Steps:
- Mix the spinach, garlic, onion, oregano, salt, pepper, feta and turkey together in a bowl until just combined.
- Shape into 4 patties, 1-inch thick.
- Heat a heavy skillet or cast iron skillet on pan to medium-high.
- Add the patties and cook for 4-5 minutes on each side. Do not keep flipping them over.
- Toast the hamburger buns lightly.
- Mix the yogurt, lemon, salt and pepper in a bowl and add to the buns.
- Top with lettuce, onion and the turkey patty.

- In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 6-8 minutes on each side. Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve burgers on buns. If desired, add toppings.Freeze option: Place patties on a baking sheet lined with plastic wrap; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 160°.

- Place the frozen spinach in a jug of boiling water and allow it to defrost. Drain and squeeze out as much water as possible from it.
- In a large bowl add the turkey mince, feta cheese, egg, spring onion, garlic, salt and pepper. Add in the spinach and mix well with your hand or a spoon.
- Spread the flour out onto a plate. Divide the burger mixture into 5 patties and coat each one with the flour.
- Add a little oil to a frying pan and cook the burgers for 12-14 minutes, flipping half way through.
- Serve immediately or allow to cool and keep in the fridge for up to 48 hours.

- Roughly Chop the spinach. Heat a large skillet over medium, then add 1 Tbsp olive oil. Add the chopped spinach and a pinch of salt. Sauté the spinach until it has fully wilted, then remove it from the heat.
