Steps:

  • Beat egg and egg whites in a small bowl. Mix in Parmesan cheese, Cheddar cheese, salt, red pepper flakes, garlic powder, nutmeg, and pepper.
  • Heat oil in a large skillet over medium heat; cook and stir mushrooms, green onion, and bell pepper until tender, about 5 minutes. Place spinach in skillet and cook until just wilted. Stir in diced tomato and egg mixture; as eggs set, lift edges, letting uncooked portion flow underneath. Cook until egg mixture sets, 10 to 15 minutes; cut into wedges and serve immediately.

2 tablespoons shredded Cheddar cheese
1 teaspoon chopped fresh dill

Steps:

  • Whisk eggs in a small bowl. Heat oil in a small skillet over medium-high heat, tilting to coat the pan. Pour in the eggs and immediately stir with a rubber spatula or fork for 5 to 10 seconds. Then push the cooked portions at the edge toward the center, tilting the pan to allow uncooked egg to fill in around the edges. Continue to cook until almost set and the bottom is light golden, about 1 minute total.
  • Remove from heat and top half the omelet with spinach and Cheddar. Fold the other half over the filling. Slide the omelet onto a plate and sprinkle dill on top.

Steps:

  • Crack the eggs into a bowl, add the sea salt and chopped onions and blend together with a wire whisk.
  • Melt 3 tablespoons of butter in a frying pan, and then add the egg mixture, tipping the pan to make sure the egg mixture covers the bottom of the pan.
  • Cook on medium heat, until the underside is lightly browned, and then add the spinach and the crumbled feta cheese.
  • Lift one side of the omelet with a spatula and fold it in half.
  • Reduce the heat, and cook until the inside of the omelet is cooked (less than a minute or so).

400g bag spinach leaves
3 tbsp olive oil
1 large onion , finely sliced
2 large potatoes , peeled and finely sliced
10 eggs

Steps:

  • Tip the spinach into a large colander and bring a kettleful of water to the boil. Slowly pour the water over the spinach until wilted, then cool under cold water. Squeeze all the liquid out of the spinach and set aside.
  • Heat grill to high. Heat the oil in a non-stick frying pan and gently cook the onion and potato for about 10 mins until the potato is soft. While the onion is cooking, beat the eggs together in a large bowl and season with salt and pepper. Stir the spinach into the potatoes, then pour in the eggs and cook, stirring occasionally, until nearly set, then flash the omelette under the grill to set the top. You can use bagged baby spinach or stemmed and washed bunch spinach for this simple omelet with Mediterranean flavors.

2 ounces baby spinach or stemmed, washed bunch spinach (2 cups, tightly packed)
1 large or 2 small garlic cloves, minced or puréed
Salt and freshly ground pepper
2 eggs
2 to 3 teaspoons low-fat milk
2 teaspoons extra virgin olive oil
2 teaspoons freshly grated Parmesan

Steps:

  • Wash the spinach and wilt in a frying pan over medium-high heat. The water remaining on the spinach leaves after washing will be sufficient. Drain, allow to cool and squeeze out excess water. Chop medium-fine and toss with half the garlic and salt and pepper to taste.
  • Break the eggs into another bowl and beat with a fork or a whisk until they are frothy. Whisk in the remaining garlic, salt and pepper to taste and 2 to 3 teaspoons milk.
  • Heat an 8-inch nonstick omelet pan over medium-high heat. Add 2 teaspoons olive oil. Hold your hand an inch or two above the pan, and when it feels hot, pour the eggs into the middle of the pan, scraping every last bit into the pan with a rubber spatula. Swirl the pan to distribute the eggs evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the omelet with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking.
  • As soon as the eggs are set on the bottom, sprinkle the spinach over the middle of the egg pancake and top with the Parmesan, then jerk the pan quickly away from you then back toward you so that the omelet folds over on itself. If you don't like your omelet runny in the middle (I do), jerk the pan again so that the omelet folds over once more. Cook for a minute or two longer. Tilt the pan and roll the omelet out onto a plate.

Steps:

  • The first step to know how to make a spinach omelette is to thoroughly wash the vegetables so that they are completely clean, with no dirt or debris. You should put a pot of water on the hob and when the water boils, add the spinach so that they cook well. Add a little salt and oil so the vegetables are tastier.After 5 minutes of cooking the spinach, set them aside and drain them with the help of a strainer removing all the water that may have been accumulated in the vegetables. Crush the spinach leaves to remove the water.
  • Now, peel the garlic and cut into small pieces, if you want you can even crush it. Put two tablespoons of olive oil in a pan and light the hob; when you see that the oil is hot, pour the garlic and let it sauté for 1 or 2 minutes. Remove the pieces of garlic from the oil but keep the oil in the pan as you will use it to make the spinach omelette.
  • While the sauce is cooking, beat the eggs with the help of a whisk until the mixture is fluffy. Cut the cooked spinach into pieces and mix with beaten eggs, stir everything so that all the ingredients are mixed together and add a little salt and pepper to taste.
  • Now pour this mixture of spinach omelette into the pan with the oil over low heat and make sure the edges don't burn. With the help of a spatula you can lift up the mixture and turn it so that it is cooked on both sides.
  • When the spinach omelette is to your liking, you may like it more or less raw, take it out of the pan and serve immediately. Bon Appetite!

2 cloves garlic
2 eggs
1 tablespoon milk (skimmed optional)
salt (to taste)
1 teaspoon olive oil
2 tablespoon Parmesan cheese (grated)
1/2 teaspoon chilli flakes (optional for seasoning)

Steps:

  • Prep the ingredients. Wash and chop the spinach leaves. Don't let the leaves go dry. Leave some water. Thinly slice the garlic. Crack the eggs into a bowl, and add a tablespoon of milk. Add a pinch of salt, and whisk the eggs gently just enough for the yolk to mix well.
  • Heat a cast iron skillet (or any other frying pan), and add the chopped spinach, garlic, and sprinkle some salt. Let the leaves wilt, and take them off the skillet.
  • Pour a teaspoon olive oil on the pan, and spread it evenly with a spatula. Reduce the flame to medium, and pour the egg mixture. Tilt the pan and let the eggs spread evenly. As soon as the omelette start to set, lift near the edges with the spatula so that the uncooked eggs can reach the bottom of the pan. Once the center starts to set, top half of the omelette with the cooked spinach and garlic. Now sprinkle the grated cheese on top of it.
  • Lower the flame, and cook further. Wait for the cheese to start melting, and once the omelette starts to get detached from sides, fold in half. Gently slide the omelette to a plate.

  • Heat an 8-inch omelet pan, or shallow skillet, preferably nonstick, over medium-high heat. Add the olive oil, then when hot add the spinach, season lightly with salt and pepper, and toss for one minute until the spinach is wilted. Transfer to a small plate.
