SPINACH TOMATO BURGERS
Every Friday night is burger night at our house. The tomatoes add fresh flavor and the cool spinach dip brings it all together. We often skip the buns and serve these over a bed of grilled cabbage. -Courtney Stultz, Weir, Kansas

- Combine first six ingredients. Add beef; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties., Place burgers on an oiled grill rack or in a greased 15x10x1-in. pan. Grill, covered, over medium heat or broil 4-5 in. from heat until a thermometer reads 160°, 4-5 minutes per side. Grill buns, cut side down, over medium heat until toasted. Serve burgers on buns; top with spinach dip, tomatoes and lettuce.

GRILLED SPINACH FETA BURGERS

- In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 6-8 minutes on each side. Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve burgers on buns. If desired, add toppings.Freeze option: Place patties on a baking sheet lined with plastic wrap; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 160°.

SPINACH AND FETA TURKEY BURGERS
These are a big hit in the summertime when everyone is tired of the same old hamburgers and hot dogs. Serve with or without buns and your favorite condiments. I like to serve these with lettuce, tomato, and Tzatziki sauce (you can find recipes for that on this site as well).

This is a side dish that my husband throws together when he's in the mood for something light and quick. It can be served as a side dish with pasta or with some pan-fried eggs anytime.

Steps:
- Heat olive oil in a large skillet over medium heat. Cook and stir baby spinach in hot oil until very tender, about 5 minutes. Season spinach evenly with salt, pepper, garlic powder, and onion powder, turning with tongs while sprinkling. Add tomatoes; cook and stir until tomatoes begin to soften, about 90 seconds. Sprinkle with feta cheese off heat and toss to serve.

SPINACH TOMATO FETA STUFFED CHICKEN BREAST
Steps:
- Preheat oven to 425 degrees F.
- Use a sharp knife to slice a pocket into the sides of each chicken breast. Make sure you don't cut all the way through, just enough to create a place for the spinach mixture to go.
- Season both sides of each chicken breast with 3/4 teaspoon salt, paprika and garlic powder. Set aside.
- In a medium bowl combine the sun dried tomatoes, spinach, feta cheese, shallots, garlic, basil, panko, oregano, parmesan cheese, salt and 1/2 tablespoon olive oil.
- Mix well and set aside.
- Divide spinach mixture between the chicken breasts and stuff into each, about 3/4 cup each. If needed, you can use toothpicks to close chicken breast.
- Heat a large, oven-safe or cast iron skillet over medium heat.
- Add the remaining oil and once hot, sear the chicken breasts on each side for about 2 to 3 minutes, until browned.
- Transfer skillet to oven and finish cooking 12 to 15 minutes, until chicken reaches 165 degrees F.
- Remove from oven and tent with foil for 5 minutes before eating.
- Remove toothpicks and eat right away.

- Rehydrate Sun-Dried TomatoesOption 1: Place sun-dried tomatoes in a bowl. Heat water in kettle or pan to boiling and pour water over the sun-dried tomatoes to cover. Leave sun-dried tomatoes sit for about 15 minutes or until softened. Option 2: Alternatively, you can place your sun-dried tomatoes in a microwave safe dish and cover with water. Microwave on high for about 2-3 minutes. Cover with plastic wrap and leave sit for 2 to 3 minutes or until the sun-dried tomatoes are soft and plump. Do NOT throw out the water the sun-dried tomatoes are soaking in! We are going to use 1/3 cup to deglaze the pan. Reserve and set aside. If you forget, no worries, just increase the white wine to 2/3 cup instead of 1/3 cup in recipe. Cool and chop rehydrated sun-dried tomatoes and set aside.
- In your iron skillet (oven proof pan or Dutch oven) add your olive oil, onions and garlic and fry until aromatic and softened and starting to caramelize. Add salt, pepper, paprika and Italian seasoning to your chicken on both sides and add to the hot skillet. Sear the chicken gently on each sides just to make golden brown. (about 2 minutes)
- Add chopped rehydrated sun-dried tomatoes to the chicken. Then, add white wine and residual soaking water from your sun-dried tomatoes to deglaze the pan. (If you forgot to reserve the liquid from your sun-dried tomatoes, don't sweat it. You can either add another 1/3 cup white wine or water to the pan so it equals 2/3 cup of liquid.) Sprinkle your chicken with crumbled feta cheese and bake for about 10-12 minutes just until the chicken is no longer pink and the juices run clear and the feta cheese is nice and melty.
