SPINACH CHEESE BUNDLES
This is from a new cookbook that I just purchased yesterday called "100 Best 4 Ingredient Recipes". I could not resist this book, simple and few ingredients are my favorite. I have not tried any yet, but could not resist sharing some of these easy recipes. Hope you enjoy!

Steps:
- Preheat oven to 400 degrees.
- Mix spreadable cheese, spinach and pepper in a small bowl.
- Roll out one sheet of pastry dough onto a floured surface, rolling into a 12 inch square.
- Cut pastry into 16 (3 inch) squares.
- Place about 1 teaspoons of cheese mixture in the center of each square.
- Brush edges each square with water.
- Bring edges together up over filling and twist tightly to seal.
- Fan out corners of pastry for a nice look.
- Place bundles about 2 inches apart on a baking sheet.
- Bake approximately 13 minutes or until golden brown.
- Repeat procedure with the remaining sheet of pastry dough and cheese mixture.
- Serve warm with dipping sauces.

SPINACH SALMON BUNDLES
This was cut out of a magazine and made for dinner last week. Recipe submitted by Larissa Farnam in South Carolina. (believe it was taste of home) Super easy and super yummy!!!

Steps:
- Unroll crescent dough and separate into four rectangles; seal perforations.
- Place a salmon fillet in the center of each rectangle; sprinkle with salt and pepper.
- Spoon cheese spread over each; top with spinach. Fold dough over filling and pinch edges to seal.
- Place on an ungreased baking sheet. Bake at 400 degrees for 20-25 minutes or until golden brown. Serve bundles immediately.
CHICKEN PARMESAN BUNDLES
Juicy chicken stuffed with a cream cheese and spinach filling and topped with marinara.

Steps:
- Preheat oven to 375 degrees F.
- In a mixing bowl. Combine softened cream cheese, drained spinach, 1 cup Mozzarella, and Parmesan cheese.
- Season with salt and pepper, to taste.
- Cut each chicken breast in half to make them around 1/4-inch thick.
- Place a few tablespoons of spinach mixture on the widest end of each chicken breast.
- Roll up and secure closed with toothpicks; set aside.
- In a small mixing bowl, whisk eggs; set aside.
- Crush Ritz crackers in a small resealable bag, pour into a small mixing bowl and set aside.
- Dip each chicken bundle in egg until coated, then roll in cracker crumbs and place seam side down in a
- 9 x 13 inch baking dish sprayed with nonstick cooking spray.
- Bake for 30 minutes.
- Remove from oven, carefully remove all toothpicks, and spoon 2 tablespoons of marinara on top of each chicken bundle and top with a sprinkle of the remaining mozzarella cheese.
- Return to the oven and bake for an additional 10 minutes.

SPINACH BUNDLES WITH CREAMY WINE SAUCE RECIPE

- Heat oven to 375°F. In 10-inch skillet, cook sausage over medium-high heat 5 minutes or until thoroughly cooked, stirring frequently; drain. In medium bowl, mix cooked sausage, spinach, 3/4 cup of the cheese and 2 teaspoons of the garlic paste.
- Unroll 1 can of dough; press to 16x9-inch rectangle. With pizza cutter, cut dough into 12 squares. Place 1 generous tablespoon spinach mixture in center of each square. Bring 4 corners together to overlap slightly in the center at top of each bundle. Twist and pinch to seal, leaving small gaps between seams. Transfer bundles to ungreased cookie sheets. Repeat with remaining can of dough and filling.
- Bake 10 to 14 minutes or until golden brown, rotating cookie sheets halfway through bake time. Meanwhile, in 1-quart saucepan, heat whipping cream. Cook over medium heat 5 minutes. Add wine, remaining 1/2 cup of the cheese, remaining 1 teaspoon of the garlic paste and 1/8 teaspoon pepper; stirring constantly with wire whisk until cheese is melted. Remove from heat; cool slightly to thicken.
