SPINACH AND FETA CHICKEN



Spinach and Feta Chicken image

This Spinach and Feta Chicken is not only super creamy and delicious but also easy to put together since there are only a handful of ingredients and a few steps in this recipe from start to finish.

2 lbs boneless (skinless chicken breast)
8 oz cream cheese (softened)
8 oz frozen chopped spinach
1 cup mozzarella cheese (grated)
1/2 cup feta cheese (crumbled)
1/4 cup milk
1 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1/8 tsp nutmeg
1/8 tsp cayenne pepper (optional)
Garnish (optional)
Grape tomatoes (halved)

Steps:

  • Preheat the oven to 375˚F.
  • Thaw the spinach and wring as much of the water from it as possible.
  • In a large bowl, combine the cream cheese with the garlic powder, salt, pepper, nutmeg, and cayenne pepper and mix until combined. Stir in the milk and then the feta cheese and spinach, mixing until combined.
  • Place the chicken breasts flat in a single layer in the bottom of a large casserole dish. Spread the chicken with the spinach mixture and then sprinkle the mozzarella cheese evenly over the top.
  • Bake for approx 40-50 minutes on the middle rack of the oven until the chicken is cooked through (165˚F internal temp)
  • Garnish with grape tomatoes and serve hot! Enjoy!

1 small red onion, diced
1 medium red bell pepper, diced
1 (16 ounce) package frozen white corn kernels
1 teaspoon ground cumin
salt and ground black pepper to taste
1 (4 ounce) container crumbled feta cheese
½ cup spinach, cut into 1/2-inch pieces

Steps:

  • Heat oil in a skillet over medium heat. Cook onion and bell pepper for 2 minutes. Stir in corn and continue cooking and stirring until onion is partially translucent, about 10 minutes. Season with cumin, salt, and pepper and stir to combine.
  • Remove from heat and stir in feta cheese and spinach.

8 eggs
1/4 cup milk
1 tsp dried oregano
1/2 tsp dill weed
1/2 tsp black pepper
1/2 tsp paprika
1/4 tsp baking powder (optional)
pinch salt
6 oz frozen chopped spinach, thawed and completely drained (wring any water out of spinach)
1/2 cup finely chopped yellow onion
1 cup chopped fresh parsley
3 tbsp chopped fresh mint leaves
3 garlic cloves, minced
3 to 4 oz crumbled feta cheese
Extra virgin olive oil (I used Private Reserve Greek extra virgin olive oil)
3-ingredient Mediterranean salad Recipe

Steps:

  • Preheat oven to 375 degrees F.
  • In a large bowl, whisk together eggs, spices, baking powder, and pinch of salt.
  • Add spinach and all remaining ingredients to the egg mixture. Mix well to combine.
  • In a 12-inch cast iron skillet (or oven-safe skillet), heat 2 tbsp olive oil until shimmering but not smoking. Pour in the egg mixture. Give the skillet a gentle shake to allow the egg mixture to spread well. Cook on medium-high heat for about 4 minutes or so allowing the bottom of the eggs to settle. Transfer to heated oven to finish cooking (bake for 8 minutes or until eggs are cooked through and the top is firm and no longer runny.)
  • Serve with 3-Ingredient Mediterranean Salad. Enjoy!

An all time favorite of mine, I got this recipe from Allrecipes posted by Suki. It's fast and easy to make and tastes fantastic. Crusty rolls for mopping up the juices is all that's needed to finish the meal. I use lots more of the red pepper flakes to add zing and probably more feta as well since it's my favorite cheese. It's a real filling dinner for those nights when we want to eat vegetarian and DH requests this one frequently.

1 (8 ounce) package penne pasta
2 tablespoons olive oil
1/2 cup chopped onion
1 garlic clove, minced
3 cups chopped tomatoes
1 cup sliced fresh mushrooms
2 cups spinach leaves, packed
salt and pepper
1 pinch red pepper flakes
8 ounces feta cheese, crumbled

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente; drain.
  • Meanwhile, heat olive oil in a large skillet over medium-high heat; add onion and garlic, and cook until golden brown. Mix in tomatoes, mushrooms, and spinach. Season with salt, pepper, and red pepper flakes. Cook 2 minutes more, until tomatoes are heated through and spinach is wilted.
  • Reduce heat to medium, stir in pasta and feta cheese, and cook until heated through.

  • Mince the garlic and add it to a skillet with the olive oil. Cook over medium-low heat for 1-2 minutes, or until it begins to soften. Add the frozen spinach, turn the heat up to medium, and cook for about 5 minutes, or until heated through and most of the excess moisture has evaporated away. Season lightly with salt and pepper.
  • Cut the rolls in half. Add about 1/4 cup of shredded mozzarella and 1/2 oz. of feta to the bottom half of each roll. Divide the cooked spinach between the two sandwiches, then top with a pinch of red pepper flakes, plus 1/4 more shredded mozzarella on each.
  • Place the top half of the ciabatta roll on the sandwiches and transfer them to a large non-stick skillet. Fill a large pot with a few inches of water to create weight, then place the pot on top of the sandwiches to press them down like a panini press. Turn the heat on to medium-low and cook until the sandwiches are crispy on the bottom. Carefully flip the sandwiches, place the weighted pot back on top, and cook until crispy on the other side and the cheese is melted. Serve warm.
