium saucepan over medium-high heat and cook 4 thinly sliced large shallots, stirring often, until golden brown and crisp, 5-7 minutes; drain on paper towels and season with salt. Toss 1 trimmed bunch flat-leaf spinach and 3/4 cup chopped dates with dressing. Top with shallots.

This fresh green salad with pears, walnuts, dates and blue cheese is a fresh option for your holiday table! It's a great side salad for fall dinners, too. Recipe yields 4 side salads.

1/4 cup extra-virgin olive oil
1 1/2 tablespoons white wine vinegar
1 teaspoon honey or maple syrup
1 teaspoon Dijon mustard
Pinch of salt
Several twists of freshly ground black pepper
1/3 cup chopped raw walnuts
5 to 6 ounces red leaf lettuce, torn into small pieces (about 5 to 6 cups), or spring mix
7 Medjool dates, pitted and sliced thin
2 Bosc* or Bartlett pears, unpeeled and sliced into 1/4-inch thick pieces
1/3 cup crumbled blue cheese (Jennifer used Roquefort; I used a more generic blue cheese option from Whole Foods but I think Gorgonzola would work well, too)

Steps:

  • To make the dressing: In a small bowl, combine all of the dressing ingredients and whisk to combine. Taste, and adjust if necessary-I added some more mustard and another pinch of salt.
  • To make the salad: First, toast the walnuts in a medium skillet over medium heat until fragrant, stirring often, about 4 to 5 minutes. Set aside.
  • In a medium serving bowl, combine the greens, dates, pears and toasted walnuts. When you're ready to serve, drizzle in some dressing (you won't need all of it) and toss until the greens are lightly coated, adding more if necessary. Serve in individual bowls with blue cheese sprinkled on top.

Steps:

  • Put the vinegar, onion and dates in a small bowl. Add a pinch of salt and mix well with your hands. Leave to marinate for 20 minutes, then drain any residual vinegar and discard. Meanwhile, heat the butter and half the olive oil in a medium frying pan. Add the pita and almonds and cook them on a medium heat for 4-6 minutes, stirring all the time, until the pita is crunchy and golden brown. Remove from the heat and mix in the sumac, chilli and ¼ teaspoon of salt. Set aside to cool. When you are ready to serve, toss the spinach leaves with the pita mix in a large mixing bowl. Add the dates and red onion, remaining olive oil, lemon juice and another pinch of salt. Taste for seasoning and serve immediately.

1/3 cup crumbled feta cheese (about 2 ounces)
1 tablespoon fresh lemon juice
2 1/2 tablespoons water
1 tablespoon mayonnaise
2 tablespoons olive oil
3 slices bacon, chopped
1 bunch fresh spinach (about 3/4 pound), stems discarded and leaves washed well, spun dry, and torn into bite-size pieces
1/2 medium red onion, sliced thin
1/3 cup pitted dates, chopped

Steps:

  • In a blender blend together feta, lemon juice, water, and mayonnaise until smooth. With motor running add oil and blend until emulsified.
  • In a small skillet cook bacon over moderate heat, stirring, until crisp and transfer with a slotted spoon to paper towels to drain.
  • In a large bowl toss together spinach, bacon, onion, and dates with feta dressing.
