"One chilly Easter, my creative clan was looking for an appetizer that would break family traditions and warm hearts...and we came up with these spicy bites filled with shrimp and crabmeat," relates Tarsia Nichols from Prineville, Oregon.

3 tablespoons chopped green onions
3 tablespoons butter, divided
1/2 pound uncooked shrimp, peeled, deveined and quartered
1/4 cup white wine or chicken broth
4 teaspoons cornstarch
1/3 cup 2% milk
1/2 cup grated Parmesan cheese
1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
1 teaspoon sugar
1 teaspoon lemon juice
1/4 teaspoon cayenne pepper
1/8 teaspoon white pepper, optional
22 sheets phyllo dough (14 inches x 9 inches)
1 egg white, beaten

Steps:

  • In a large nonstick skillet, saute onions in 1 tablespoon butter until tender. Add shrimp and wine or broth; cook and stir over medium-high heat for 2 minutes or until shrimp turn pink. Using a slotted spoon, remove shrimp., Combine cornstarch and milk until smooth; stir into the cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat to low. Stir in the Parmesan cheese, crab, sugar, lemon juice, cayenne, white pepper if desired and shrimp. Remove from the heat; cool., On a dry surface, carefully remove two sheets of phyllo dough and place on top of each other (keep remaining dough covered with plastic wrap to prevent drying). Melt remaining butter. Cut sheets widthwise into six strips about 2 in. wide. Lightly brush the tops with butter. , Place a rounded teaspoonful of shrimp mixture near lower right corner of each strip. Fold left corner of dough over filling, forming a triangle. Fold triangle up, then fold over, forming another triangle. Continue folding like a flag for the length of the strip. , Place triangles on ungreased baking sheets. Brush tops with egg white. Bake at 400° for 7-10 minutes or until golden brown. Serve warm.

3 (2.1 ounce) packages pre-baked mini phyllo dough shells

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix the egg, garlic, and feta in a large bowl. Stir in the spinach. Place the phyllo shells on flat baking sheets, and fill with the spinach mixture.
  • Bake in preheated oven until hot, 6 to 8 minutes.

Yum, Yum, Yum this is a flaky, cheesy, delicious spinach pie layered between sheets of buttery fillo. This recipe is from the Fillo Factory Fillo Dough Box.

16 sheets phyllo dough
10 ounces frozen chopped spinach, thawed
12 ounces low fat cottage cheese
8 ounces light cream cheese
4 ounces crumbled feta cheese
1/2 teaspoon dried dill weed
2 scallions (green onions)
1 medium sized onion
2 tablespoons vegetable oil
1/2 cup butter or 1/2 cup margarine
1 large egg
1/2 teaspoon black pepper

Steps:

  • Before starting make sure to read the thawing and handleing tips on the fillo dough package that you purchased.
  • Chop onions and thinkly slice scallions. Then saute in vegetable oil at medium heat until tender and golden.
  • Drain spinach and squeeze dry.
  • Thoroughly mix onions, spinach, cheeses, dill, pepper and egg in a large bowl.
  • Melt butter.
  • Brush bottom and sides of a 13" x 9" x 2" baking pan with butter.
  • Using 8 fillo sheets build a stack in the bottom of the baking pan by brushing the top of the fillo sheets with butter.
  • Spread spinach and cheese mixture evenly over the fillo in the baking pan.
  • Cover mixture using the other 8 sheets of fillo in the same manner used to create the base.
  • Thoroughly butter the top layer, especially the edges.
  • Bake for 45-50 minutes or until golden brown in 375 degree preheated oven.
  • Let stand for 10 minutes for easier serving. Cut into squares or triangles using sharp knife.

1-1/2 cups (6 ounces) crumbled feta cheese

Butter-flavored cooking spray

Steps:

  • In a nonstick skillet coated with cooking spray, cook onion until, tender. Add garlic; cook 1 minute longer. Stir in spinach and oregano; cook over medium-low heat just until spinach is warmed. Drain. Remove from the heat; stir in feta cheese and set aside. , Spray one sheet of phyllo dough with butter-flavored cooking spray. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent drying.) Fold dough in half lengthwise; spray with butter-flavored cooking spray. 1/3 cup olive oil
2 pounds spinach, washed and drained
1 bunch scallions, white and green parts, chopped
1/4 cup finely chopped parsley
Salt and freshly ground black pepper
1/2 pound feta cheese, crumbled
1 to 2 eggs, lightly beaten
1 cup (2 sticks) unsalted butter, melted
1 pound filo pastry sheets

Steps:

  • Heat 1 tablespoon of the oil in a large saute pan, add half of the spinach and saute until spinach wilts, tossing with tongs, about 2 minutes. Remove spinach and squeeze out excess liquid, then chop roughly. Repeat with remaining spinach, using 1 more tablespoon of olive oil. Pour off any liquid from the pan, and add remaining olive oil. Add scallions and saute until soft, about 2 to 3 minutes. Add the spinach to the scallions, along with the parsley, salt and pepper. Cook over low heat for 1 to 2 minutes, then remove from heat to cool. (This part can be done ahead and kept refrigerated).
  • Stir the feta and as much beaten egg to moisten the cooled spinach mixture.
  • Preheat the oven to 350 degrees F. Brush a baking sheet with some of the melted butter.
  • Unroll the filo dough on a flat surface and keep it covered with waxed paper and a damp towel so it doesn't dry out and become brittle. Using a sharp knife, cut the filo into 3 by 11 inch strips, and recover with the towel. Use a pastry brush to brush a strip of filo with melted butter. Place a small spoonful of spinach filling 1 inch from the end of the pastry. Fold the end over the filling to form a triangle, then continue to fold up the strip in triangles, like folding up a flag. Continue with remaining strips of dough, placing filled triangles on the baking sheet and keeping them covered with a towel until all are ready to bake.
  • Brush the triangles lightly with butter, then bake for 20 to 25 minutes, or until golden and crisp. Serve hot. (These may be frozen before baking, layering waxed paper between layers of triangles to keep them from sticking. Bake frozen triangles an extra 10 minutes.)

1 10oz. package frozen chopped spinach* thawed; squeeze out all water.
½ clove garlic minced
1 ½ cups finely crumbed feta cheese or finely shredded Asiago, Fontina, Goat, or even Brie cheese.
2 tbsp. Penzey's Tuscan Sunset seasoning
1 lb. back fin crabmeat
½ cup unsalted butter, melted *plus 2 tsp.
24 sheets of frozen phyllo dough (9x14 inch rectangles) thawed

Steps:

  • Directions: 1. In a skillet with medium heat melt 2 tsp. butter add onions garlic, spinach cook 3-4 minutes. With the back of a wooden spoon squeeze out any excess moisture. Combine mixture with cheese & crabmeat and Tuscan Sunset seasoning. 2. Place one sheet of phyllo dough on a cutting board .Lightly brush with some melted butter. Place another sheet of phyllo dough on top and brush with butter. {Keep remaining phyllo dough covered with plastic wrap until needed. 3. Cut the 2 layered sheets lengthwise into 3 equal strips, each 14 inches long. Spoon 1 well rounded teaspoon of filling about 1 inch from an edge of each strip. To fold into a triangle bring the corner over the filling so that the short edge lines with the side edge. Continue folding the triangle shape along the strip until the end reached.Tap along edge with folk to seal Repeat with remaining phyllo, butter, and filling. 4. Place triangles on a baking sheet brush with butter. Bake in a 375 degree F oven about 15 minutes or until golden brown. Serve warm. 5. Makes about 36 triangles {18 appetizer servings} 6. Make ahead directions: Prepare Phyllo Triangles through step 3. Place the unbaked triangles in a covered freezer container; freeze for up to 2 months. 1/2 cup ricotta cheese
2 tablespoons butter
1 cup chopped fresh parsley leaves
1 (10-ounce) package frozen creamed spinach
1 tablespoon pepper
1 teaspoon ground nutmeg
2 tablespoons ouzo
1 (3.5-ounce) package reduced fat crumbled feta cheese
1/4 cup minced pepperoncini and their juices
1 box phyllo dough, thawed
Extra-virgin olive oil

Steps:

  • Using a coffee filter set over a bowl, drain the ricotta. Discard liquid and set ricotta aside.
  • In a 2-quart saute pan over medium heat, melt butter. Add parsley, creamed spinach, pepper, and nutmeg and cook for 5 minutes. Add ouzo and simmer for another 5 minutes. Remove from heat and stir in ricotta and feta cheeses and the pepperoncini. Let cool and then refrigerate for 20 minutes or more.
  • Preheat oven to 375 degrees F.
  • In the meantime, roll out the phyllo dough and, starting from the long side, cut sheets into 2-inch wide strips. Cover with a paper towel and a slightly dampened kitchen towel. Take 3 strips and brush the top sheet lightly with olive oil. Top with 1 teaspoon of filling, placed 1/2-inch above the bottom corner. Fold into a triangle shape and repeat as though folding into a flag. Repeat. Arrange triangles seam side down on a cookie sheet lined with parchment paper. Lightly brush triangles with olive oil and bake for 20 minutes or until golden brown. Cool slightly and transfer to a serving platter. Freeze leftover phyllo dough for other uses.
