THE BEST CREAMED SPINACH RECIPE
This 5-star rated recipe for my favorite steakhouse style, extra creamy, Creamed Spinach recipe is so easy only 20 minutes to make. It is a tried and true family favorite and I guarantee you will love it!

Steps:
- Cook spinach in microwave according to package directions. Remove excess water (squeeze carefully using cheese cloth, a tea towel, or a colander) and set aside.
- In a large skillet over medium high heat, melt butter. Add onion and sauté until translucent.
- Add garlic and cook for 30 seconds. Add cream cheese and cook, stirring, until melted.
- Add heavy cream and cook for 2 minutes. Add mozzarella cheese, parmesan cheese, salt and pepper. Stir till combined.
- Fold in spinach into cream sauce and cook for an additional minute to reheat spinach.
- Serve immediately or store in an airtight container in the fridge for up to a week. The leftovers reheat great and you can also freeze it!

- Heat 25g butter in a saucepan, then add 1 finely chopped small onion and cook for 5 mins until softened.
- Stir in 2 tbsp plain flour and cook for 2 mins, then slowly start to whisk in 200ml full-fat milk. When it has all been incorporated, gently cook for 5 mins until the sauce has thickened.
- Meanwhile, place two 200g bags spinach in a large colander. Pour over a kettle full of boiling water until the leaves have wilted (you may have to do this twice).
- Place the spinach in a clean dishcloth, squeeze out any excess liquid, then roughly chop.
- Stir into the sauce with 100ml single cream, gently heat, then finely grate over some fresh nutmeg and season well.

- Cook the bacon until crisp and chop. I do a whole pound in the oven and only use 1/3 for the recipe.
- Grease a pie plate or 8x8 glass dish. Preheat oven to 350 degrees F.
- Thaw the spinach and squeeze dry. Slice the onion very thinly into half rounds or mince. Grate the cheese.
- Put all of the ingredients into a large bowl and mix with a hand mixer until totally combined. Pour into the prepared pan and spread with a rubber spatula. Place into the middle of the oven and cook for 40 minutes.
- Serve warm. Refrigerate up to 1 week or freeze up to 3 months.
- Serves 6 at 4 net carbs per person.

SAUTEED SPINACH AND MUSHROOMS

- Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
- Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.
