- In a large saucepan, heat oil over medium heat. Add garlic; cook and stir 1 minute. Stir in tomatoes, broth and Italian seasoning; bring to a boil. Add tortellini; bring to a gentle boil. Cook, uncovered, just until tortellini are tender, 7-9 minutes., Stir in spinach. Sprinkle servings with cheese and pepper.

SPINACH TORTELLINI SOUP
This vegetarian spinach tortellini soup has become wildly popular with Umami Girl fans everywhere. It's quick, easy, comforting, and delicious.

- Heat the olive oil in a large pot over medium-high heat. Add onion, carrots, celery and salt and stir to coat with oil. Cook for about 5 minutes, stirring occasionally, until beginning to soften. If you happen to get distracted and the veggies brown a little bit, it'll add some nice depth of flavor.
- Stir in stock, bring to a boil, then cover and reduce heat to simmer until veggies are tender. Remove lid and add spinach and tortellini. Cook according to tortellini package instructions (usually just simmering for a couple of minutes). Off the heat, stir in parsley and black pepper to taste.
- Ladle into bowls and serve with cheese to pass at the table.

This is a quick and easy 'what's in the pantry' soup. I used homemade chicken stock that I had in the freezer and leftover store-bought rotisserie chicken, but the tortellini soup is great with whatever you have on hand.

- Melt butter over medium-high heat in a soup pot. Add onion and 1/2 teaspoon salt; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic; cook until fragrant, about 1 minute. Stir in spinach. Cook until thawed and tender, 10 to 12 minutes.
- Pour chicken stock, cooked chicken, tomatoes, water, bay leaves, oregano, parsley, red pepper flakes, salt, and pepper into the pot with the spinach. Bring to a boil; reduce heat and let simmer until reduced, about 40 minutes.
- While soup is simmering, fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until tortellini float to the top and filling is hot, about 10 minutes. Drain.
- Stir cooked tortellini into soup. Serve.

- In a 6 quart or bigger soup pot add in the olive oil & turn it to medium heat. (linked one like mine, that is my favorite here) Then add in the diced onion & minced garlic. Let that simmer & brown from 3-4 minutes. Then add in the sliced chicken sausages. Cook in onion & garlic for a few minutes, then add 1 tsp cumin, 1 tsp basil & 1 tsp salt on top of the chicken sausages. Cook for another 2-3 minutes, mixing the seasoning around the sausage.
- Then add in tomato sauce, roasted tomatoes, chicken broth, 1/2 basil, 1 tsp salt, 1/2 tsp garlic powder, 1/2 tsp onion powder & 1 tsp of the Chile Con Carne seasoning. Stir in seasoning, with the tomato sauces, broth & chicken sausages. Then bring to a boil & cover, then reduce to simmer. Let simmer for at least 1 hour, 2-3 if you can.
- Then add in tortellini & bring to a boil, then reduce to simmer again for 5 minutes, to allow tortellini to cook. Then reduce to low heat. Add in half & half and 1 cup spinach broken apart & the can of drained beans. Next, put 1 tbsp arrowroot in small glass dish & add 2 tbsp warm water, then mix until throughly combined. Then add in arrow root to the soup, turn up the heat to medium (not boiling) & figure 8 the arrow root into the soup until desired thickness (about 1 minute or 2). Then let simmer on low until ready to serve!
