2 cups finely crushed herb-seasoned dry bread stuffing mix
½ cup grated Parmesan cheese
2 teaspoons garlic powder
½ teaspoon ground black pepper
1 teaspoon Italian seasoning
½ cup melted butter
3 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine spinach, stuffing mix, Parmesan cheese, garlic powder, black pepper, Italian seasoning, melted butter and eggs. Shape into walnut-sized balls and place on a baking sheet.
  • Bake in preheated oven for 20 minutes, or until heated through and browned.

1/2 cup unsalted butter
1/2 cup chopped onions
1 clove garlic, minced
2 10-ounce packages frozen chopped spinach, thawed and drained*
1 1/2 cups breadcrumbs
6 eggs
1 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 350F. Line a baking sheet with parchment paper.
  • In a large pan, melt the butter over medium-high heat. Add the onions and cook until soft. Add the garlic and stir. Remove from heat and set aside.
  • In a large bowl, combine the spinach, breadcrumbs, eggs, Parmesan cheese, salt, pepper, and butter mixture. Stir to thoroughly combine.
  • Using a small cookie scoop or spoon, scoop the mixture into your hands and roll into a ball, and place them on the baking sheet.
  • Bake for 15 to 20 minutes, until lightly browned.

Steps:

1 package (10 ounces) frozen chopped spinach
2-1/2 cups herb-seasoned stuffing mix
1 medium onion, finely chopped
3 eggs, beaten
1/4 cup grated Parmesan cheese
6 tablespoons butter, melted
1/2 teaspoon garlic salt
1/4 teaspoon pepper

Steps:

  • Cook spinach according to package directions; drain well, squeezing out excess liquid. Combine spinach with remaining ingredients in a large bowl. Shape into 1-in. balls; place on an ungreased baking sheet. Bake at 350° for 10 minutes or until very lightly browned. Balls can be made ahead and refrigerated overnight before baking.

1 package(s) (10 oz.) frozen chopped spinach, thawed and squeezed dry
2 package(s) (8 oz. each) cream cheese, softened (regular or reduced-fat neufchatel)
1 can(s) (4 oz.) water chestnuts, drained and chopped
1 - (.4 oz) packet dry vegetable soup mix
2 tablespoon(s) mayonnaise or light mayonnaise
1 cup(s) finely shredded cheddar cheese (regular or 2% reduced-fat)
1/2 cup(s) walnuts, chopped

Steps:

  • In a large bowl, mix together the first 6 ingredients, until well blended. Form into a ball, and roll in chopped walnuts. If mixture is too soft, to form a ball, refrigerate for about 30 minutes to set up. Wrap the cheese ball in plastic wrap, and REFRIGERATE OVERNIGHT, to blend flavors, before serving with your favorite crackers and vegetables. Makes 8 servings.

1 large egg, slightly beaten
4 ounces parmesan cheese, shredded
4 ounces mozzarella cheese, shredded
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon dried oregano leaves
1/2 cup sour cream
2 tablespoons extra virgin olive oil
15 ounces ricotta cheese
2 cups all-purpose flour
vegetable oil, for deep frying
3/4 cup Italian style breadcrumbs

Steps:

  • REMOVE frozen spinach from pouch; place in colander. Rinse with warm water until thawed; drain well. Squeeze spinach dry with paper towel.
  • MIX egg, both cheeses, salt, onion powder, garlic powder, oregano, sour cream, oil and ricotta cheese in large bowl until well blended. Add spinach to cheese mixture; mix well. Stir in flour, 1 cup at a time, until well blended.
  • FILL a 10-inch skillet half full with oil; heat over medium heat until candy/deep-fry thermometer reads 350°F (or use deep fryer, add oil to fill line and heat to 350°F).
  • PLACE bread crumbs in small bowl. Shape spinach-cheese mixture into 1-1/2 inch balls (about 40), using about 1-1/2 tablespoons for each; roll in bread crumbs and place on cookie sheet.
  • FRY 6 balls at a time for 4 to 6 minutes, turning as necessary, until golden brown. With slotted spoon, remove balls from skillet; place on paper towels to drain. Cool 2 minutes before serving; serve with warm pasta sauce for dipping.
