LEEK, SPINACH, AND MUSHROOM TART
This is one of my favorite recipes given to me by a friend. We love making it for brunch! Customize it however you like with your favorite veggie and herb combinations. Enjoy!

Steps:
- Heat oil over medium heat in a large saute pan. Add leeks, mushrooms, and onion; cook, stirring occasionally, until wilted, about 5 minutes. Add garlic and cook and stir for 1 minute. Add spinach and cook until wilted and tender, about 2 minutes. Remove from heat, taste, and season with salt and pepper as needed. Let cool, about 10 minutes.
- Meanwhile, whisk ricotta cheese, eggs, and basil together in a large bowl. Fold into the cooled vegetable mixture.
- Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
- Roll pastry dough out into a 12-inch square on a lightly floured surface. Transfer dough to the prepared baking sheet. Spoon filling into the center of the square, leaving a 2-inch border of pastry. Lift pastry edges and fold over the filling, creasing dough as needed and leaving filling exposed in the middle.
- Bake tart in the preheated oven until pastry is golden brown, about 45 minutes. Remove from the oven and let rest for 10 minutes before cutting and serving.

FETA, SPINACH AND LEEK TART
A delicious, easy to prepare tart, great for lunch or dinner, served with salad. I bought a rectangular tart tin and this was on the back so gave it a try and was thrilled with the result.

Steps:
- Preheat oven to 200°C.
- Cut the leek in half and thinly slice the pale part after washing, to achieve 1 cup.
- Melt the butter in a saucepan and lightly saute the leek over medium heat for 4 minutes.
- Add the spinach to saucepan, cover and cook until wilted, remove from heat and remove excess water by pressing the leaves into a strainer.
- Combine in a bowl sour cream, cream and lightly beaten eggs.
- Mix together.
- Add the crumbled Feta, spinach and coarsely shredded basil leaves.
- Season with cracked black pepper. stir well.
- Line a non stick, rectangular quiche pan (35 x 13cms) with the pastry, over lapping, gently pushing down in the centre.
- Gently push the pastry into the sides of the pan then trim excess pastry.
- Place the pastry lined pan onto a baking tray and lightly prick the base with a fork.
- Pour the prepared cream cheese mixture into the pan.
- Bake in the middle of the oven for 30-35 minutes until firm and golden.
- Remove from baking tray before serving or cutting.
SPINACH AND LEEK TART
Adapted from a recipe torn from an Australian Womens Weekly - I made one large tart but you could make individual ones if you wished.You could also use a pre made pastry shell.

Steps:
- Melt butter in pan, add sliced leek.
- Cook, stirrng for 3 minutes till soft, remove from heat.
- Place thawed spinach into sieve and press to remove excess water.
- Add to leek mixture.
- Combine sour cream and eggs in a bowl.
- Stir in leeks,spinach,cheese and salt and pepper.
- Heat oven to 190 C.
- Lightly grease pie tin.
- Line tin with pastry, prick base with fork.
- Bake pastry for 15 minutes.
- Pour mixture into pastry shell.
- Bake 30 minutes.
SPINACH LEEK TART

- Preheat oven to 400 degrees. Fit pastry into 9-inch springform pan. Bake and let cool slightly in the pan. To prepare filling, in a skillet heat 1 tablespoon of the butter and the olive oil over moderate heat. Add spinach and lemon juice; cook 2 minutes. Transfer to a strainer; press to extract excess liquid. Return skillet to moderate heat; add remaining 2 tablespoons butter. Add garlic and leeks; saute until leeks are softened but not browned (about 10 minutes). Stir in bread crumbs; add salt and pepper. Arrange spinach around sides and bottom of baked, cooled crust. Spoon in leek mixture. Spoon tomatoes over top. Return to oven; bake until filling is hot throughout (5 to 8 minutes). Let filling rest 3 to 5 minutes before unmolding tart. Garnish with parsley and Parmesan before serving.

- make the pastry: Coarsely grate the butter (I use a box grater) and place it in the bowl of a food processor. Add flour and briefly pulse. Add 3 TBSPs of ice-cold water and pulse until the dough starts to come together. If needed add more water by the tablespoon. You have to be able to pinch dough together with your fingers. Form dough into a disk, wrap well and chill in the refrigerator for 1 hour or overnight.
- Allow dough to rest at room temperature for 5 minutes before rolling. Preheat oven to 425°F (220°C), with a rack in the middle of the oven. Flour your work surface and roll out the dough, rotating it as you do so, so it doesn’t stick. Roll it out slightly bigger than the pan. Transfer to a 9-inch (23-cm) tart pan (that you previously brushed with oil to prevent sticking). Press dough into the bottom and up the sides, slice away any overhang. Pierce pastry with a fork, line it with oiled parchment paper and fill with dry (or baking) beans. Transfer pan to a baking sheet and bake for 10 minutes. Remove the beans and bake for another 5-10 minutes until the crust is fully baked, almost golden. Take out of the oven and set aside; lower the oven temperature to 350°F (175°C).
- Make the filling: In a skillet, warm olive oil on medium-high heat and add leeks. Cook for about 5 minutes until the leeks are wilted. Add spinach, teaspoon of salt, garlic powder and a grind of pepper. Cook for another 2 minutes, until combined. Set aside. Whisk together eggs, milk, cream, pinch of salt, pepper and nutmeg in a small bowl.
- Evenly arrange the spinach filling into the tart shell. Sprinkle 1/2 cheese over the spinach. Slowly pour over the egg mixture. Sprinkle with remaining cheese and pine nuts. Bake for 30 minutes or until the filling is golden and set, cheese bubbly. Serve warm or at room temperature, keep leftover tart in the refrigerator.

- Freeze your pie crust for 30 minutes. After freezing, blind bake at 375 for 20 minutes. To blind bake. place a piece of parchment paper over the crust. Place rice or dried beans on top of the parchment paper to weigh it down. This will prevent your crust from shrinking while baking. Remove from oven after baking.
- Melt the butter in a large skillet or pot. Add the leeks and cook until tender. Add the spinach and cook until wilted. Drain if necessary.
- To assemble the tart, sprinkle 1/2 of the Gruyere cheese over the pie crust. Top with the spinach/leek mixture, green onion and goat cheese. Pour the egg mixture over top and then top with the remaining Gruyere cheese.

- Heat the olive oil over medium heat, in a large frying pan. Add leeks and onion, and sauté for about 5 minutes, stirring occasionally until wilted. Stir in the garlic and continue to sauté for about 1 minute.
- If using fresh spinach, steam it in a steamer basket until wilted, about 8 minutes. If using frozen, defrosted spinach, add it to the leek mixture and cook until wilted and softened. - Heat the butter in a large skillet over low heat. Keep a small cup of water nearby. Add the leeks with a pinch of salt and stir to coat in the butter. Allow the leeks to sweat for 2-3 minutes and then turn up the heat to medium. Allow the leeks to slowly caramelize, stirring frequently. As a brown glaze forms on the bottom of the pan add a 1-2 tablespoons of water at a time and stir to incorporate the glaze back into the leeks. Once they are nicely caramelized (approximately 10-15 minutes), remove from the heat and set aside.
- Place the spinach in a large skillet with a splash of water or olive oil (this step can be done in batches if the pan isn't large enough to accommodate all of the spinach). Turn the heat to medium low. Turn the spinach for a few minutes until it wilts. Season with a bit of salt and pepper and allow to drain on a plate with paper towels.
- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Roll out chilled puff pastry until it is approximately 11x15 inches or 12x14 inches. Place the dough on the prepared baking sheet. Distribute the leeks, spinach and artichokes evenly, leaving a small border around the edge of the dough. Top with parmesan cheese.
- Bake the tart for 25-30 minutes, or until the edges are golden and firm. Periodically check on the tart while it's cooking. If part of the dough around the edge inflates with an air bubble at any point, gently prick it with a fork to deflate.

- Put the flour, sugar and salt in a bowl and stir to combine. Place the flour mixture into a food processor.
- Wash and partially dry the baby spinach. A salad spinner works well for rinsing the spinach. Add 1 tablespoon of vegetable oil to a non-stick pan and heat on medium-high heat until it begins to shimmer. Add all the spinach and 1/2 teaspoon of salt. Continuously stir the spinach and cook on medium high heat until it is completely cooked, and the liquid is evaporated. Remove the pan from the heat, and the ground nutmeg and stir it into the spinach. Scrape the spinach onto a paper-towel lined plate to absorb any remaining moisture.
