12 uncooked lasagna noodles
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cartons (15 ounces each) fat-free ricotta cheese
1 large egg
1 large egg white
1 cup grated Parmesan cheese, divided
1 garlic clove, minced
1 teaspoon dried basil
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg
3 cups shredded part-skim mozzarella cheese
2 cans (15 ounces each) tomato sauce

Steps:

  • Cook noodles according to package directions. Rinse in cold water; drain well., In a large bowl, combine the spinach, ricotta cheese, egg, egg white, 1/4 cup Parmesan cheese, garlic, basil, pepper and nutmeg. Combine mozzarella cheese and remaining Parmesan cheese., In a 13x9-in. baking dish coated with cooking spray, layer three noodles, 3/4 cup tomato sauce, 1 cup spinach mixture and 3/4 cup cheese mixture. Repeat layers three times., Bake, uncovered, at 375° for 45-50 minutes or until bubbly. Let stand for 10-15 minutes before cutting.

Try this lasagne with spinach and cheese for a meat-free family meal. it's freezable so you can make it ahead - or you could buy a white sauce for ease

300g frozen spinach , defrosted and squeezed dry
2 tbsp butter
1 whole nutmeg , for grating
1 garlic clove , crushed
100g fresh white breadcrumbs
50g vegetarian hard cheese , grated, plus a little more for the top
1 egg , lightly beaten
2 tbsp oil
130g vegetarian pesto
6 dried lasagne sheets
basil leaves , to garnish (optional)
50g butter
50g plain flour
500ml milk

Steps:

  • First, make the white sauce. Melt the butter in a saucepan, then add the plain flour. Stir continuously until a paste forms and continue cooking for 2 mins. Add the milk to the roux gradually, stirring as you go, until you get a smooth sauce. Keep cooking for 5-10 mins more, stirring continuously, until the sauce has thickened. Leave to cool.
  • To make the spinach balls, cook the spinach in the butter until it is warmed through, then stir in a grating of nutmeg and the garlic. Fry for a minute, then stir in the breadcrumbs and cheese. Tip into a dish and stir in the egg to form a stiff paste. Wet your hands and roll about 18 spoonfuls of the mixture into balls. Put them on a baking tray and chill for 30 mins.
  • Heat oven to 190C/170C fan/gas 5. Fry the spinach balls in batches in the oil until lightly browned. Spoon some white sauce into the base of a medium baking dish and tip in six spinach balls. Drizzle over 2 tsp pesto, then place half the lasagne sheets on top, overlapping, add more white sauce, six more spinach balls, then a little more pesto. Place the remaining lasagne sheets on top, cover with white sauce, then dot over the last six spinach balls. Drizzle over more pesto and scatter over the remaining cheese. Bake for 30 mins or until the lasagne sheets are cooked through. Scatter over some basil leaves, if you like.

16 ounces ricotta cheese
2 (10-ounce) packages frozen spinach , thawed, drained well, and divided
1 cup grated Parmesan cheese, divided
1 large egg, beaten
1/2 teaspoon garlic powder
1/2 teaspoon salt
32 to 48 ounces spaghetti sauce, or marinara, store-bought or homemade
8 to 10 ounces lasagna noodles, cooked, cooled enough to handle
16 ounces mozzarella cheese, shredded

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F. Lightly grease a 9-by-13-by-2-inch baking dish or lasagna pan .
  • In a medium bowl, combine the ricotta cheese with half of the drained and squeezed spinach, half of the grated Parmesan cheese, the egg, garlic powder, and salt. Mix to blend well.
  • Mix the remaining half of the drained spinach with the marinara sauce .
  • Spread about 1/2 to 1 cup of the marinara-spinach mixture over the bottom of the baking dish, just enough to coat the bottom.
  • Top with a layer of noodles.
  • Top the noodle layer with about 3/4 cup of the marinara; spread over the noodles.
  • With a small spoon, put about one-third of the ricotta mixture over the sauce layer, spacing evenly in small dollops, then sprinkle with about one-quarter of the mozzarella cheese.
  • Repeat, making two more layers of the noodles, sauce, ricotta mixture, and mozzarella.
  • Top with another layer of noodles, the rest of the sauce, shredded mozzarella, and the remaining half of the grated Parmesan cheese.
  • Grease a sheet of foil large enough to fit over the lasagna. Cover the lasagna tightly with the foil, greased side down. If your baking pan is very full, place a foil-lined baking sheet on a lower rack to catch spills.
  • Bake the lasagna for about 45 minutes, or until very hot and you can see it is beginning to bubble.
  • Remove the foil and bake for 20 to 30 minutes longer, until very hot and the cheese has melted.

  • Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; crumble beef drain. Stir in the spaghetti sauce, garlic, basil and oregano. 1 pint part-skim ricotta cheese

2 egg whites, beaten
¼ teaspoon ground black pepper
2 ½ tablespoons chopped fresh parsley
8 lasagna noodles
6 ounces mozzarella cheese, shredded
6 cups tomato sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook the noodles according to package directions. Drain. Saute the onion and garlic in the olive oil, adding water as needed to keep from sticking.
  • Combine the ricotta, tofu, Parmesan cheese, spinach, egg whites, black pepper, parsley, and sauteed onion and garlic. Mix well.

Lay 5 lasagna noodles in bottom of a 9x13 inch baking dish. Spread one third of the cheese/spinach mixture over noodles. Sprinkle 1 cup mozzarella cheese and 1/3 cup Parmesan cheese on top. Spread 1 cup pasta sauce over cheese. Repeat layering 2 times.
  • Cover dish with aluminum foil and bake in a preheated oven for 1 hour. Cool 15 minutes before serving.

1/2 lb mushrooms, sliced
2 medium onions, chopped
1 can(s) black olives, drained, chopped (8 oz)
1/4 c red wine
2 pkg frozen, chopped spinach (10 oz)
3 clove garlic, minced
2 c ricotta cheese (16 oz)
2 large eggs, lightly beaten
1 pkg mozzarella cheese, shredded (8 oz)
1 tsp oregano, dried
1 tsp basil, dried
1/2 tsp sea salt
1/2 tsp ground black pepper
1/4 c extra virgin olive oil
2 c fresh, diced roma tomatoes
1 can(s) tomato paste w/ 1 can water, (8 oz)
1 lb lasagna noodles, cooked or uncooked
3 oz grated parmesan cheese

Steps:

  • 1. Sauté onions and garlic in olive oil until transparent.
  • 2. Puree tomatoes and add to onion and garlic.
  • 3. Add mushroom and black olives, oregano, basil, wine, black pepper, salt and simmer for 20 minutes. Set aside.
  • 4. Combine spinach, egg , black pepper, and ricotta cheese, process briefly until the mixture is uniform and set aside.
  • 5. Note: when creating each layer, make sure you use just enough of each to barely cover the previous layer. Too much on any layer can make the lasagna come out too "juicy".
  • 6. Grease a 9" X 13" baking pan with olive oil then pour about 1/3 of the tomato mixture on the bottom.
  • 7. Cover the tomato mixture with a layer of lasagna noodles (cooked or uncooked).
  • 8. Spread 1/3 of the spinach/cheese mixture over the noodles.
  • 9. Repeat with tomato mixture, noodles and cheese ending with a layer of noodles (cooked or uncooked) on top.
  • 10. Pour the remainder of the tomato mixture on top of the noodles.
  • 11. Sprinkle with the parmesan cheese.
  • 12. NOTE: If uncooked noodles are used, cover tightly with foil and bake at 375° for 1 hour. Remove pan from oven and let sit covered for an additional 15 minutes. Uncover lasagna, lay foil loosely on top of pan and let sit for about 10 minutes before serving.
  • 13. NOTE: If cooked noodles are used, prepare noodles according to package before assembling ingredients, arrange cooked noodles according to directions for creating layers, then bake uncovered at 375° for 1 hour. Remove pan from oven, lay foil loosely on top of pan and let sit for about 15 minutes before serving.
