1 refrigerated pie crust
1 cup fresh baby spinach, washed and chopped
5 Eggland's Best eggs, large
3 slices turkey bacon, cooked and crumbled
1/4 cup goat cheese, crumbled
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup skim milk
1/4 cup fat-free half & half

Steps:

  • Prepare pie crust according to package instructions. We recommend using a 9" deep-dish pie pan. When finished pre-cooking according to package instructions, remove from oven and cool slightly. While crust is cooking, prepare ingredients: cook turkey bacon until crispy; drain, cool and chop into small pieces; thoroughly wash baby spinach leaves and pat completely dry; chop and mix with bacon pieces; crumble goat cheese and set aside. Mix eggs, salt, pepper, milk, and half & half together in a small bowl; add spinach, bacon, and goat cheese. Blend well. Add egg mixture to pie crust and return to oven for 35-40 minutes or until eggs are completely set. Allow to cool for 5 minutes before slicing & serving.

1/3 turkey meatloaf, crumbled (about 3 cups), reserved from Greek-Style Turkey Meatloaf
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3/4 cup ricotta
1 ounce feta, crumbled (1/4 cup)
1/2 teaspoon grated lemon zest, plus 2 teaspoons lemon juice
Coarse salt and ground pepper
Red-pepper flakes (optional)
12 sheets frozen phyllo dough, thawed
4 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 375 degrees. In a large bowl, mix together meatloaf, spinach, ricotta, feta, and lemon zest and juice. Season with salt, pepper, and red-pepper flakes, if using.
  • Lay 1 sheet phyllo on a work surface and lightly brush with oil (keeping remaining sheets covered with a damp towel). Top with 2 sheets phyllo, brushing each with oil. Cut in half crosswise and stack. Place 1 scant cup meat mixture in center; flatten slightly. Fold long sides inward to cover filling, followed by top and bottom. Lightly brush all over with oil. Repeat to make 3 more pies. Bake on a parchment-lined rimmed baking sheet until golden, 25 minutes. Let cool 5 minutes.

I altered a recipe found in a woman's magazine and came up with this. It's light and good with a crisp salad and a side of corn.

Number Of Ingredients 13

2 tablespoons butter or 2 tablespoons olive oil
1 medium chopped onion
1 lb ground turkey
2 (16 ounce) packages of chopped spinach, thawed and squeezed dry
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon nutmeg
1/4 teaspoon red pepper flakes
1/2 cup sliced black olives
12 ounces feta cheese (I use fat-free)
4 eggs, slightly beaten
1 tablespoon dried oregano
8 sheets phyllo dough or 1 package pastry dough

Steps:

  • Heat oven to 375 degrees.
  • Grease 13x9x2 inch baking pan.
  • Set aside.
  • Melt butter in large skillet over high heat.
  • Add onion.
  • Reduce heat to medium and cook until almost tender.
  • Add turkey and cook until no longer pink.
  • Add spinach, salt, pepper, nutmeg, pepper flakes and olives.
  • Cook 5 minutes.
  • Transfer to large bowl.
  • Stir in cheese, eggs, and oregano.
  • Place 1/2 dough in baking pan.
  • Spread spinach mixture on top.
  • Top with the other 1/2 dough.
  • Bake in 375 degree oven until browned.
  • About 35 minutes.
