We often steam our fresh spinach and eat it plain. But this version dressed up with red pepper, onion and garlic is a nice change. It is really quick and tasty-and pretty, too.

- In a large skillet, heat oil over medium-high heat. Add red pepper; cook and stir for 1 minute. Add onion and garlic; cook 1-1/2 minutes longer or until onion is tender. Add remaining ingredients; cook and stir for 1-2 minutes or until spinach is just wilted.

This is what I like to do year round. It is so easy to do, and it only requires a few main ingredients. Edited Note: After much consideration, I have decided to change the measurements. I know this would be the second time, but I feel that the new measurements best reflects my the recipe. Steps:
- Saute onions in olive oil until translucent, about 5 minutes on medium heat.
- Add mushrooms and saute for another five minutes.
- Add red pepper, and saute for two more minutes.
- Put on low and add lemon juice and wine.
- Add seasonings. It is best served warm.

MARINATED MUSHROOMS WITH RED BELL PEPPERS
This is perfect for a buffet or as a football appetizer menu addition. I make these a couple of days ahead and store them in a glass jar. Even non-mushroom-eaters like this one. On occasion, I kick this up by adding 1/8 teaspoon red pepper flakes instead of the black pepper.

- Combine the vinegar, water, oil, sugar, onion, parsley, basil, garlic, salt, and pepper; bring to a boil. Stir in the mushrooms and red bell pepper; return mixture to a boil; reduce heat and simmer until the mushrooms are tender, 5 to 10 minutes. Remove from heat and allow to cool to room temperature. Transfer to a covered container and store in refrigerator at least 4 hours before serving.

- Place bell pepper directly over the flame of a gas-stove burner or under the broiler. Roast pepper, turning with tongs, until blackened all over. Transfer pepper to a medium bowl, and cover immediately with plastic wrap. Let steam 15 minutes. Discard skin, stem, seeds, and ribs; slice pepper lengthwise into 1/8-inch-thick strips, and set aside.
- Heat oil in a large skillet over medium heat. Add shallots; cook, stirring, until golden, 1 to 2 minutes. Add roasted pepper; cook, stirring, until heated through, about 30 seconds. Raise heat to medium-high. Add half the spinach, and cook, stirring, until wilted, about 2 minutes. Add remaining spinach, and cook until wilted, about 2 minutes more. Stir in salt, pepper, and lemon juice, and serve.

- Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
- Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.

- Heat 1 tablespoon oil in a wok or deep frying pan over medium heat. Add onion and saute until soft, 3 to 5 minutes, depending on how soft you like it. Add mushrooms and saute for 4 to 5 minutes. Add garlic and saute for 1 more minute. Add tomato and cook for 1 to 2 minutes. Remove mixture to a dish and keep warm.
- Add remaining 1 tablespoon oil to the same pan over medium-high heat. Add spinach, salt, and pepper. Cook, tossing continually, until spinach begins to wilt, 1 to 2 minutes. Add onion mixture and mix until thoroughly incorporated. Continue to toss and stir until spinach is cooked to your desired doneness.

- Char peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag and let stand 10 minutes. Peel, seed and cut peppers into matchstick-size strips. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Melt 1 tablespoon butter in heavy large pot over medium-high heat. Add roasted peppers and sauté until heated through, about 3 minutes. Transfer to medium bowl. Cover to keep warm.
- Melt 1 tablespoon butter and 1 1/2 tablespoons oil in same pot over medium-high heat. Add half of spinach and cook just until wilted, about 3 minutes. Transfer spinach to bowl with roasted peppers. Repeat with remaining 1 tablespoon butter, 1 1/2 tablespoons oil and spinach. Toss spinach and peppers to combine. Season with salt and pepper.

- Roasted Peppers ... Now, you can always buy them; but, they are so easy, and MUCH cheaper to make yourself. Add the red peppers to the broiler in your oven; and, broil until the skin is blackened on all sides (turning often). This method, can also be done on a gas stove burner; or, on a grill. But, the oven/broiler method tends to be the most common. Once the peppers are good and charred, place them in a bowl and cover with plastic wrap. You can also put them in a brown paper bag. Lunch bags work perfect for this. Seal it up; and, let them rest (cool) 15-20 minutes. Once cool, the skin will peel right off. I use the back side of a knife to do this. DO NOT rinse under water - this gets rid of all that goodness you just created. Don't worry about a few little charred bits, they add flavor. Then, rough chop, and remove the seeds and ribs.
- Red Pepper Sauce ... Add the peppers, garlic, red wine vinegar, olive oil, thyme, pinch of salt, and a pinch of pepper to a blender; and pulse a few times until smooth.
- Mushroom and Spinach Sauce ... Add the olive oil to a large saute pan and bring to medium heat. Then, add the mushrooms, onions, and a pinch of salt and pepper; and, saute for 5-6 minutes until the mushrooms are tender, and all the moisture has evaporated. Add the spinach and saute until lightly wilted. I usually cover the pan for just a couple of minutes - it goes very quickly.
- Note: if you decide to use kale, make sure you fine chop; and, add it when the mushrooms are about half way cooked. The kale takes longer to cook than spinach.

- Cut the peppers in half, cutting through the stems(you can't eat them but they look pretty). Cut out and discard the core and seeds. Place cut side up on a baking tray.
- Heat the oil and butter in a frying pan and add the shallots. Sauté for 2 to 3 minutes until softened then add the garlic.
