400g bag spinach leaves
3 tbsp olive oil
1 large onion , finely sliced
2 large potatoes , peeled and finely sliced
10 eggs

Steps:

  • Tip the spinach into a large colander and bring a kettleful of water to the boil. Slowly pour the water over the spinach until wilted, then cool under cold water. Squeeze all the liquid out of the spinach and set aside.
  • Heat grill to high. Heat the oil in a non-stick frying pan and gently cook the onion and potato for about 10 mins until the potato is soft. While the onion is cooking, beat the eggs together in a large bowl and season with salt and pepper. Stir the spinach into the potatoes, then pour in the eggs and cook, stirring occasionally, until nearly set, then flash the omelette under the grill to set the top. Ease the omelette on to a plate, then flip over back into the pan. Finish cooking the omelette on the underside and turn out onto a board. Serve cut into wedges.

Steps:

  • In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.
  • In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.

1 (10 ounce) package frozen chopped spinach
6 potatoes, peeled and chopped
½ cup butter
1 cup sour cream
1 tablespoon chopped onion
1 teaspoon salt
¼ teaspoon dried dill weed
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.
  • Cook spinach according to package directions. Place potatoes in a pot with enough water to cover, and bring to a boil. Cook 15 minutes, or until tender but firm. Drain, cool slightly, and mash.
  • In a bowl, mix the spinach, mashed potatoes, butter, sour cream, onion, salt, and dill. Transfer to the prepared casserole dish. Top with Cheddar cheese.
  • Bake 20 minutes in the preheated oven, until bubbly and lightly brown.

2 cups mashed potatoes
2 tablespoons olive oil
2 cloves garlic, minced
½ medium onion, diced
2 cups fresh spinach
salt and pepper to taste
½ cup cheddar cheese
2 eggs
1 tablespoon butter
2 cups panko breadcrumbs

Steps:

  • Add cooked mashed potatoes to a large bowl. Set aside. Heat olive oil in a non-stick skillet over medium heat. Add garlic and onion. Sautee for 5 minutes.
  • Add spinach and continue sautéing until spinach is wilted. Add spinach mixture to mashed potatoes. Stir to combine.
  • Thoroughly mix the remaining ingredients plus 1 cup of panko crumbs, placing the rest of the panko in a shallow dish.
  • Preheat oven to 350. Form potato mixture into small cakes, coat them in the panko, ad then transfer cakes to a nonstick baking sheet. Repeat with remaining mashed potato mixture.
  • Bake for 15-20 minutes, or until cakes are browned on top. Serve immediately.

2 cups prepared mashed potatoes (leftover is great)
1/2 cup cheddar cheese
2 scallions, finely chopped
3 slices bacon, cooked and crumbled

Steps:

  • Cook bacon, and set aside to crumble.
  • In a large saucepan, cook onion in butter or dripping until softened.
  • Add chopped mushrooms and cook until tender and onion is golden.
  • Add chicken broth, salt, pepper, and paprika, stirring to mix.
  • Blend in mashed potatoes, stirring until lumps are gone.
  • Bring soup to a boil, then lower heat and add cheddar cheese, stirring until it is melted and smooth.
  • Mix in scallions, crumbled bacon, sour cream, and cream/half and half, stirring to heated through but not boiling.
