SPINACH AND EXOTIC FRUIT SALAD
This is another recipe from the "Creme de Colorado" cookbook, it is the best Spinach salad I've ever had! Very easy to prepare, in fact, it can all be prepared ahead and just tossed together when ready to eat. This is also the best Poppyseed dressing I've ever eaten. I fixed this last night and hardly ate anything BUT the salad, it's that good! Recipe makes 8 side salad servings, but if you want it as a main dish type salad I would figure on half the servings.

Steps:
- Combine all dressing ingredients except oil in blender and blend until well combined. Slowly drizzle in oil until dressing is thickened and set aside.
- Mix spinach and fruits when ready to serve and add dressing and toss.
- NOTE: If dressing is prepared ahead and refrigerated, be sure to take it out before serving as it will be too thick to toss, let sit out at room temperature so it can reliquify.

SPICY MANDARIN SPINACH SALAD
Between the sweetness of the mandarin oranges and the cayenne-spiced pecans, flavor explodes in each bite of this salad. Top it off with Chinese five spice mustard dressing to really make your taste buds happy.

Steps:
- Combine reserved liquid from mandarin oranges, canola oil, olive oil, mustard, cloves, and Chinese five-spice powder in a jar with a tight-fitting lid; seal jar and shake vigorously until the dressing emulsifies.
- Melt butter in a saucepan over medium heat. Stir pecans and sugar into the butter; let simmer until hot, 1 to 2 minutes. Season the pecans with rosemary and cayenne pepper; continue cooking another 1 to 2 minutes. Remove from heat and drain pecans on a plate lined with paper towels.
- Toss spinach leaves and green onion together in a large mixing bowl; top with mandarin oranges and pecans. Drizzle dressing over the salad to serve.

- Dressing: Process first 7 ingredients in blender for 5 seconds With motor running, slowly add vinegar through hole in lid. Process until thick and smooth. Stir in second amount of poppy seeds. Makes 1 cup Put remaining ingredients into a large bowl. Drizzle with dressing. Toss. Makes 8 cups. (I put dressing on only what I am eating at the time)
