SMALLER LASAGNA FOR TWO
Now that it's just me and my husband at most dinners, a big lasagna becomes a burden with the leftovers which I don't like to either freeze or eat for days on end This version is much smaller, but with all the same flavor you'd expect.

Steps:
- Preheat oven to 375°F.
- Cook noodles and drain.
- Saute onion and garlic in olive oil in a large skillet for a few minutes then add ground beef, oregano, basil salt and pepper and cook until beef is browned, breaking up any clumped meat. Stir in marinara sauce and simmer over low heat for 15 minutes, making sure sauce doesn't get too thick.
- In a small bowl, whisk together a lightly beaten egg with ricotta and parmesan.
- In the bottom of a loaf pan, place about 1 cup meat sauce across the bottom. Top with two noodles, then top with half of the remaining meat sauce mixture. Top with another two noodles and the ricotta mixture. Top with the last two noodles and the remaining sauce. Layer mozzarella slices across the top.
- Loosely tent pan with foil and bake for 45 minutes, then remove foil and bake another ten minutes, allowing cheese to brown.
- Let sit for about 10-15 minutes before you cut into it.

- Cook noodles according to package directions. Rinse in cold water; drain well., In a large bowl, combine the spinach, ricotta cheese, egg, egg white, 1/4 cup Parmesan cheese, garlic, basil, pepper and nutmeg. Combine mozzarella cheese and remaining Parmesan cheese., In a 13x9-in. baking dish coated with cooking spray, layer three noodles, 3/4 cup tomato sauce, 1 cup spinach mixture and 3/4 cup cheese mixture. SPINACH LASAGNA
This hot and bubbly spinach lasagna is filled with a creamy garlic sauce, chicken, bacon, and two cheeses for lots of savory flavor!

- Begin by preparing your sauce: add the milk and the chicken base to a large saucepan or medium pot, whisk to combine, and bring to the simmer; then, turn off the heat.
- While the milk heats, add the butter to another large saucepan or medium pot, along with the garlic, and place over medium heat; allow to melt together, and stir the garlic into the butter to soften.
- Sprinkle the flour into the melted butter/garlic, and stir to combine; stir for about 1-2 minutes to cook out the raw taste of the flour.
- Next, slowly add the hot milk into the butter/garlic/flour mixture, whisking constantly to avoid lumps form forming, and allow the sauce to simmer for a few moments until thickened.
- Once thickened, turn off the heat and finish by whisking in a pinch or two of salt, the black pepper, the nutmeg, the Italian seasoning, and the parmesan cheese; keep warm, or allow to completely cool and keep in fridge to use later.
- Next, assemble your spinach lasagna: preheat the oven to 350°, and lightly grease a 12 x 9 x 2 ½" (roughly) baking dish.
- To assemble your lasagna, add a thin layer of the sauce to the bottom of the baking dish, and spread evenly.
- Add 4 lasagna noodles over the sauce, then add in another (more generous) layer of the sauce.
- Next, sprinkle over about half of the diced chicken, followed by about 1 cup of the shredded parmesan and 1 cup of the shredded mozzarella.
- Next, sprinkle over about half of the bag of baby spinach, followed by about 1/3 of the chopped bacon.
- Repeat with another layer of 4 lasagna noodles, more sauce, the rest of the chicken, another cup of parmesan and mozzarella cheese, the remainder of the baby spinach, and another 1/3 of the chopped bacon; then, cover with the last layer of four lasagna noodles.
- Finish by topping the noodles with sauce, then sprinkle over the last cup of parmesan cheese, the last 2 cups of mozzarella cheeses, and the teaspoon of Italian seasoning; bake for about 20-25minutes, or until golden and bubbly.
- Garnish with the remainder of the chopped bacon and the chopped parsley, and serve.

PERFECT SPINACH LASAGNA

- Gather the ingredients.
- Heat the oven to 350 F. Lightly grease a 9-by-13-by-2-inch baking dish or lasagna pan .
- In a medium bowl, combine the ricotta cheese with half of the drained and squeezed spinach, half of the grated Parmesan cheese, the egg, garlic powder, and salt. Mix to blend well.
- Mix the remaining half of the drained spinach with the marinara sauce .
- Spread about 1/2 to 1 cup of the marinara-spinach mixture over the bottom of the baking dish, just enough to coat the bottom.
- Top with a layer of noodles.
- Top the noodle layer with about 3/4 cup of the marinara; spread over the noodles.
- With a small spoon, put about one-third of the ricotta mixture over the sauce layer, spacing evenly in small dollops, then sprinkle with about one-quarter of the mozzarella cheese.
- Repeat, making two more layers of the noodles, sauce, ricotta mixture, and mozzarella.
- Top with another layer of noodles, the rest of the sauce, shredded mozzarella, and the remaining half of the grated Parmesan cheese.
- Grease a sheet of foil large enough to fit over the lasagna. Cover the lasagna tightly with the foil, greased side down. If your baking pan is very full, place a foil-lined baking sheet on a lower rack to catch spills.
- Bake the lasagna for about 45 minutes, or until very hot and you can see it is beginning to bubble.
- Remove the foil and bake for 20 to 30 minutes longer, until very hot and the cheese has melted.

- Mix pasta sauce and water until blended. Combine egg, spinach, ricotta and Parmesan in separate bowl. Break 9-inch piece off each noodle. Reserve all noodle pieces for lasagna assembly.
- Spread 1/2 cup pasta sauce mixture onto bottom of 9x5-inch loaf pan sprayed with cooking spray; cover with layers of 2 long noodle pieces, 1/3 of the spinach mixture and 1/4 cup shredded cheese. - Preheat oven to 350 degrees F (175 degrees C).
- In a large pot over medium heat saute spinach, onion, oregano, basil and garlic in the olive oil. Pour in spaghetti sauce and water; simmer 20 minutes. In a large bowl mix cottage cheese, mozzarella cheese, Parmesan cheese, parsley, salt, pepper and egg.

- Cover pan tightly with aluminum foil that has been sprayed with nonstick spray. Bake at 25-30 minutes, or until the noodles are cooked and the sauce is bubbly around the edges. Remove the foil and bake until the cheese is lightly brown in spots, for an additional 10 minutes or so. Let cool for 5-10 minutes out of the oven to let it set a little more before cutting into it.
