Steps:
- Brush the bottom and sides of a 13x9-in. baking dish with 1 tablespoon butter; set aside. In a large bowl, combine the flour, baking powder, seasonings, eggs, milk and remaining butter. Stir in the spinach, cheeses and onion. Spread in prepared pan. , Bake, uncovered, at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean and edges are lightly browned. Cut into squares. Garnish with pimientos if desired.

CHEESY SPINACH SQUARES
My mother used to make these for Thanksgiving and Christmas. They are easy to make and is great for holiday meals. You will love this recipe even if you don't like spinach!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13-inch baking dish.
- Bring a large pot of water to a boil and add spinach. Cover, reduce heat, and cook until heated through, 5 to 6 minutes. Drain well, squeezing out excess moisture with your hands. Set aside to cool.
- Melt butter in a saucepan over medium heat; stir in onion and cook until soft and translucent, 5 to 10 minutes.
- Transfer onions to a double boiler; mix in milk, Cheddar cheese, flour, and ground black pepper; cook and stir until blended and smooth, about 5 minutes. Remove from heat; fold in eggs and spinach. Pour the spinach mixture into baking dish and smooth top.
- Bake, uncovered, in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Cool briefly before cutting into squares.

- Preheat oven to 350 degrees F (175 degrees C).
- Place butter or margarine in a 9x13 inch baking dish and melt butter in oven. Remove when melted, approximately 3 minutes.
- In large mixing bowl, beat eggs well. Mix in flour, milk and baking powder. When the dough is well combined, mix in cheese, spinach, and onion. Spoon mixture into the baking dish with melted butter.
- Bake for 35 minutes. Let cool 45 minutes then cut into bite-size squares.

- Preheat the oven to 350 degrees F. In a 9x13 baking dish, pour the melted butter evenly over the bottom of the baking dish. Set aside.
- In a large bowl, beat the eggs before whisking in the milk. Add in the flour, baking powder, salt, and pepper. Whisk well until the mixture is smooth and uniform.
- Place the broccoli ¾ full in a food processor fitted with an S-blade attachment and gently pulse until the broccoli is broken down into small pieces to make broccoli rice (you may need to do this in batches) *(see first note.)
- Add the broccoli rice, onion, and cheese to the flour mixture. Using a spatula, combine the ingredients well together.
- Carefully transfer the mixture to the baking dish, making sure that the mixture is evenly distributed and spread flat on top.
- Bake for 40-45 minutes until set (firm to the touch) in the middle. Let it cool for 15 minutes before slicing into squares. Can be served warm or room temperature.

- Heat oven to 350 degrees F.
- Butter a 13 x 9-inch baking pan.
- Place the butter in the prepared baking dish, and melt in the oven; remove pan and set aside.
- In a large bowl beat the eggs thoroughly.
- Blend in flour, half and half, cayenne, garlic powder and Parmesan cheese seasoning salt, black pepper and baking powder.
- Add in 2-1/2 cups grated cheddar or mozzarella cheese, green onion and spinach; mix well.
- Spoon the mixture into baking dish on top of the melted butter, and level off.
- Drizzle the top with 2 tablespoons melted butter.
- Sprinkle with grated Parmesan cheese.
- Bake for about 30 minutes or until golden brown and set.
- Remove from oven, and cool for 40-45 minutes.
- If desired you may sprinkle about 1 cup shredded cheddar or mozzarella cheese immediately after baking.
- Cut into squares.
- Note: these squares freeze very well.

I found this in my mother's collection of recipe clippings, from the 1960's. The only change I made was to reduce the salt to one-half teaspoon. You could probably substitute frozen chopped spinach to save time. I think these taste great at room temperature.

- Preheat oven to 350 degrees.
- Melt butter in a 9 X 13 pan. Either melt butter in microwave and then pour into pan, or place baking pan with butter into oven for a minute or two; then remove from oven and tip the pan so that the butter coats evenly on bottom and sides.
- Beat eggs.
- Mix flour into beaten eggs.
- Stir in milk, salt and baking powder.
