Spinach Feta Turkey Burgers with fresh spinach, salty crumbled feta cheese.

1 cup fresh spinach (chopped)
1 clove garlic (minced)
1/2 yellow onion (grated)
1 teaspoon dried oregano
1/2 teaspoon Kosher salt
1/4 teaspoon ground black pepper
1/4 pound feta crumbles
1 pound ground turkey
4 hamburger buns
green leaf lettuce
1 tomato (sliced)
1/2 cup Greek yogurt
1/2 lemon (juiced)
1/4 teaspoon kosher salt
2 pinches ground black pepper

Steps:

  • Mix the spinach, garlic, onion, oregano, salt, pepper, feta and turkey together in a bowl until just combined.
  • Shape into 4 patties, 1-inch thick.
  • Heat a heavy skillet or cast iron skillet on pan to medium-high.
  • Add the patties and cook for 4-5 minutes on each side. Do not keep flipping them over.
  • Toast the hamburger buns lightly.
  • Mix the yogurt, lemon, salt and pepper in a bowl and add to the buns.
  • Top with lettuce, onion and the turkey patty.

1 tablespoon olive oil
2 shallots, chopped
2-1/2 cups fresh baby spinach, coarsely chopped
3 garlic cloves, minced
2/3 cup crumbled feta cheese
3/4 teaspoon Greek seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)
8 whole wheat hamburger buns, split
Optional toppings: refrigerated tzatziki sauce, fresh baby spinach and tomato slices

Steps:

  • In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 6-8 minutes on each side. Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve burgers on buns. 150g / 5 oz frozen spinach
500g / 1 lb turkey mince
50g / 2 oz feta cheese
1 medium egg
1 spring onion, chopped
1 clove of garlic, crushed
salt and pepper to taste
2 tbsp flour (can use gluten free)
To serve: burger buns, lettuce, tomato and red onion

Steps:

  • Place the frozen spinach in a jug of boiling water and allow it to defrost. Drain and squeeze out as much water as possible from it.
  • In a large bowl add the turkey mince, feta cheese, egg, spring onion, garlic, salt and pepper. Add in the spinach and mix well with your hand or a spoon.
  • Spread the flour out onto a plate. Divide the burger mixture into 5 patties and coat each one with the flour.
  • Add a little oil to a frying pan and cook the burgers for 12-14 minutes, flipping half way through.
  • Serve immediately or allow to cool and keep in the fridge for up to 48 hours.
