POTATO AND SPINACH CASSEROLE
A friend served this casserole at a dinner party, and I had to ask for the recipe. I've made it for friends and relatives on a number of holidays and other special occasions since. The recipe is perfect for parties, because it can be prepared early in the day and baked later on when the guests arrive.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 2 quart casserole dish.
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and mash.
- In a large bowl combine mashed potatoes, spinach, sour cream, butter, green onions, salt and pepper. Spoon into prepared dish.
- Bake for 15 minutes. Top with cheese and bake 5 minutes longer.

- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain. , In a large bowl, mash potatoes. MASHED POTATO SPINACH CASSEROLE
This is one of my old stand-by recipes from the More with Less Cookbook. It's a good one for those nights when I don't really feel like cooking. I suppose this is meant to be a side dish, but I always up the amounts a bit and serve it as a meatless main dish. The original recipe calls for the addition of dill seed and chives, but I never use them for our family.

- Peel, cook and mash potatoes.
- Add sour cream, salt, pepper (and butter if desired).
- Mix in enough milk to bring it to your favorite mashed potato consistency.
- Add spinach (and seasonings if desired).
- Place in casserole dish and top with grated cheddar cheese. (sometimes I also mix a bit of the cheese in with the potatoes before topping).
- Bake in 350 oven for 20-30 minutes.
- We like to serve this with corn, which usually ends up mixed in with all the rest.

- Preheat the oven to 400 degrees. Grease a small 3-cup casserole dish or ovenproof skillet with nonstick spray.
- Heat 1/2 tablespoon olive oil in a nonstick skillet over medium high heat. Add the onions and saute for 5 minutes or until soft and fragrant. Add the turkey, chili powder, and onion powder. Brown the meat until fully cooked and crumbled. Transfer to a bowl and set aside.
- Add the remaining 1 tablespoon olive oil to the pan and reduce the heat to medium low. Add the garlic and sage. Saute for 2-3 minutes. Add the spinach and stir until wilted, about 2 minutes. Transfer to a bowl and set aside.

- Preheat oven to 400 degrees.
- Heat oil in a stovetop-to-ovenproof casserole dish.
- Add onions, potatoes, garlic, and herbs and saute for 5 minutes, stirring until the vegetables are well coated with oil and the potatoes are beginning to turn golden.
- Place casserole in preheated oven and bake for 25 minutes, then remove, stirring in the spinach and eggs.
- Sprinkle the top with cheese and return the dish to the oven.
- Bake 10 minutes, or until the eggs are set.
- Serve hot.
