1 tablespoon red wine vinegar
1 tablespoon minced shallot or red onion
2 teaspoons Dijon mustard
1/4 teaspoon kosher salt
Freshly ground black pepper
3 tablespoons quality walnut oil, (see Cook's Note)
8 cups baby spinach leaves, stems trimmed, washed, and dried
1/2 cup whole or chopped toasted walnuts
1/3 cup crumbled goat cheese

Steps:

  • In a small bowl, combine the vinegar, shallot, mustard, salt, and pepper. Gradually whisk in the oil to make a creamy dressing.
  • Put all but a large handful of the spinach in a large bowl. Toss with most of the dressing. Add remaining spinach and continue tossing until well coated.
  • Serve immediately topped with goat cheese and walnuts.

3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1/4 cup olive oil
Salt and pepper to taste
1 cup California walnuts
1 tablespoon sugar
1 tablespoon olive oil
10 cups baby spinach
8 strips prosciutto
1/2 cup crumbled blue cheese
1/3 cup pomegranate arils
2 firm but ripe pears, cored and thinly sliced

Steps:

  • To prepare dressing, stir together onion, vinegar and Dijon in a small bowl. Slowly add olive oil and whisk well. Season with salt and pepper.
  • To prepare Candied Walnuts, heat oil in a medium skillet over medium heat. Add walnuts and cook for 5 minutes to toast. Add sugar and cook for a few minutes more or until walnuts are nicely glazed.
  • Place salad ingredients in a large bowl and sprinkle with Candied Walnuts. Toss well to coat and serve immediately.

1/2 cup chopped walnuts

Steps:

  • In a saucepan, combine raspberries and sugar; bring to a boil over medium heat, Cook for 1 minute. Strain and discard pulp. , In a blender, combine the raspberry juice, oil, vinegar and Worcestershire sauce if desired; cover and process until smooth., In a large salad bowl, combine the spinach, onion, cheese and walnuts. Drizzle with desired amount of dressing; toss to coat. Refrigerate any remaining dressing.

1 tablespoon lemon juice
3 tablespoons olive oil
1/3 cup grated parmesan or Romano cheese
2 tablespoons diced walnuts
fresh ground black pepper

Steps:

  • Optional: To toast the walnuts*. Add walnuts to a small ungreased skillet over medium heat. Let the diced walnuts warm up, stirring occasionally until they just begin to darken and become fragrant, this usually takes about 5-6 minutes. Remove the skillet from the heat, give the walnuts a little shake, and let the walnuts rest on the warm skillet 2-3 more minutes to finish toasting until ready to add to the salad.
  • Meanwhile add the spinach to a large bowl and drizzle with lemon juice and olive oil.

2 small apples, cored and thinly sliced
half of a small red onion, thinly sliced
1/2 cup chopped walnuts, toasted
1/3 cup dried cranberries
3 ounces crumbled goat cheese
1/4 cup extra virgin olive oil
2 tablespoons apple cider vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
1 small garlic clove, peeled and minced
a generous pinch of salt and black pepper

Steps:

  • Combine all of the vinaigrette ingredients together in a bowl and whisk vigorously (or shake them together in a mason jar) to combine.
  • Add spinach, apples, red onion, walnuts, dried cranberries, and half of the goat cheese to a large bowl. Drizzle with the vinaigrette, and toss to combine.

1 (6 ounce) bag Baby Spinach, washed and dried (if leaves are too big, chop them coarsely)
1/3 cup crumbled feta cheese or 1/3 cup any other white cheese, crumbled
1/3 cup coarsely chopped walnuts
1/3 cup golden raisin
1/4 cup apple, chopped
2 tablespoons olive oil
1/2 lemon, juice of
1 tablespoon balsamic vinegar (optional, but recommended) or 1 tablespoon apple cider vinegar (optional, but recommended)
1 -1 1/2 teaspoon honey (optional)

Steps:

  • In a large bowl, combine the olive oil with the lemon juice and vinegar if using. Add honey or any sweetener you like now, if desired.
  • Add the spinach, cheese, walnuts and raisins and toss thoroughly. Season with salt and pepper to taste. (If you are using feta cheese, you don't have to add salt to the salad since feta cheese is salty enough). Serve right away. Enjoy!

  • Place the spinach leaves in a large bowl. Break them into bite-sized pieces, if necessary, and remove the stems (or not, depending on your preference).
  • Pour the olive oil into a medium-small skillet and place it over low heat. Add the hazelnuts and cook, stirring intermittently for 5 to 8 minutes, or until they begin to turn golden. Add the garlic during the last minute or so, cooking it slightly but not “frying” it. (Browning the garlic causes it to taste unpleasantly bitter.)
  • Drizzle this hot mixture directly over the spinach, scraping in as much of the oil as you can. (You can also toss some of the spinach back into the hot pan stirring it around to swab up any extra oil left behind.) Use tongs to toss the spinach until it is completely coated with the oil, and the nuts and garlic are well distributed. Sprinkle with the salt as you toss. Add the raisins and goat cheese, and mix well.
  • At the very end, sprinkle in the vinegar and toss until it is thoroughly distributed. Serve immediately, passing a pepper mill.
