FRESH SPINACH GRATIN

Fresh spinach and Swiss cheese combine in this gratin that is perfect for the holidays. No more hand cramping from squeezing frozen spinach. With the exception of the breadcrumb topping, this can be done a day ahead to save time on the big day. You will just need to allow an additional 30 minutes of cook time.

1 tablespoon olive oil
1 small onion, diced
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon dried thyme
2 tablespoons all-purpose flour
1 ½ pounds baby spinach, roughly chopped
1 cup half-and-half
1 ½ cups shredded Swiss cheese, divided
¾ cup dry bread crumbs
3 tablespoons butter, melted

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat oil in a large skillet over medium heat and cook onion until soft and translucent, about 5 minutes. Season with salt, pepper, and thyme. Sprinkle flour over onion mixture and cook until a thick paste forms, about 1 minute.
  • Place spinach in a large soup pot and cover. Heat on low until spinach begins to wilt, about 4 minutes. Turn heat off and add half-and-half, 1 cup Swiss cheese, and the onion mixture. Stir to combine and transfer to a 9-inch gratin dish.
  • Combine breadcrumbs and remaining 1/2 cup cheese in a bowl. Pour melted butter over the top and stir to combine. Evenly spread breadcrumb mixture over the spinach.
  • Bake in the preheated oven uncovered for 20 minutes. Let cool for 5 minutes before serving.

1/4 cup water
3 tablespoons butter
1/4 cup chopped onion
1/4 cup all-purpose flour
2 cups whole milk
1 cup shredded cheddar cheese

1 cup chopped fresh spinach
1 tablespoon diced pimientos
4 bacon strips, cooked and crumbled

Steps:

  • In a 2-qt. microwave-safe dish, combine potatoes and water. Cover and microwave on high for 5-6 minutes or until potatoes are tender, stirring twice. Drain; set potatoes aside. , In a large microwave-safe bowl, heat butter on high until melted, about 15 seconds. Add onion. Microwave, uncovered, for 30-60 seconds or until tender, stirring once. , Whisk in flour until blended. Gradually stir in the milk. Cook, uncovered, on high for 1-1/2 minutes; stir. 2 pounds spinach (rinsed, drained, and chopped)
1 cup whole milk
1/2 cup heavy cream
3 tablespoons butter (melted)

Steps:

  • Preheat the oven to 375 F and butter a gratin dish.
  • Sauté the onion in the olive oil for 5 minutes in a medium saucepan set over medium heat. Sprinkle the flour over the onions and continue sautéing the mixture for 30 seconds. Add the salt, pepper, dried thyme, and spinach to the pan and stir until the ingredients are combined. Cover the pan with a lid and turn the heat to low. Allow the spinach to wilt for 3 minutes.
  • Stir the milk and heavy cream into the spinach mixture and turn it out into the buttered gratin dish. Then stir together the melted butter, bread crumbs, and 1/4 cup Parmesan cheese, and sprinkle the breadcrumbs over the gratin.

¼ cup butter
1 onion, sliced

2 lb potatoes (peeled and cut into very thin slices)
1 small onion (thinly sliced)
1 bag fresh spinach
1 Cup cream
1 1/2 Cup Gouda cheese (grated)
2 clove Garlic (crushed)
1 Tablespoon olive oil
1 Teaspoon oregano
1 Teaspoon rosemary
Small bunch of fresh chopped parsley
Sea salt
Black pepper
Butter (to grease baking dish)

Steps:

  • Preheat oven to 350 degrees F. Grease a deep sided 8 inch round baking dish.
  • Place the spinach in a colander set over a bowl. Pour over boiling water to wilt the spinach. Squeeze out as much excess water as you can and set aside.
  • In a medium skillet set over medium heat, add the olive oil and sliced onions. Give a good stir and cook for about 10 minutes until softened and lightly golden. Set aside.
  • In a medium saucepan set over high heat, add the cream and bring to a boil and add the garlic, oregano, rosemary, fresh parsley (reserving a small amount for the top),salt and pepper. Stir and remove from heat.
  • Add the potatoes to the cream mixture and coat well. Spoon about half of the potatoes into the baking dish. Top with the onions, spinach and bout 2/3 of the cheese. Top with remaining potatoes, cheese and parsley.
  • Cover and bake for about 1 1/2 hours. Uncover and return to oven for 15 more minutes. Remove from oven and allow to set for about 10 minutes before serving.

3 tablespoons butter
¼ cup chopped green onion
¼ cup all-purpose flour

1 (10 ounce) package frozen chopped spinach, thawed and drained

  • Preheat oven to 375 degrees.
  • Rub a 13x9 baking dish with butter.
  • Layer half of the potato slices in dish, overlapping slightly.
  • Spread the spinach on top of the potato slices.

  • Layer the rest of the potato slices on top.

SUVIR SARAN'S PALAK KI TIKKI (SPINACH AND POTATO PATTIES)



Suvir Saran's Palak Ki Tikki (Spinach and Potato Patties) image

These are adapted from Suvir Saran's potato patties called palak ki tikki, from his lovely cookbook "Masala Farm." They are a striking green because of all of the raw spinach that gets packed into them. The big, spicy burgers are incredibly easy to put together and to cook. Suvir serves them with chutney, either green or tamarind, but we both agree that they're delicious with plain old ketchup. I made a quick raita to serve with the burgers by stirring sweet pickle relish into plain yogurt.

Number Of Ingredients 11

2 pounds red boiling potatoes, scrubbed and quartered
4 firmly packed cups finely chopped, stemmed, washed spinach (about 3/4 pound leaves)
1 fresh, hot green chili, finely chopped
1/4 cup chopped fresh cilantro
1 teaspoon garam masala
1/2 teaspoon cayenne pepper
1/2 teaspoon ground black pepper
Salt to taste (Suvir Saran uses about 1 1/4 teaspoons)
2 tablespoons fresh lemon juice
1 cup panko or chickpea flour (you will not use all of it)
2 tablespoons grape seed oil

Steps:

  • Steam potatoes over 1 inch of boiling water until tender, about 15 minutes. Transfer to a wide bowl and mash with a fork. Add remaining ingredients except panko or chickpea flour and oil and mix well with your hands, squeezing the ingredients together. There will still be small chunks of potato and potato skin in the mixture. Taste and adjust seasoning.
  • Scoop out about 1/2 cup of the spinach-potato mixture, roll it with the palm of your hand to make a ball, and coat with panko or chickpea flour. Then press down to flatten to a 3 to 3 1/2-inch cake. Continue with remaining mixture. Chill for at least 1 hour.
  • When you're ready to cook, place a rack over a sheet pan. Heat 2 tablespoons of oil in a large frying pan over high heat. Swirl pan to coat with the hot oil. Lower heat to medium. Place 4 to 5 patties in the pan (do not crowd), and cook until well browned on one side, about 4 minutes. Turn and brown for about 4 more minutes. Remove to the rack. Heat remaining oil in pan and cook remaining patties. Keep patties in a low oven until ready to serve. Serve with a salad and your choice of toppings, such as the usual (ketchup, mustard, relish), or yogurt raita, garlic yogurt, or chutney.

  • Peel the onion and cut it in half or quarters to grate it. A food processor with the grater attachment is easiest. Alternately, you can slice the onion super thinly. Add the grated onion to a strainer over a bowl and set aside.
  • In a large sauce pot, combine the half and half with the garlic, thyme, nutmeg and allspice. Bring to a boil and then immediately reduce to a low simmer. Simmer until the the mixture has reduced by about 1/4, about 25 minutes. Remove from the stove, strain, and add the salt and pepper. Let it cool until it's warm, or to room temperature.
  • Peel the potatoes and slice them as thinly as possible, adding them to the half and half mixture as you go. Make sure the slices aren't stuck together and that all of them become well coated with the mixture. (I use the slicer attachment on my food processor for this.) Let the potato slices soak for about 30 minutes.
  • Brush a bit of the melted butter on the bottom and sides of an approximately 9 X 13 X 2-inch baking dish.
