These are a big hit in the summertime when everyone is tired of the same old hamburgers and hot dogs. Serve with or without buns and your favorite condiments. I like to serve these with lettuce, tomato, and Tzatziki sauce (you can find recipes for that on this site as well).

- Mix the spinach, garlic, onion, oregano, salt, pepper, feta and turkey together in a bowl until just combined.
- Shape into 4 patties, 1-inch thick.
- Heat a heavy skillet or cast iron skillet on pan to medium-high.
- Add the patties and cook for 4-5 minutes on each side. Do not keep flipping them over.
- Toast the hamburger buns lightly.
- Mix the yogurt, lemon, salt and pepper in a bowl and add to the buns.

- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Knead together the ground beef, Worcestershire sauce, parsley, salt, and pepper in a bowl. Form the mixture into 8 equal-sized balls; flatten to make thin patties. Place about 1/4 cup of feta cheese onto each of four of the patties. Top each of the patties with cheese with one of the patties without; press the edges together to seal the cheese into the center.
- Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 8 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

- In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 6-8 minutes on each side. - Add ground chicken to large bowl. Mix in drained spinach, whole cracked egg, crumbled feta, minced garlic, diced onion and dried oregano. Mix well using clean hands. Form into six equal size patties (about ½ cup - 125 mL each). Chill for one hour to prevent sticking on the grill.
- Preheat grill to medium-high. Place burgers on top rack, close lid and grill 15 minutes one side or until browned. Close lid and grill another 7-10 minutes or until a thermometer set in centre of burgers registers 165°F (74°C). Remove from grill.
- Place hamburger buns cut side down on grill and toast lightly.
- Slice tomato and onion and place on serving dish with salad greens.
- To serve, spread salad greens over bottom of bun. Top with a feta chicken burger, sliced tomato and onion and other half bun. Serve with your favourite tzatziki sauce or condiments.
