SPINACH AND RICOTTA PASTA BAKE RECIPE



Spinach and Ricotta Pasta Bake Recipe image

This Spinach and Ricotta Pasta Bake is SO easy to make. Full of delicious cheese flavours and on the table in under 30 minutes with NO sauce making.

250 g Dried pasta shapes
350 g Frozen spinach (Or fresh if you prefer, see notes)
800 g Tinned tomatoes
1 tbsp Tomato puree
2 tsp Garlic powder
1 tbsp Dried oregano
1 tbsp Honey (Or sugar if you prefer)
0.5 tsp Dried chilli flakes (Or more, to taste)
2 tbsp Olive oil
Sea salt and freshly ground pepper
250 g Ricotta cheese (See recipe notes)
100 g Mozzarella (Grated)
2 tsp Garlic powder
50 g Parmesan cheese (Grated (optional))
Sea salt and freshly ground pepper
150 g Mozzarella (Grated)
20 g Fresh basil

Steps:

  • Preheat the oven to 220C.
  • Cook the pasta and spinach in boiling, salted for 10 minutes, until JUST cooked.
  • Meanwhile, open the tinned tomatoes and drain the liquid from them using a sieve.
  • Add all of the other tomato sauce ingredients to the drained tomatoes and stir well.
  • When the pasta and spinach are cooked, drain the majority of the water (see recipe notes).
  • Add the ricotta sauce ingredients and stir thoroughly, but gently. Pour into a casserole dish.
  • Top with the tomato mixture and the remaining mozzarella cheese.
  • Pop into the oven for 15 minutes or until the cheese is golden and bubbling.
  • Sprinkle with fresh basil and serve.

Here's a delightfully quick and easy creamy low-fat pasta recipe using low-fat ricotta cheese, fresh spinach, basil, and your favorite pasta.

12 ounces elbow macaroni, or penne, or shell pasta, cooked
2 teaspoons olive oil
1/2 cup finely chopped onion
2 cloves garlic, minced
10 ounces fresh baby spinach, roughly chopped
1 ounce fresh basil, chopped
1 cup low-fat ricotta cheese
1/4 cup non-fat milk
1 tablespoon lemon juice, and zest of 1/2 lemon, optional
Freshly ground black pepper, to taste, optional
2 tablespoons grated Parmesan cheese, optional

Steps:

  • Gather the ingredients.
  • Bring a large pot of salted water to a boil and cook pasta according to package directions.
  • Meanwhile, in a large skillet heat oil over medium heat. Add onions and garlic and sauté until onions are soft and fragrant, about 5 minutes, making sure the garlic doesn't brown.
  • Add spinach and basil to the skillet and stir until wilted.
  • Then add ricotta cheese and milk (and optional lemon juice and zest) to skillet and stir well.
  • Drain pasta, reserving 1/4 cup or so of the cooking water.
  • Combine cooked pasta and ricotta mixture in a large bowl. If it is too thick, add a bit of the cooking water to the mixture.
  • Serve immediately with some freshly ground black pepper and an optional 1 teaspoon of grated Parmesan cheese per serving.

I made this for a family member's graduation party and everyone loved it! It's super easy and takes no time at all to make!

1 box(es) macaroni, cooked
1 1/2 package(s) fresh spinach
1-12 ounce(s) ricotta cheese, part-skim
1-16 ounce(s) stewed tomatoes
8 ounce(s) mozzarella cheese, chopped into cubes
1 teaspoon(s) garlic, chopped
- salt and pepper to taste

Steps:

  • Begin cooking macaroni. While the macaroni is cooking, mix together the ricotta, mozzarella, garlic, salt and pepper.
  • Drain the macaroni and toss fresh spinach in the pot until it has just began to wilt. Then mix with ricotta mixture and stewed tomatoes. Serve and enjoy!
  • Note: You can interchange the ingredients for full fat versions or fat free versions. Also, you can use any kind of macaroni you like. For the stewed tomatoes, you can use Italian style as well!

1 teaspoon butter
1 (16 ounce) package elbow macaroni
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk
1 pound frozen chopped spinach, not thawed
3 cups grated Cheddar cheese, divided
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with 1 teaspoon butter.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • Melt 3 tablespoons butter in a saucepan over medium heat while macaroni is cooking. Add flour and whisk until fragrant, 2 to 3 minutes. Pour in a little milk and continue whisking. Pour in remaining milk and add frozen spinach. Cook, whisking constantly, until spinach softens and sauce thickens, about 5 minutes.
  • Remove sauce from heat and stir in 2 cups Cheddar cheese; whisk until melted. Season sauce with salt, pepper, and nutmeg.
  • Drain macaroni and spread evenly in the prepared baking dish. Cover with cheese sauce. Mix well. Sprinkle remaining 1 cup Cheddar cheese on top.
  • Bake in the preheated oven until cheese is melted, about 30 minutes. Turn on the oven's broiler and broil until a golden crust forms on top, about 3 minutes.

5-1/4 cups uncooked elbow macaroni
2-1/2 pounds ground beef
2 large onions, chopped
3 large carrots, shredded
3 celery ribs, chopped
2 cans (28 ounces each) Italian diced tomatoes, undrained
4 teaspoons salt
1 teaspoon garlic powder
1 teaspoon pepper
1/2 teaspoon dried oregano
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 cup grated Parmesan cheese

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large Dutch oven, cook the beef, onions, carrots and celery over medium heat until meat is no longer pink; drain. Add the tomatoes, salt, garlic powder, pepper and oregano. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. , Drain macaroni; add macaroni and spinach to beef mixture. Pour into two greased 3-qt. baking dishes. Sprinkle with cheese. Bake, uncovered, at 350° for 25-30 minutes or until heated through.

1 cup chopped cooked spinach
2 cups hot milk
1/4 cup flour
1/4 cup butter
2 tablespoons horseradish
1 tablespoon Dijon mustard
2 cups grated sharp white cheddar cheese
salt and pepper, to taste
freshly grated nutmeg, to taste

Steps:

  • Preheat the oven to 425.
  • In medium sized pot, over medium heat, melt butter.
  • Add the flour and cook for 3 minutes.
  • Pour in the hot milk and cook until thickened.
  • Add the spinach, cheese, seasonings, horseradish and mustard.
  • Mix well.
  • Combine with the cooked pasta.
  • Place in a greased cassarole dish.
  • Bake in oven for 15 minutes or until bubbling.
