Steps:
- Melt the butter in a large skillet over medium-low heat. Add the shallots and cook, stirring frequently, until soft and translucent, about 4 minutes. Add the garlic and cook, stirring constantly, for 1 minute more. Do not brown. Add the heavy cream, salt, pepper, and nutmeg and bring to a gentle boil. Cook, uncovered, stirring occasionally, until the cream is thick enough to coat a wooden spoon, about 10 minutes. Add the cheese and stir until melted. Add the spinach and stir until evenly combined with the cream sauce. Taste and adjust seasoning if necessary. (If the spinach seems a little watery, cook over medium-low heat until any excess liquid evaporates.) Serve warm.
- Note: Cut leaf spinach is not the same as chopped spinach. If your market doesn't carry cut leaf spinach, look for frozen whole leaf spinach. (Chopped spinach will work but the texture won't be as appealing.) Some markets carry 1-lb bags and some carry 10-oz boxes; if you can only find the 10-oz boxes, you'll need three of them. If you'd like to start with fresh spinach, you'll need about 2 pounds baby spinach leaves. Steam and drain the baby spinach, then roughly chop and measure out 2 packed cups.
- Make-Ahead Instructions: This dish can be made and refrigerated a day ahead of time. Reheat in the microwave, uncovered, stirring every 30 seconds or so, until hot, a few minutes. When reheated, the spinach won't be quite as creamy-looking as it was originally (though the taste will be the same); you can add a bit of cream when reheating to get a creamier consistency, if you'd like.

SPINACH, LIKE YOU HAVE NEVER HAD
My good friend Bev cooked this one day at a friends place. She had never been a spinach fan. Whole new way to look at the old "silver beet" which is a brother to the more insipid English spinach. Can be a breakfast dish with a few eggs, luncheon with a sprinkle of cheese, or side dish. Anything a little different is nice for a change :)

Steps:
- Shred the green leaves from the white stem, and wash both thoroughly, drain.
- In a frypan with a little olive oil, fry some chopped onion, garlic and bacon (capsicum optional). When limp add a dash of pepper and curry powder.
- Chop the stems and add them to the mix, cook a few minutes, stirring.
- Add the shredded leaves and stir, cover and steam 2 mins, or until done the way you like it.
- (There should be enough water on the leaves to steam effectively, but you can add some if you have too.).
ROASTED GARLIC AND BACON SPINACH DIP
This creamy bacon spinach dip is like regular hot spinach dip, but turned up a notch with extra flavor. Enjoy crispy bacon, plenty of roasted garlic, and extra parmesan cheese in each bite. You can bake this dip in a 2.5 quart baking dish or in individual ramekins. Serve warm with crunchy fresh vegetables, crackers, pita chips, pretzel bites, or crusty homemade bread.

Steps:
- Preheat oven to 350°F (177°C) degrees.
- Cook the bacon in a skillet over medium heat until crisp. Turn off the heat, transfer cooked bacon to paper towel lined plate, and remove all but 1 Tablespoon of bacon grease from the pan. Once bacon has cooled down enough to handle, chop into bite-size pieces.
- Turn the skillet with 1 Tablespoon of bacon grease on low heat. Cook spinach for 1-2 minutes or until wilted. Turn off heat and set spinach aside.
- Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, yogurt/sour cream, and mayonnaise together on medium-high speed until creamy and smooth. Add 1/2 cup shredded parmesan cheese, the salt, pepper, and roasted garlic. Fold in the spinach and all but 2 Tablespoons of the chopped bacon.
- Spoon the dip into a 2.5 quart baking dish, such as a 9-inch square baking pan, 9-inch cast iron skillet, 9-inch pie dish, or anything close to that size. In these photos, I used a 7×11 inch baking dish which holds the same volume. Bake for 18 minutes, remove from the oven, sprinkle evenly with remaining parmesan cheese and chopped bacon. Return to the oven and bake until the dip is bubbly around the edges, about 5-8 more minutes.
- Serve dip warm. Cover leftovers tightly and refrigerate for up to 3 days. Reheat in a 300°F (149°C) degree oven until the sides are bubbly again.
