Easy Spinach Stuffed Chicken Roll Ups image

These Spinach Stuffed Chicken Roll Ups are filled with yummy ricotta, sundried tomatoes and fresh mozzarella then topped with marinara sauce.

3 egg whites
1 cup breadcrumbs
6 chicken cutlets
1 tbsp olive oil
Salt & pepper to taste
1/2 cup ricotta cheese
1 cup mozzarella cheese, divided
1 cup finely chopped fresh mushrooms
1/2 cup sundried tomatoes
1 cup finely chopped spinach
1/2 tsp each Salt and pepper
1 cup jarred marinara sauce
1 tbsp fresh chopped basil (optional)

Steps:

  • Preheat oven to 400 F. Grease an 8x11 baking dish with 1 tbsp of olive oil and set aside. Add egg whites to a large bowl and breadcrumbs to another large bowl and set aside.
  • In a large mixing bowl, mix together ricotta, 1/2 cup mozzarella cheese, mushrooms, sundried tomatoes, spinach and 1/2 tsp salt and pepper.
  • Season chicken cutlets with salt and pepper. Lay each cutlet flat and fill with a thin layer of ricotta-spinach stuffing mix. Roll up chicken cutlets, then dip in bowl of egg whites, then bowl of breadcrumbs.
  • Add each chicken roll up to the greased baking dish and bake in the oven for 25 minutes. Remove from oven, top with marinara sauce and cheese and bake another 5-10 min until cheese is melted.
  • Garnish with basil (optional) and serve with your choice of green (I roasted a bunch of broccoli rabe with 1 tbsp of olive oil, a pinch of salt and two cloves of garlic at 400F for 10 min). Enjoy!

5 strips bacon
1 medium yellow onion, sliced
2 cups fresh spinach
5 chicken breasts
2 teaspoons salt
1 teaspoon pepper
10 slices ham
12 slices swiss cheese
3 cups all-purpose flour
8 large eggs, beaten
3 cups panko breadcrumbs
fresh parsley, chopped, for sprinkling
3 tablespoons butter
2 cloves garlic, minced
3 tablespoons flour
2 cups milk
¼ cup dijon mustard
salt, to taste
pepper, to taste
1 cup shredded parmesan cheese

Steps:

  • In a medium cast iron skillet or pan, cook the bacon until almost brown, about 5 minutes.
  • Add the onions and cook, stirring, until caramelized, about 10 minutes.
  • Add the spinach and cook until wilted, about 3 minutes. Remove the pan from the heat.
  • Place a chicken breast on a piece of plastic wrap. Cover with more plastic wrap and pound until thin. Repeat with remaining chicken breasts.
  • Lay out a large piece of plastic wrap and layer the chicken on the plastic so the edges are overlapping slightly.
  • Season with salt and pepper.
  • Layer the ham, Swiss cheese, and bacon-carmelized onion mixture over the chicken.
  • Roll the chicken into a log tightly wrap in plastic, twisting the ends to seal.
  • Refrigerate for 1 hour to set.
  • Add the flour, eggs, and panko to 3 separate baking sheets or other wide, shallow dishes. Roll the chicken in the flour, then in the egg, and finally in the panko. Coat once more in the egg, then panko.
  • Transfer the chicken roll to a greased baking sheet and bake at 375° (190 celsius) for 40 minutes, until golden brown.
  • Make the creamy Dijon sauce: in a small pot over medium heat, melt the butter. Add the garlic and cook until aromatic. Add the flour and cook until starting to brown. Whisk in the milk, then add the mustard and season with salt and pepper. Add the Parmesan and cook until the sauce is thickened.
  • Slice the chicken roll and serve with the sauce and fresh parsley.

1 (10 ounce) package frozen chopped spinach
1 tablespoon water
⅔ cup grated Parmesan cheese
½ cup olive oil
⅓ cup chopped fresh parsley
2 cloves garlic, minced

4 skinless, boneless chicken breasts

  • Place frozen chopped spinach in microwave-safe bowl with water. Cook in microwave until hot, 6 to 7 minutes; cool until easily handled. Squeeze spinach to extract liquid. Combine spinach, Parmesan cheese, olive oil, parsley, garlic, basil, 1/4 teaspoon salt, and pepper in the bowl of a food processor; puree until smooth.

These chicken egg rolls have a bit of tasty twist, prepared with garlic chicken, spinach, gouda cheese, plus a red pepper salsa for dipping!

1 pound skinless, boneless chicken breast, minced very finely
2 cloves garlic, pressed through garlic press
Salt
Black pepper
Peanut or avocado oil, plus more for frying
2 cups fresh, baby spinach leaves, chopped
1 tablespoons chopped, flat-leaf parsley
1 tablespoons chopped cilantro
1/4 cup grated parmesan cheese
Pinch red pepper flakes
1 tablespoon cornstarch
3 tablespoons water
10 egg roll skins (8 x 8 inch size), cut in half on the bias to create 20 triangles
1 1/4 cup grated gouda cheese
1 (14.5 ounce) can organic diced and fire-roasted tomatoes
1/4 cup roughly chopped roasted red peppers (good quality, from a jar)
1 clove garlic
1 tablespoon parsley
1 tablespoon cilantro
Salt (to season the salsa)

Steps:

  • To begin, prepare the red pepper salsa: place all ingredients up to and including the cilantro into the bowl of a food processor, add in a couple of good pinches of salt, process until smooth, then check to see if any additional salt is needed. Keep cold, or serve at room temp.
  • To prepare your filling, add your minced chicken to a medium-size bowl, and to it add the 2 garlic cloves and a couple of good pinches of salt and black pepper, then toss these ingredients together until well coated.
  • Place a large non-stick skillet over medium-high heat, and drizzle in a little of the oil; once the pan is hot, add in the chicken and saute until cooked through, about 2-3 minutes. Using a slotted spoon, scoop the chicken out of the pan, leaving the juices behind, and spoon into a paper towel-lined plate or bowl to cool completely.
  • Once the minced chicken has completely cooled, add it to a large bowl; then, add in the chopped spinach, parsley, cilantro, parmesan and the pinch of red pepper flakes, plus a tiny drizzle of oil, and mix to combine well. Taste to check if any additional salt or pepper is needed.
  • Line a large baking sheet with parchment paper, and set it nearby.
  • Whisk together the cornstarch and the water to create a slurry, as you will use this to seal your egg rolls closed, and set this aside.
  • To roll your egg rolls, take a triangle (half of an egg roll skin) and place it in front of you with the point facing upward; add 2 tablespoons of your chicken filling into the center along the bottom part of your triangle, and shape it into a log shape. Sprinkle about a teaspoon or so of the gouda cheese over that.
  • Next, fold the bottom left corner toward the center, then the right corner, making what looks like a little envelope; next, roll upwards as tightly as you can, and tuck as you go (try not to leave any air gaps or bubbles,); then, dab the top corner with a little cornstarch slurry and seal.
  • Place the egg rolls on the parchment-lined baking sheet, keeping them covered with a piece of plastic wrap so they don't dry out, and repeat until all are rolled.
  • Heat about 3 cups of the oil in a small pot or sauce pan, and bring up to 360°; then, carefully add about 3 egg rolls at a time to the hot oil, and fry for about 4 minutes. Drain on a wire rack to maintain crispness.
  • Serve the chicken egg rolls nice and hot, with the red pepper salsa on the side for dipping.

24 Chicken Tenderloins
8 oz Package of sliced Swiss Cheese - halved lengthwise, can also use Mozzarella or any other white cheese
26 oz or 730 g frozen, chopped Spinach
1/2 cup or 110 g Butter
1/2 lb Sliced Streaky Bacon

Steps:

  • Preheat oven to 350 F / 180 C / Gas 4. Spray a 9 x 13 pan with non stick spray.
  • In a medium sized sauce pan, cook spinach with butter and half cup water on medium heat. Salt and Pepper to taste. Stir frequently until butter is melted and most of the water is cooked out. Set aside to cool. (I use the large packages of spinach to serve on the side - if you don't want to do this, use smaller packages and reduce the butter to half a stick.)
  • Take your tenderloins or whole chicken breast and with a meat mallet and a gallon zip lock bag, or plastic wrap under & on top of the chicken, flatten these until they are about a quarter inch (1 cm). You need to be able to pick these up and roll them, so don't smash them too much .
  • Next layer a piece of the cheese, the length of the flattened chicken.
  • Take a tablespoon or a little more of the spinach, squeeze any liquid out of this and spread on top of the cheese. Too much will squish out and not roll up.
  • Have 2 slices bacon ready, and wrap up the chicken, cheese and spinach - pinwheel style, leaving the ends underneath the roll. If using larger pieces of chicken you may need another piece of bacon.
  • Bake for 20 - 30 minutes, carefully take pan out of the oven and drain off the liquid that's accumulated. Return to the oven or broiler / grill and brown. By draining the liquid, it allows the bacon to brown up nicely. You may need another few minutes in the oven to brown to your liking.

10 ounces frozen spinach, thawed and squeezed dry
One 12-ounce jar roasted red peppers, drained, patted dry and chopped
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan
1/4 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
4 small chicken breasts (about 8 ounces each)
2 tablespoon olive oil
1 shallot, grated or chopped
1/4 cup dry white wine
1 cup chicken broth
1 tablespoon unsalted butter, cold
Chopped fresh parsley, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Mix together the spinach, peppers, breadcrumbs, Parmesan, smoked paprika, 1/4 teaspoon salt and a few grinds of pepper in a small bowl. Set aside.
  • Butterfly the chicken: Holding your knife parallel to the cutting board, slice a breast through the middle, stopping about 1/2-inch short of the other side. Open the breast up like a book and flatten it with your palm. Place between two pieces of plastic wrap and pound with a meat mallet to a little less than 1/2-inch thick. Repeat with the remaining breasts.
  • Divide the spinach mixture into four portions and place a portion in the center of each breast. Roll the breasts tightly around the filling and secure with kitchen twine. Sprinkle all over with salt and pepper.
  • Heat the oil in a large, oven-safe skillet over medium-high heat. Add the roll-ups and cook until golden brown on all sides, about 6 minutes. Transfer the skillet to the oven and cook until an instant-read thermometer inserted into the center of the filling registers 160 degrees F, another 6 to 8 minutes.
  • Transfer the roll-ups to a cutting board and cover loosely with foil. Return the skillet to the stovetop over medium heat (be careful, the handle will be very hot). Add the shallots and cook until softened, stirring, about 1 minute. Add the wine and boil until reduced by half, 1 to 2 minutes. Add the chicken broth; boil until reduced by half, about 3 minutes. Off the heat, whisk in the butter and season with salt and pepper.
  • Cut away the twine and slice the chicken into 1-inch rounds. Serve with the pan sauce and sprinkle with parsley.

  • Stuffing ... In a large saute pan (same you will be cooking the chicken in - I prefer a non-stick pan), add the olive oil and bring to medium heat. Add shallots and garlic clove and cook 1 minute. Then add in the spinach, breaking it up as you add it, and the olives. Heat through for just a couple of minutes to get rid of any extra moisture the spinach may have. Remove from the heat.
