SPINACH AND FETA MEATLOAF RECIPE

- Preheat oven to 350° F. Mix all ingredients, except spinach and cheese, in a large bowl. Stem and cook the spinach (or thaw, if frozen) and squeeze dry, and chop finely. Cover a rimmed baking sheet with a piece of waxed paper. On the waxed paper, shape the meat mixture into a neat rectangle about 9 inches by 13 inches, keeping the thickness as even as possible. Spread the chopped spinach over the meat. crumble the cheese and distribute over the spinach.. Starting from a short side, use the waxed paper to help roll up the meat, jelly-roll fashion, into a log. With moistened fingers, press and pat the ends shut and seal up any cracks that develop. Slide the waxed paper away from the meat log and bake in preheated oven about 45 minutes, or to 160° at the center. Remove from oven and let stand a few minutes to firm up, then cut into thick slices and serve. Serves 2, makes leftovers!

- In a large bowl, stir the spices and crushed crackers into the ground beef.
- Stir the eggs into the milk, stir into meat mixture.
- Mix in the feta cheese and press into a 9x13 pan.
- Cover loosely with foil.
- Bake for 30 minutes,at 350, drain.
- Resume baking without foil for 15 minutes or until done.

- Preheat oven to 350 degrees Fahrenheit.
- Mix lamb and hamburger together.
- Combine with eggs, milk, and oats. Set aside.
- Saute onion in oil over moderate-low or low heat for 20 to 30 minutes until translucent and golden. Estimate the cooking time for the onions and approximately 3 to 4 minutes before the end of the cooking, add the garlic.
- Combine meat mixture with onions, garlic, parsley, salt, cumin, and pepper.
- In a 9" X 13" baking dish, shape 2/3 of meat mixture into a hollow shell.
- Combine spinach, egg, and feta cheese from filling ingredient list. Pack this filling into the hollow cavity of the meat loaf.
- Sprinkle with chopped olives.
- Cover filling with remaining meat mixture.
- Combine ketchup, cinnamon, parmesan cheese and Tabasco sauce if using for the topping; spread over meatloaf.
- Bake for 70 to 80 minutes.

- Reserve 2 Tbsp of ketchup for later. In a mixing bowl combine the ground beef, eggs, bread crumbs, ketchup, & soup mix. MIx well. On a piece of wax paper pat out the meat into a 6x10 rectangle. Place the feta cheese on top of the meat and spread it out. Layer the spinach on top of the cheese and add the sun dried tomatoes. Fold the meat over, making sure to tuck in the ends so that the ends do not show the stuffing. Place in crock pot for no more than 4 hours or the oven for about 50 minutes on 350 degrees.

- In a medium bowl mixed ground turkey, 1 egg, parmesan cheese, dressing and salt and pepper. Mix continuously until it feels well combined. Take 2/3 of the mixture and form 2 loaves in the bottom of a casserole dish or in a muffin pan for single serving meatloaves, makes 10 (pictured).
- In a small bowl combine chopped spinach, feta cheese and egg white. Mix until well combine. Create a well in the loaves and divide the spinach mixture into each. Top each loaf with the remaining meat mixture and "seal" the sides.
- Bake meatloaves for 25 minutes for muffin pan size and 30-35 minutes for two loaves. Verify the internal temperature reads 165F. Allow to cool slightly and serve.
