1 cup milk
1 teaspoon baking soda
1 (10 ounce) package frozen spinach, thawed, drained and chopped
8 ounces monterey jack cheese, cubed
3 eggs
1 cup flour

Steps:

  • Combine eggs, milk, flour, and baking powder.
  • Beat well.
  • Add spinach and cheese; mix well.
  • Pour melted butter into a 13 x 9" pan.
  • Pour spinach mixture over butter and combine. Bake at 350 degrees for 35 minutes.
  • Cool 10 minutes before cutting into squares.

1 package (8 oz) cream cheese, softened
1/4 cup ricotta cheese
6 oz provolone cheese, shredded (1 1/2 cups)
1/4 cup finely chopped pickled jalapeño slices, drained (from 11.5-oz jar)
2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Dough Sheet

Steps:

  • Heat oven to 375°F. Lightly spray 48 nonstick mini muffin cups with Crisco® Original No-Stick Cooking Spray. Microwave frozen spinach as directed on box. Squeeze dry with paper towels.
  • In medium bowl, beat cream cheese and ricotta cheese with electric mixer on medium speed until well blended. Stir in spinach, shredded cheese and jalapeños until well blended.
  • Unroll 1 dough sheet; press into 12x8-inch rectangle. Cut dough sheet into 24 squares. Press 1 square in bottom and up side of each mini muffin cup. Spoon 1 rounded teaspoon spinach mixture into each cup. Repeat with remaining dough sheet and filling.
  • Bake 8 to 12 minutes or until edges of dough are golden brown. Immediately remove from pan to serving platter. Cool 5 minutes. Serve warm.

2 tablespoons butter
3 eggs
1 cup all-purpose flour
1 cup milk
1 teaspoon baking powder
1 pound shredded Cheddar cheese
2 (10 ounce) packages frozen chopped spinach
1 tablespoon minced onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place butter or margarine in a 9x13 inch baking dish and melt butter in oven. Remove when melted, approximately 3 minutes.
  • In large mixing bowl, beat eggs well. Mix in flour, milk and baking powder. When the dough is well combined, mix in cheese, spinach, and onion. Spoon mixture into the baking dish with melted butter.
  • Bake for 35 minutes. Let cool 45 minutes then cut into bite-size squares.

1 tablespoon finely chopped onion

Steps:

  • Preheat oven to 350°F. Place melted butter in 13 x 9-inch baking dish; set aside.
  • In large bowl, beat eggs, stir in milk. Stir in flour and baking powder until well blended. Stir in cheese, spinach and onion. Spoon egg mixture into baking dish.

1 cup whole milk
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry

1/2 cup sliced almonds
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/2 cup grated Parmesan cheese
1/4 cup chopped onion
2 teaspoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
1 package (8 ounces) refrigerated crescent rolls

Steps:

  • In a food processor, finely chop the almonds. Add the spinach, cheese, onion, oil, salt and pepper; cover and process until well blended. , Unroll and separate the crescent dough into eight pieces. Spread spinach mixture evenly over dough to within 1/8 in. of edges. Roll up and place on a greased baking sheet. Bake at 375° for 15-18 minutes or until golden brown. Serve warm.

This is a creation of mine that was inspired by a chicken crescent square recipe. I took the ingredients from some of my baked spinach casseroles, tweeked them, and came up with this impressive looking vegetable. Great for a fancy dinner party or a romantic dinner.

4 ounces sour cream
4 ounces cream cheese
1/8 teaspoon garlic powder
10 ounces frozen chopped spinach, cooked and drained
8 ounces fresh mushrooms, sliced
12 refrigerated crescent dinner rolls (one large & one small package)
1 tablespoon butter, melted
breadcrumbs

Steps:

  • Preheat oven to 350 degrees.
  • In a mixing bowl, combine sour cream and cream cheese until smooth.
  • Add garlic powder, then spinach and mushrooms.
  • Separate dough into 6 rectangles on an ungreased baking sheet. Seal seams by pinching dough.
  • Place 1/2 cup mixture on each square.
  • Pull 4 corners of dough to the top and twist to seal. Seal edges by pinching.
  • Brush with melted butter and sprinkle with bread crumbs.
  • Cook for about 20 minutes or until golden brown.

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1 (12 ounce) container small curd cottage cheese
¾ cup grated Parmesan cheese
2 cups shredded Monterey Jack cheese
1 egg, lightly beaten
½ cup chopped onion
2 sheets frozen phyllo pastry, thawed

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a medium baking sheet.
  • In a large bowl, mix spinach, cottage cheese, Parmesan cheese, Monterey Jack cheese, egg, and onion. Spread half the mixture over each phyllo pastry sheet. Roll pastry sheets jelly-roll fashion, pinch ends to seal, and arrange on the prepared baking sheet.
  • Make a few small slits in the top of each rolled pastry sheet. Bake 40 minutes in the preheated oven, until golden brown.

3 cups baby spinach
⅓ cup unsalted butter
1 tablespoon Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker

Steps:

  • Preheat oven to 375°F. Line 2 baking sheets with parchment paper.
  • Unroll dough and separate into 16 pieces. Cut cheese slices in half.
  • For each crescent, place a half slice of cheese on top of the widest end of the dough, along with some chicken and a few leaves of spinach, and roll up. Set the crescents about 1 inch apart on the prepared baking sheets.
  • In a small bowl, combine the melted butter with the seasoning mix. Brush each crescent with melted butter mixture and bake about 20 minutes or until golden brown and cooked through; serve warm or room temperature.
