GREEK SPINACH BAKE

- Preheat oven to 350°. In a large bowl, combine the cottage cheese, spinach and feta cheese. Stir in the flour, pepper and salt. Add eggs and mix well. , Spoon into a greased 9-in. square baking dish. Bake, uncovered, until a thermometer reads 160°, about 1 hour.

WARM FARRO SPINACH FETA SALAD OR SIDE DISH
Excellent salad or side dish made from farro, spinach and feta. It is easy to make and tastes really good.

Steps:
- Mix olive oil, garlic, lemon juice, salt, and pepper together in a bowl and set aside.
- Combine chicken broth and farro together in a large sauce pan or wok; bring to a boil. Reduce heat to medium and simmer until farro is tender and the broth is absorbed, 20 to 25 minutes.
- Stir olive oil mixture into farro until farro is coated. Add spinach to farro mixture; cook and stir until spinach is heated, 2 to 3 minutes. Sprinkle feta cheese over farro and spinach and stir until cheese is incorporated.
- Season with more salt and pepper if desired.

- In a large deep pan or pot heat 2 teaspoons of olive oil and sauté the spring onions for 2-3 minutes, add the spinach and continue heating until spinach wilts and shrinks. Remove from pan, strain and let it cool.
- In a large bowl mix the feta cheese, 2 tablespoons parmesan, 1 tablespoon bread crumbs, oregano, dill, 1 tablespoon olive oil, a pinch of salt and freshly ground pepper. Add the spinach and mix making sure it has spread in the whole mixture.
