SPANAKOPITA (GREEK SPINACH PIE)

This is an authentic, really rich pie stuffed with spinach, onions, cheeses and herbs that are all enfolded by crispy, flaky phyllo dough.

3 tablespoons olive oil
1 large onion, chopped
1 bunch green onions, chopped
2 cloves garlic, minced
2 pounds spinach, rinsed and chopped
½ cup chopped fresh parsley
2 eggs, lightly beaten
½ cup ricotta cheese
1 cup crumbled feta cheese
8 sheets phyllo dough
¼ cup olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
  • Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
  • In a medium bowl, mix together eggs, ricotta, and feta. Stir in spinach mixture. Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. Lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling.
  • Bake in preheated oven for 30 to 40 minutes, until golden brown. Cut into squares and serve while hot.

These Spanakopita Triangles are Greek pastry hand pies filled with spinach and feta cheese.

5 oz. baby spinach (roughly chopped)
3 oz. cottage cheese (small curd)
8 oz. feta
3 eggs (beaten)

Steps:

  • Microwave 5 oz spinach until wilted, about 1 minute, or put in a skillet, cover with lid and allow to wilt over medium-low heat.
  • Take away about 4 tablespoons of beaten egg into a separate bowl. Add the remaining egg to 8 ounces feta, 3 ounces cottage cheese (or homemade farmer's cheese) and mix together until everything is well combined. Now add the spinach and mix again.
  • Take about half of your phyllo sheets and cut them into 3 long strips (about 3 inches wide each). Roll up the rest of the phyllo sheets and cover with a towel, to prevent them from drying.
  • Drizzle couple teaspoons of butter all over the sheet. Add 1 tablespoon of feta-spinach filling to the end of each strip that's closest to you. Now grab two layers of sheets and start folding like pictured, into a triangle. Try to move fast or the phyllo dough will dry out.
  • Place the triangles on a baking sheet and brush each triangle with either butter or the beaten egg. If you brush it with the beaten egg, they will have a sheen to it.
  • Try to bake them as soon as you form them, or the wet filling will soften the phyllo and they will break while baking (see last picture in the post). Bake at 350F, for about 20-25 minutes or until golden in color.
  • Eat warm or cold with refreshing Cucumber and Yogurt dip (recipe for Tzatziki dip here). Re-crisp leftovers by placing back in the oven for about 5-7 minutes, at 350°F.

I got this recipe in my email yesterday and made it immediately. We had it for dinner, but it would be wonderful for brunch. Although the original recipe did not call for reduced fat dairy products, using them makes this a nice and healthy dish. I used nonfat cottage cheese and full fat feta. The recipe is from Crisco. Cook time does not include standing time - the recipe suggests allowing it to stand 15 minutes before cutting, but mine was plenty firm after just five.

3 -4 green onions, chopped

Steps:

  • Preheat oven to 350°F Spray an 8x8 glass baking dish with the cooking spray.
  • In a medium bowl, stir together everything except the phyllo.
  • Lay one sheet of phyllo in the baking dish, allowing the edges to hang over the sides of the dish.
  • Spray with cooking spray.
  • Repeat with 4 more sheets of phyllo, spraying and alternating the direction of each sheet.
  • Spoon spinach mixture on top of the prepared phyllo in the pan.
  • Spray and layer remaining 5 sheets just the same as you did before.
  • Roll edges of dough to form a rim.
  • Spray the top.
  • Bake for 35-45 minutes or until golden brown.
  • Let stand 5-15 minutes before cutting and serving.

1 onion, finely chopped
2 cloves garlic, crushed
butter
1 large bag spinach, stalks trimmed and chopped
75g feta, crumbled
½ preserved lemon, finely chopped
4 sheets filo pastry

Steps:

  • Heat the oven to 180C/fan 160C/gas 4. Fry the onion and garlic in a little butter until very soft but not browned, add the spinach and stir until it wilts and any liquid dries off. Tip the mixture into a bowl and add the feta and lemon.
  • Melt some more butter, brush a sheet of filo and cut it lengthways into 3 strips. Put 2 tbsp of the mix at the top of each strip and fold each over diagonally to make a triangle, then continue to fold over down the length of the pastry. Repeat with the remaining filling and pastry. Arrange the parcels on a buttered baking sheet and brush the tops with more butter. Bake for 18-20 minutes, or until they're golden brown and cooked through.

Easy and super tasty chicken filo parcels.

1 Tbsp olive oil
1 onion, sliced
6 cloves garlic, crushed
1 bag of baby spinach (130g)
500g cooked chicken breast, chopped
150g feta
2 eggs
12 sheets of filo pastry
2 Tbsp sesame seeds

Steps:

  • Preheat oven to 190.C fanbake.
  • Heat a large frypan over medium heat, add olive oil and sauté sliced onion for 5 minutes until softened. Stir in crushed garlic then add baby spinach.
  • Keep stirring until the spinach has wilted then add the chicken.
  • Turn off the heat and crumble in the feta and then crack in the eggs.
  • Season well with salt and pepper then stir everything to combine.
  • Set aside to cool slightly before wrapping in the filo.
  • Place one sheet of filo onto a board and spray with oil. Layer over another sheet of filo and spray again.
  • Place 1/2 cup of chicken mixture in a line 5cm from one end, fold in the sides and then roll up the filo, spraying oil in between each fold. Roll up the remaining filo parcels. Spray the top with oil and sprinkle over sesame seeds.
  • Bake for 30 minutes until golden and cooked through.
  • Serve hot with a fresh garden salad.

4 sheets phyllo dough
2 tablespoons melted butter
1 bunch fresh spinach
1 tablespoon vegetable oil
½ cup fresh sliced mushrooms
¼ cup tomato sauce
3 ounces feta cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Thoroughly clean the spinach. Remove stems, and chop. Steam until wilted. Stir fry mushrooms in oil over high heat until browned.
  • Cut all 4 pieces of phyllo in half. Brush each sheet with melted butter, and put in two piles. In the center of each stack, place first 1/2 of the spinach followed by 1/2 of the feta, mushrooms, and tomato sauce. Bring the sides of phyllo dough around, and to the top of the bundles. Place on baking sheet.
  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes. Let stand 5 minutes before serving.

1 (250 g) package frozen spinach
250 g cottage cheese
100 g feta cheese, crumbled
1/2 cup toasted pine nuts
1 egg
2 garlic cloves, crushed
1 pinch nutmeg
salt and pepper
16 sheets phyllo pastry
50 g melted butter

Steps:

  • Squeeze spinach dry.
  • Combine spinach, cottage and feta cheeses, pine nuts, egg, garlic and nutmeg in a bowl. Mix well.
  • Season with salt and pepper.
  • To make each 'parcel', place a sheet of phyllo on a flat surface.
  • Brush with melted butter, Top with another sheet of phyllo, brush again with melted butter, then fold in half to make a rectangle.
  • Spoon spinach mixture along one narrow end of the pastry.
  • Fold edges in and roll up to encase filling.
  • Place parcels on an oven tray brushed with butter.
  • Brush parcels with remaining butter.
  • Bake at 190°C for 12-15 minutes until golden.

SPINACH AND LEEKS FILO PIE

14 oz/ 400 g filo pastry sheets*
4 tbs olive oil
14 oz/ 400g spinach (fresh or frozen)
3 large leeks (chopped)
7 oz/ 200g feta cheese (crumbled*)
100 g yellow cheese - Edam (Gouda, Emmental, Cheddar)
4 eggs
2 tbs butter (melted)
Salt
Pepper
Rosemary (optional)

Steps:

  • In a frying pan sauté the leeks in 2 tbs olive oil for about 10 minutes, until softened. Season with salt, pepper and rosemary. Transfer the leeks to a large bowl.
  • Use the same pan (without washing it) to cook the spinach in the remaining olive oil until soft. Add some salt. Transfer to the bowl with the leeks.
  • Grate the yellow cheese and add it to the spinach and leeks. Crumble the white cheese and add it to the same mixture. Add the eggs and stir the ingredients in the bowl until everything is mixed well.
  • Preheat oven to 390 degrees F/ 200 degrees C. Grease a 10 inch/ 26 cm spring form pan and cover it with a sheet of parchment paper.
  • Lay 1 filo sheet on the prepared baking pan so that part of the sheet is hanging outside (see photos). Brush it lightly with butter. Lay another sheet next to the first one so that they are overlapping. Repeat the process until the bottom of the pan is covered with filo sheets. Spread the spinach and leeks mixture inside the pan. Fold the excess filo pastry inwards to enclose the filling. Brush the top with the remaining butter.
  • Bake for 30-40 minutes or until golden brown.

8 oz mozzarella cheese
2 oz cream cheese
1 cup almond flour
1/2 cup coconut flour
1 egg
1 tsp baking powder
1/2 tsp salt
12 oz frozen spinach (thawed and drained)
4 oz crumbled feta cheese
1 egg white
1 tsp minced onion
1/2 tsp garlic powder
pinch salt
1 egg yolk (to brush on the outside of the pastries)

Steps:

  • Preheat the oven to 375.
  • Put the mozzarella and cream cheese in a microwave-safe bowl. Microwave one minute. Stir. Microwave 30 seconds. Stir. At this point, all the cheese should be melted. Microwave 30 more seconds until uniform and gloopy (it should look like cheese fondue at this point). Add the rest of the dough ingredients and the cheese to a food processor. Mix using the dough blade until a uniform color. If you do not have a food processor you can mix in a medium bowl with a wooden spoon but you may need to dump it onto wax paper and knead it by hand to thoroughly incorporate the ingredients.
  • Stir together the ingredients for the filling. Set aside the egg yolk to brush on the pastries.
  • Roll the dough out between two pieces of parchment paper into a 6 x 18 inch rectangle. Cut in half lengthwise with a pizza cutter. Put the filling down the center of one piece. Top with the other piece of dough. Use the pizza cutter to cut into 7 or 8 pieces. Put them on a baking sheet lined with parchment.
  • Gently press the edges together on two opposing sides of each pastry. Use a kitchen shears or small knife to make a few slits in the top dough. Brush with the egg yolk. Bake for 30 minutes until golden brown.

  • In a skillet melt butter and cook onion for about 3 minutes or until softened. Remove skillet from heat and stir in spinach, feta cheese and egg. Season with salt and pepper. Preheat oven to 375 degrees. Lay out one layer of phyllo dough and brush with butter. Top with another layer of dough and repeat with butter and a third layer of dough. With a sharp knife cut rectangle into 3 evenly sized pieces. Place a heaping tablespoon of the spinach mixture in lower left corner of one of the pieces and fold up as you would a flag--folding the lower corner up to form a triangle and continuing to fold up in the shape of a triangle. Place triangles on a baking sheet, at this point they can be frozen and then stored in an airtight container. Bake for 15 minutes or until golden brown and puffed.
