You can find wonton wrappers in most supermarkets. Sometimes they're in the produce section in the cooler with the tofu. Use either round or square wrappers for these; make them ahead if it's more convenient and freeze.

Number Of Ingredients 18

1 large bunch spinach (1 to 1 1/4 pounds), stemmed and washed well in 2 changes of water, or 9 ounces baby spinach (1 1/2 6-ounce bags)
6 ounces firm tofu, cut in 1/4-inch dice (about 1 cup diced tofu)
1 to 2 tablespoons soy sauce (to taste)
2 teaspoons dry sherry
1/2 teaspoon sugar
Salt to taste
2 teaspoons sesame oil
1 tablespoon grapeseed oil, canola oil or peanut oil
2 teaspoons minced garlic (2 large cloves)
2 teaspoons minced fresh ginger
1/2 cup minced scallions (white and light green parts)
1 tablespoon sesame seeds
2 tablespoons minced cilantro
1 package wonton wrappers (freeze what you don't use)
1 egg, beaten, or 2 tablespoons water mixed with 1 teaspoon cornstarch
2 quarts chicken stock or vegetable stock
Salt to taste
Chopped cilantro and sprigs for garnish

Steps:

  • Steam the spinach above 1 inch boiling water until it wilts, 1 to 2 minutes. Rinse with cold water and squeeze dry, taking up the spinach by the handful. Chop fine and set aside.
  • Blot the tofu on paper towels. Combine the soy sauce, sherry, sugar and salt to taste in a small bowl and stir until the sugar and salt have dissolved, then stir in the sesame oil. Place on the stove near your wok or skillet. Place the garlic, ginger and scallions together in a container near your wok or skillet.
  • Heat a 14-inch flat-bottomed wok or a 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the grapeseed, canola or peanut oil by adding it to the sides of the pan and swirling the pan, then add the tofu and spread out in a single layer. Let it sear for 1 minute, then stir-fry for 1 to 2 minutes, until it begins to color. Add the garlic, ginger and scallions and stir-fry for 30 seconds. Add the spinach and sesame seeds and stir-fry for 30 seconds. Add the soy sauce mixture and stir-fry for another minute, breaking up the tofu a little bit more with your spatula, then stir in the cilantro and remove from the heat.
  • To fill the wontons, lay out about 6 wonton skins on your work surface and place a level teaspoon of the tofu/spinach mixture in the center of each one. Brush the perimeter of the wonton skin with a very small amount of beaten egg or with the cornstarch mixture. Fold the wonton in half if using round skins, or diagonally corner to corner if they are square, and pinch the edges together all the way around to seal. Now put a little dab of egg or cornstarch mixture on the two opposite corners of the triangle or the two ends of the half-circle, fold the package in and pinch the tips together. Place on a parchment-covered baking sheet. Continue filling the wrappers until all of the spinach and tofu mixture is used up. If not cooking right away place the baking sheet in the freezer.
  • Bring the stock to a simmer in a soup pot or a wide saucepan. Season to taste with salt or soy sauce. Add 6 to 8 wontons per serving and simmer 5 to 7 minutes, flipping them over once to ensure even cooking. Spoon wontons into soup bowls, ladle in broth and garnish with cilantro. Serve hot.

2 cups cabbage (finely shredded)
1 shallot (finely diced)
1 medium carrot (peeled and grated)
8 ounces baby bella mushrooms (finely chopped)
1 clove garlic (finely grated)
1 ¼ teaspoons fresh ginger root (peeled and finely grated (approx. 1-inch piece))
sea salt and fresh cracked black pepper (to taste)
¼ teaspoon sesame oil
2 tablespoons low-sodium soy sauce
2 tablespoons Sweet and Sour Duck Sauce
12 ounces wonton wrappers
water (for sealing the wrappers)

Steps:

  • Combine the ginger, garlic, shallots, mushrooms, cabbage, carrot and scallions in a large bowl. Toss to mix; season with salt and pepper, to taste.
  • Heat the sesame oil in a wok or in a large saute pan if you don't have a wok.When the oil is hot, toss the filling mixture around over medium heat. Add the soy sauce and continue to heat until the filling has begun to soften.Remove from the heat. Add the Duck Sauce and mix well. Spread the vegetable mixture out on a large platter and allow it to cool completely; about 30 minutes.
  • Place a 1 teaspoon of filling in the center of a wonton wrapper. Wipe each outer edge of the wrapper with a dab of water.Fold the wrapper diagonally over the filling, pressing out any air, to make a triangle. Press the edges firmly together to seal.With the point of the triangle facing you, use your index finger to push the folded side of the triangle down, bringing the two points together over the top. Dip your finger into the water once more, to moisten the two points. Bring the two points together and pinch over the filling to seal. Set on a parchment-lined baking sheet and repeat with remaining wrappers and filling.
  • Now that the veggie wontons are made, you can use them right away or freeze them.
  • The wontons freeze remarkably well. Simply lay the wontons on a tray and place them in the freezer for 20 to 30 minutes, to set.Transfer to a freezer bag, and use within three months.

24 wontons or dumplings (frozen package), (found in Asian or larger mainstream grocery stores)
8 cups broth/stock Note 1 ((chicken broth or vegetable broth) )
1/2 pound medium raw, peeled, deveined shrimp (optional)
1 head of broccoli, cut up into smaller florets
4 cups other vegetables cut up as needed
2 cups cooked chicken, cut into bite size pieces (optional)
4 cups fresh baby spinach ((loose frozen is fine too - add when boiling the wontons instead of at the end))
light soy sauce, sesame oil, fresh basil or cilantro, lime juice, chili flakes and/or fresh grated ginger
Garnish: bean sprouts, 1-2 green onions, chopped

Steps:

  • BOIL WONTONS: In a large pot of boiling water, cook frozen wontons or dumplings (as well as spinach if you're using frozen chopped spinach) as per package directions. Drain in a strainer and set aside.
  • MAKE SOUP: Heat broth in the same pot to medium-high heat until broth comes to boil. Add broccoli and other vegetables. Lower heat to Medium heat and cook for 3 minutes until tender. Add fresh baby spinach and shrimp if using and cook for 3 minutes until shrimp just become opaque.. Add chicken (if using), and cooked prepared wontons.
  • SEASON AND SERVE: Add additional herbs and seasonings to taste such as: splash of soy sauce, a 1/2 teaspoon of sesame oil; fresh chopped basil or cilantro, a squeeze of lime, 1-2 tsp grated fresh ginger, a few drops of hot sauce or some chili pepper flakes. Garnish with bean sprouts, a drizzle of chili oil and chopped green onion if desired. Ladle into serving bowls and serve immediately right from the pot.

15 Minute Wonton Soup with flavorful lemon ginger broth and a handful of vibrant greens. A fast, easy weeknight dinner!

1 leek, white parts, thinly sliced (or sub 1 shallot or ½ cup onion)
4 slices ginger (the size of a quarter, leave peels on- or 1 tablespoon ginger paste)
1 tablespoon olive oil
4 cups chicken broth ( or veggie broth)
10-14 wontons ( chicken, shrimp or vegetarian)
salt and lemon juice to taste
a couple handful of chopped greens- baby spinach, arugula, bok choy, chopped kale
garnish options: scallions, cilantro, sesame seeds, chili flakes or sriracha

Steps:

  • In a medium pot, saute the leeks and ginger in oil, over medium heat, until fragrant, about 2 minutes.
  • Add the broth, cover, and bring to a boil.
  • Add the wontons and simmer according to directions on the package ( 3-5 minutes- depending on size) They normally float when cooked through.
  • Taste the broth and add salt and a squeeze of lemon if you like. I like mine quite lemony, but season to your own taste.
  • Drop in the greens, cooking until wilted. Spinach will take 45 seconds, kale will take longer.
  • Divide among two bowls and sprinkle with any of the garnishes.

25 wonton wrappers
1 large scallion
2 tablespoons sesame seed oil
8 tablespoons soy sauce
15 ounces firm tofu
1 teaspoon sesame seeds
1/2 teaspoon ginger powder
5 ounces sliced Baby Spinach

Steps:

  • Heat a frying pan and add the sesame seed oil.
  • Once hot, add the sliced scallions.
  • Crumble the block of tofu over the frying mixture.
  • Pour soysauce over it and mix.
  • Let that simmer for 5 minutes while you slice the spinach.
  • Remove from heat and stir in the spinach.
  • Let this cool before continuing to the next step.
  • You want the filling to be cool before assembling the wontons.
  • Fry in 1/2 inch of vegetable oil.
  • 2 minutes on one side, one minute on the other OR until crispy and golden brown.

This easy Egg Drop Soup is loaded with vegetables and fluffy egg ribbons making it a healthy, low cal and delicious version of the popular Chinese restaurant soup.

4 cups (950 ml) chicken stock or broth, Note 1 (Substitute veggie broth if you like)
2 carrots, peeled, finely diced
1 teaspoon fresh grated ginger ((or more to taste))
3 cups other vegetables, finely diced, Note 2
2 tablespoon cornstarch ((MIx with 2 tbsp water or broth to make a slurry))
3 eggs, lightly beaten (I use a measuring cup with a spout for easy dribbling)
2 large handfuls fresh baby spinach, roughly chopped (about 3 cups (90g))
2 large green onions, finely chopped
salt and pepper to taste
1/2 teaspoon -1 tsp sesame oil
Optional: 1 tablespoon low sodium soy sauce, 1 tsp sriracha, 1/2 tsp rice vinegar

Steps:

  • BOIL BROTH WITH CARROTS: Bring broth to boil in a medium-large pot. Add carrots and ginger (and soy sauce if using). Lower heat to medium and simmer for about 2 minutes.
  • ADD OTHER VEGETABLES: Cook for 2-3 minutes just until tender.
  • THICKEN BROTH; Add cornstarch slurry to the simmering broth. Stir 30 seconds. Broth will thicken slightly. You can make broth thicker if you prefer by adding more slurry e.g. 3 tbsp cornstarch and 3 tbsp. water.
  • ADD EGGS: Stir simmering broth in a circular motion and slowly pour in beaten eggs in a steady stream while continuing to stir. Eggs will become feathery. Turn off heat. Note 3
  • FINISH SOUP: Stir in chopped spinach to wilt (1 minute). Add chopped green onions. Add sesame oil, salt and pepper to taste (and sriracha and rice vinegar if using). Serve immediately.

  • Squeeze as much water out of the spinach and discard the water (or water your plants!). Place the spinach and cabbage in a large bowl. Sprinkle with salt and mix well. Let sit for 10 minutes. In large handfuls (or a cheesecloth), squeeze the water out of the cabbage/spinach and discard the water.
