SPINACH AND CHEESE EMPANADAS

Spinach and Cheese Empanadas image

Provided by Food Network

Categories     appetizer

Time 4h2m

Yield 10 to 12 empanadas

Number Of Ingredients 13

1 (8-ounce) package cream cheese, room temperature
6 tablespoons butter, room temperature
1 1/4 cups all-purpose flour
1/4 teaspoon salt
5 slices bacon, cooked until crisp, drained and crumbled (drippings reserved)
1 1/2 pounds fresh spinach leaves, washed
1/3 cup minced onion
4 cloves garlic, minced
1 cup cottage cheese, farmer's cheese, or ricotta cheese
Salt
Freshly ground black pepper
Pinch ground nutmeg
1 egg, lightly beaten

Steps:

  • In the bowl of a standing electric mixer using the paddle attachment, beat the cream cheese and butter on high speed until very smooth, pausing to scrape down the sides of the bowl, as necessary. Reduce the mixer speed to low, add the flour, little by little, and the salt, and process until just combined. Turn the dough out onto a slightly floured surface and knead lightly. Form the dough into a disk, cover with plastic wrap and refrigerate for at least 3 hours and up to overnight.
  • Heat 1 teaspoon of the reserved bacon drippings in a medium nonstick skillet and, when hot, add the spinach. Cook, stirring frequently, until the spinach is wilted and has released its liquid, 2 to 3 minutes. Transfer the spinach to a colander to drain. When the spinach has cooled enough to handle, squeeze to release any excess water, then transfer to a cutting board and finely chop. Set aside.
  • Add 2 more teaspoons of the bacon drippings to the same skillet, then add the onion and garlic and cook, stirring, until soft but not browned, 2 to 3 minutes. Add the reserved spinach, crumbled bacon, cottage cheese, salt and pepper to taste and nutmeg and mix thoroughly. Transfer to a mixing bowl and allow to cool thoroughly. Taste and adjust seasoning, if necessary.
  • Preheat the oven to 450 degrees F and lightly grease a baking sheet.
  • Remove the dough from the refrigerator and, working on a lightly floured work surface, roll the dough to a thickness of about 1/8-inch thick. Using a small bowl or saucer as a guide, cut the dough into as many 5-inch circles as possible. Gather the scraps of dough together and knead lightly to reform the dough into a disk. Roll out as before and again cut as many rounds as you can. You should be able to get 10 to 12 rounds. Divide the spinach filling evenly among the dough circles. Using your fingers, lightly moisten the edges with some of the beaten egg, then fold 1 side over so that the edges meet, and press to seal. Crimp the edges using the tines of a fork and transfer to the prepared baking sheet. Repeat until all of the empanadas are assembled. Brush the tops of each empanada with some of the beaten egg and bake uncovered until golden, 12 to 15 minutes.
  • Serve either warm or at room temperature.

SPINACH AND ARTICHOKE PASTA RECIPE

Spinach and Artichoke Pasta Recipe image

This recipe has all of the great familiar flavors of spinach and artichoke dip in the comfort of a bowl of pasta. A 30 minute meal!

Provided by Natasha Kravchuk

Categories     Easy

Time 30m

Number Of Ingredients 9

6 Tbsp unsalted butter (divided)
10 oz fresh spinach (*see note on substitutions for using frozen)
4 oz cream cheese (cut into pieces (reduced fat is ok))
1 cup 8 oz sour cream ("light" sour cream is ok)
1 cup shredded parmesan cheese
2 cans (15 oz each quartered artichoke hearts, well drained)
4 oz can diced jalapeños (drained (optional))
1 large or 2 small garlic cloves pressed
16 oz penne pasta with 1 cup reserved pasta cooking liquid

Steps:

  • Cook pasta in a large pot of salted water to desired doneness (I added 1/2 Tbsp salt for a soup pot half filled with water. Drain pasta and reserve about 1 cup of the pasta water (DONT FORGET).
  • In a large pot, melt 2 Tbsp butter over medium heat. Once hot, add spinach and stir until slightly wilted. The spinach wilts fast (about 1 minute) and I might have overdone it because I was snapping the picture rather than removing it right away. Notice how much it shrinks - wild eh?! Transfer wilted spinach to a colander and let it drain while preparing the rest of the recipe.
  • Add 4 Tbsp butter to the same now empty pot along with 4 oz cream cheese cut into pieces, 1 cup sour cream and 1 cup parmesan and stir until everything melts together and starts to bubble.
  • Stir in drained artichokes and cook an additional 1-2 min then add drained spinach, pressed garlic and jalapeños (if using). Cook until hot then toss in the cooked, drained pasta. Stir in reserved pasta water if desired (I added at least 1/2 cup of the pasta cooking liquid - this makes the sauce a little lighter and creamier and helps to keep the pasta moist when it's reheated).

SPINACH AND ARTICHOKE FOOTBALL EMPANADAS

Spinach and Artichoke Football Empanadas image

Provided by Jeff Mauro, host of Sandwich King

Time 1h15m

Yield 20 empanadas

Number Of Ingredients 12

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup mayonnaise
2 garlic cloves, minced
1 cup shredded Gruyere
1 cup shredded mozzarella
1/2 cup shredded Parmesan
10 ounces frozen chopped spinach, thawed and squeezed dry
One 14-ounce can artichoke hearts, chopped
Kosher salt and freshly ground black pepper
Two 14-ounce packages empanada discs, thawed
1 large egg beaten with 1 tablespoon water

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Whisk together the cream cheese, sour cream and mayonnaise in a large bowl until well combined. Using a large spoon, stir in the garlic, cheeses, spinach and artichoke hearts. Season to taste and set aside.
  • Place one empanada disc on a clean dry work surface, keeping the remaining dough covered with plastic wrap or a kitchen towel. Using a 4-inch football-shaped cookie cutter, punch out 2 footballs per dough disc. Set aside the excess dough; you will need this to create laces for the top of the football. Spread 1 1/2 to 2 heaping tablespoons cheese filling on one of the football cutouts, leaving a 1/4-inch border all the way around the edge. Place the other football cutout on top of the filling, stretching if necessary. Press down on the edges using a fork to fuse the 2 pieces together and make a decorative border around the empanadas.
  • Use the excess dough to create 1 longer and 3 shorter strips. Put the longer strip running down the length of the football, then the 3 shorter strips across the longer one. Repeat with the remaining filling and dough discs. Place the finished footballs on the prepared baking sheet and brush with the egg wash. Bake until the empanadas are golden brown, 25 to 30 minutes.

  • Preheat oven to 400 degrees F. Line baking sheet with parchment paper or spray with non-stick baking spray.
  • Mix together: (I use hand or stand mixer) cream cheese, sour cream, mayonnaise, spinach, artichoke hearts, Parmesan, mozzarella, Tabasco, garlic, green onion, salt and pepper.
  • Cut 3 1/2" rounds of pie crust with a biscuit, cookie cutter or glass with same diameter. I was able to cut 8 rounds from each pie crust. (You can re-roll the crust leftovers to make some more.)
  • Spoon about 2 teaspoons of filling in the center of each round, fold over and crimp the edges with a fork. Poke the top with a fork to help release steam while baking. Place on prepared baking sheet. You will have a cup or so of dip left over. I freeze this in a small baking dish to bake and enjoy later.
