LAMB WITH SPINACH AND ONIONS
Grilling is a wonderful way to prepare lamb. The marinade and on-the-side onion sauce enhance the meat's naturally terrific taste.

- In a large resealable plastic bag, combine the first 10 ingredients; add lamb chops. Seal bag and turn to coat; refrigerate for 8 hours or overnight., In a saucepan. saute green onions in butter until tender. Add vinegar and wine or broth and grape juice; bring to a boil. Add mint and sugar. Reduce heat; simmer, uncovered, for 30 minutes or until sauce is reduced to 3/4 cup. Strain; discard mint. Set sauce aside., Thread onion wedges onto metal or soaked wooden skewers. Brush with salt and pepper. Discard marinade from lamb. Grill chops, covered, over medium-hot heat for 5-6 minutes on each side or until meat reaches desired doneness (for medium, a thermometer should read 160°; well done, 170°). Grill onion skewers for 2-3 minutes or until tender., In a large skillet, saute green onions and garlic in oil and butter until tender. Add the spinach, salt and pepper; saute for 2-3 minutes or until spinach just begins to wilt and is heated through. Place on a serving platter. Remove onion from skewers; place onion and lamb chops over spinach.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
- Melt the butter in a skillet over medium heat, and saute the onion and pancetta until onion is tender and pancetta is cooked through.
- Alternately layer the potato slices, salt and pepper, pancetta and onion mixture, spinach, and cheese in the prepared baking dish. Pour the heavy cream over all.
- Cover, and bake 1 hour in the preheated oven. Uncover, and continue baking 30 minutes, until bubbly and lightly browned.

- Arrange spinach leaves on a large platter or individual salad plates. Top with mandarin sections and chopped red onion. Whisk together marmalade and vinegar. Stream oil into dressing while continuing to whisk.

Steps:
- Preheat oven to 400 degrees Farenheit.
- Lightly oil a large roasting pan.
- Mix oil and vinegar in a bowl, add garlic, salt, and pepper.
- Trim ends off onions, and cut into wedges from end to end.
- Cut potatoes in large wedges.
- Place potatoes and onions in bowl with dressing, toss well.
- Spread potatoes and onions in single layer in roasting pan, and sprinkle with water or vegetable broth.
- Roast 30 minutes, stirring only once or twice and adding more water or broth if needed.
- Add spinach, and cook for about 10 minutes more.
- Alternatively: Sautee spinach and top with potatoes and onions.

- Peel onions. Cut a 1/2-in. slice from the top of each onion; remove center with a melon baller, leaving 1/2-in. shells. Chop removed onion and set aside 1 tablespoon. (Discard remaining chopped onion or save for another use.), Place onion shells in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cook, uncovered, for 8-10 minutes or until tender. SPINACH 'N ONIONS
Nice way to serve spinach and so good for you! The secret is not to overcook the spinach. I like to add a few roasted pine nuts or pumkin seeds with a nice jolt of Marsala wine. I love to serve this recipe with recipe#399309. Just spoon the sauce over the spinach when it is on the plate MMMmm

- In a large saute pan, melt the bacon grease over medium heat. Add the onion and garlic and stir to cook until the onions are very soft, about 5 minutes. - Melt 4 tablespoons butter in heavy large saucepan over medium heat. Add green onions and sauté until just tender, about 3 minutes. Sprinkle flour over; whisk 1 minute. Gradually whisk in milk. Whisk until mixture comes to boil and thickens, about 4 minutes. Remove from heat.

- If using fresh spinach, unbundle and soak in a sink full of cold water.
- Swish around and drain water out of the sink.
- Repeat.
- This is to remove sand and grit.
- Chop coarsely when ready to cook.
- Drain spinach and steam on medium heat in large pan.
- Meanwhile saute mushrooms, onion and garlic in oil on med-high heat.
- When spinach is tender, drain all remaining water (if any water remains the dish will be too watery) and add mushroom/onions.
- Turn off heat and stir in sour cream, add salt and pepper to taste and mix well.
- Add more sour cream if you wish-- this is up to the cook.
- Serve hot and enjoy!
