1 medium onion, finely chopped
2 tablespoons olive oil
1 teaspoon dried oregano
1 garlic clove, minced
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups (8 ounces) crumbled feta cheese
2 large eggs, lightly beaten
1 package (17.3 ounces) frozen puff pastry, thawed

Steps:

  • In a small skillet, saute onion in oil until tender. Add oregano and garlic; cook 1 minute longer. Add spinach; cook 3 minutes longer or until liquid is evaporated. Transfer to a large bowl; cool., Add feta cheese and eggs to spinach mixture; mix well. Unfold puff pastry. Spread each sheet with half the spinach mixture to within 1/2 in. of edges. Roll up jelly-roll style. Cut each into twelve 3/4-in. slices. Place cut side down on greased baking sheets., Bake at 400° for 18-22 minutes or until golden brown. Serve warm.

A twist on the classic Greek spanakopita using puff pastry!

1 egg whisked with 1 tablespoon of water
1/2 cup crumbled feta (buy a block and crumble it yourself
1/4 cup grated mozzarella
1 green onion, chopped
1/2 teaspoon garlic salt
A few grates of fresh nutmeg
1 10-ounce package of frozen chopped spinach, defrosted and squeezed dry
1 puff pastry sheet, defrosted

Steps:

  • Whisk together the egg and water, set aside.
  • Mix together the cheeses, onion, and seasonings. Set aside.
  • Roll out the puff pastry on a lightly floured surface to flatten the seams. Brush the surface with your egg wash.
  • Top the surface with the cheese mixture, then break apart the spinach and spread evenly over the surface. ***Leave about an inch free of toppings on one of the short sides.***
  • Starting on the short side that's covered with filling, roll up the pastry like a jellyroll.
  • Line two baking sheets with parchment. Slice the roll into ½-3/4 inch slices and place them on the prepared sheets.
  • Pop into the refrigerator or freezer to let them cool as the oven preheats to 400 degrees.
  • Bake for 15 minutes or until they're golden.

SPINACH IN PUFF PASTRY

4 tablespoons (1/2 stick) unsalted butter
2 cups chopped onions (2 onions)
1 tablespoon chopped garlic (3 cloves)
2 (10-ounce) boxes frozen chopped spinach, defrosted
1/3 cup chopped scallions, white and green parts (2 scallions)
1 cup grated Gruyere cheese
3/4 cup freshly grated Parmesan cheese
4 extra-large eggs, lightly beaten
1 tablespoon dry bread crumbs, plain or seasoned
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1/2 teaspoon ground nutmeg
1/4 cup toasted pignoli (pine) nuts
2 sheets (1 box) frozen puff pastry (such as Pepperidge Farm), defrosted overnight in the refrigerator
1 extra-large egg beaten with 1 tablespoon water, for egg wash

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the butter in a saute pan and cook the onions over medium-low heat for 5 to 7 minutes, until tender. Add the garlic and cook for 1 more minute. Meanwhile, squeeze most of the water out of the spinach and place it in a bowl. Add the onion mixture, scallions, Gruyere, Parmesan, eggs, bread crumbs, salt, pepper, nutmeg, and pignolis. Mix well.
  • Unfold one sheet of puff pastry and place it on a baking sheet lined with parchment paper. Spread the spinach mixture in the middle of the pastry, leaving a 1-inch border. Brush the border with the egg wash. Roll out the second piece of puff pastry on a floured board until it's an inch larger in each direction. Place the second sheet of pastry over the spinach and seal the edges, crimping them with a fork. Brush the top with egg wash but don't let it drip down the sides or the pastry won't rise. Make three small slits in the pastry, sprinkle with salt and pepper, and bake for 30 to 40 minutes, until the pastry is lightly browned. Transfer to a cutting board and serve hot.

Spinach-Cheese Swirls image

These tempting appetizers look like they're difficult to make...but they're not. They feature a spinach, onion and cheese filling simply rolled up in flaky puff pastry and sliced into pinwheels.

Number Of Ingredients 9

1 egg
1 tablespoon water
1/2 cup shredded Muenster cheese or mozzarella cheese
1/4 cup grated Parmesan cheese
1 green onion, chopped (about 2 tablespoons)
1/7 teaspoon garlic powder
2 tablespoons all-purpose flour
1/2 package of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets(1 sheet), thawed
1 package (about 10 ounces) frozen chopped spinach, thawed and well drained

Steps:

  • Heat the oven to 400°F. Beat the egg and water in a small bowl with a fork.
  • Stir the Muenster cheese, Parmesan cheese, onion and garlic powder in a medium bowl.
  • Sprinkle the flour on the work surface. Unfold the pastry sheet on the work surface. Brush the pastry sheet with the egg mixture. Top with the cheese mixture and spinach. Starting at a short side, roll up like a jelly roll. Cut into about 20 (1/2-inch) slices. Place the slices, cut-side down, onto 2 baking sheets. Brush the slices with the egg mixture.
  • Bake for 15 minutes or until the pastries are golden brown. Remove the pastries from the baking sheets and let cool on wire racks for 10 minutes.
  • For best results, make sure to remove as much liquid as you can from the spinach before adding it to the pastry. If it's too wet, it may make the pastry soggy.
  • For Pesto Swirls, omit all ingredients but the flour and the puff pastry. Unfold the pastry sheet as directed above. Spread 1/2 of an 8-ounce package cream cheese, softened, on the pastry sheet to within 1/2 inch of the edge. Top with 3 tablespoons pesto sauce and sprinkle with 1/4 cup finely chopped walnuts. Brush the edge of the pastry sheet with water. Roll up the pastry and proceed as directed above.
  • For Ham & Broccoli Swirls, omit the spinach, cheeses, onion and garlic powder. Unfold the pastry sheet and brush with the egg mixture as directed above. Spread 1/2 of an 8-ounce container whipped cream cheese with chives on the pastry sheet. Top with 1 cup frozen chopped broccoli, thawed and well drained and 1 cup finely chopped cooked ham. Proceed as directed above.
  • For a flavor twist, try a different cheese. Any shredded cheese will work in this recipe.

SPINACH ROLLS WITH PUFF PASTRY

A vegetarian version of mini sausage rolls but made with a spinach and feta filling. I used frozen spinach because it was a better buy than fresh at the time but the equivalent amount of fresh spinach, chopped and wilted, would do the job.

2 tablespoons vegetable oil
1 clove clove garlic, minced, or more to taste
1 (10 ounce) package frozen chopped spinach, thawed and drained
salt to taste
1 (4 ounce) package crumbled feta cheese
3 sheets frozen puff pastry, thawed
1 egg, beaten
1 tablespoon milk
2 tablespoons sesame seeds

Steps:

  • Heat oil in a skillet over medium heat and cook garlic until fragrant, 1 to 2 minutes. Stir in spinach and cook until warmed through, 3 to 5 minutes; season with salt and mix well. Transfer to a bowl and mix in feta cheese.
  • Preheat oven to 400 degrees F (200 degrees C). Grease 2 baking sheets.
  • Lay 1 sheet of puff pastry on a lightly floured surface and cut in half lengthwise. Roll 1 half out with a rolling pin so it is wide enough to fold twice lengthwise. Mix egg and milk together in a small bowl.
  • Spread 1/6 of the spinach mixture lengthwise in the center of the puff pastry. Roll one side over the filling and brush the other side with egg-milk mixture. Roll over again to seal.
  • Brush top of roll with egg-milk mixture and sprinkle with sesame seeds. Cut roll into 6 small rolls. Repeat with the remaining puff pastry. Place cut rolls onto the prepared baking sheets.
  • Bake in the preheated oven until spinach rolls are puffed up and golden, 20 to 25 minutes.

Spinach Pinwheels With Fontina Cheese (Puff Pastry) image

Pretty and delicious! ...and I'm not normally a spinach lover, so that says a lot! Made with sheets of puff pastry, these are very easy to put together. You can make them up in advance and freeze them to pull out for a quick appetizer for company. Found this recipe in Mary Engelbreit's Home Companion magazine.

Number Of Ingredients 12

2 (10 ounce) packages frozen spinach
2 tablespoons butter
1 medium onion, chopped
2 garlic cloves, chopped
1/4 cup parsley, chopped
salt and pepper
1 teaspoon Dijon mustard
1/2 cup Fontina cheese, chopped
1 (17 1/3 ounce) package frozen puff pastry
2 -3 tablespoons parmesan cheese
1 egg
2 teaspoons water

Steps:

  • Cook spinach according to directions on package. Drain well. (I usually skip this step and add the spinach in to sauté after the onion has softened).
  • Preheat oven to 425°F.
  • Melt butter in skillet. Add chopped onion and garlic. Cook over medium heat until softened. Remove from heat and add add spinach, parsley, salt, and pepper to taste. Cool. Mix in mustard and cheese. (I put in fontina and parmesan at this step).
  • While spinach is cooling, take pastry out of package and let defrost.
  • Lay pastry out on lightly floured board. Gently roll out dough, then cut lengthwise into 5 X 11-inch sections.
  • Divide spinach mixture into fourths and spread to the edges of the pastry.
  • Starting at the long ends, roll up the dough encasing spinach mixture.
  • Using serrated knife, cut into 1/2 inch slices.
  • (If baking immediately, lay on cookie sheet lined with parchment paper and flatten slightly.
  • Brush slices lightly with egg wash. Sprinkle with Parmesan cheese.
  • Bake in the middle of the oven for 10 minutes on one side. Turn over and bake for 5 minutes more.
  • Remove from oven and let cool slightly on rack before serving.
  • To freeze: Proceed through step 8. Place on baking sheet in freezer until firm. Remove pinwheels and place in freezer bag. These will keep for a couple of weeks.
  • When ready to serve, brush frozen pinwheels with egg wash, sprinkle with Parmesan, and proceed as in step 11 baking for an extra 5 minutes.

1 cup heavy cream
1/4 cup whole milk
1/2 teaspoon salt

1 1/4 cups grated Fontina cheese
1/4 cup freshly grated Parmesan
3 to 5 green onions, finely chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a heavy large baking sheet with parchment paper. Arrange the frozen pastry shells on the baking sheet and bake until they puff and become golden brown, about 20 minutes. Using a small knife, cut out the center of the pastry shells.
  • Meanwhile, stir the cream, milk, salt, and pepper in a medium bowl. Stir in the spinach, Fontina cheese, Parmesan, and green onions. Spoon the spinach mixture into the baked pastry shells.   • Combine the artichokes, spinach, pecorino, mayonnaise, red pepper flakes and garlic in a bowl. Spread on one side of the puff pastry sheet. Roll up like a jelly roll and cover tightly with plastic wrap. Place in the freezer for 30 minutes to an hour.
  • Preheat the oven to 350 degrees F. Spray a baking sheet with nonstick spray.
  • Remove the plastic wrap and slice the puff pastry log into 1-inch-thick slices. Place the pastry pieces flat on the baking sheet, about 1 inch apart from each other. Bake until puffed and golden brown, 50 minutes to 1 hour.
