SPIKED SWEET TEA

Steps:
- Steep 8 black tea bags in 1 cup boiling water, 6 minutes; discard the tea bags. stir in 1 1/2 cups raw sugar and the zest of 1 lemon (in strips). let cool; strain into a pitcher. add 3/4 cup lemon juice, 2 cups southern comfort, 4 cups ice cubes and 1 sliced lemon. stir to partially melt the ice. pour into glasses.
SPIKED PEACH TEA
Steps:
- Stir together the tea, Peach Nectar and bourbon in a pitcher filled with ice. Pour into iced tea glasses filled with ice and garnish with a lemon slice and mint sprig.
- Combine the peaches, 2 cups water, lemon juice and sugar (if using) in a blender and blend until smooth. Strain the peach nectar through a fine-mesh strainer. Store in an airtight container in the refrigerator for up to 2 days.
(SPIKED) ICED PEACH GREEN TEA
Steps:
- Brew tea bags by steeping in 12 ounces hot water for up to 5 minutes. Remove and discard tea bags and chill completely.
- Puree peaches and lemon juice. If you desire a smoother consistency to the puree, strain through a fine mesh strainer into a bowl, discarding solids. Set aside.
- Pour chilled tea, peach puree and gin into a cocktail shaker, stirring to combine.
- To serve, fill glasses with ice, top with iced tea mixture and top with a float of sparkling water and a dash of bitters. Garnish with peach slices and lemon wheels.

SPIKED GREEN TEA
Steps:
- Bring 4 cups water to a boil a medium saucepan; boil for 1 minute. Add 10 of the mint sprigs, the tea bags and the ginger; stir. Turn off the heat and let steep for 20 to 25 minutes. Discard the mint, tea bags and ginger. Stir in the honey until dissolved.
- Add 4 cups crushed ice to a pitcher. Pour in the green tea and the lime juice; stir to melt the ice. Add the sake and stir to combine.
- Pour the green tea mixture into 4 glasses filled with ice. Garnish with the lime slices and the remaining mint sprigs.
SPIKED LEMONY ICED TEA

- Cut a few thin rounds of lemon and reserve for garnish. Zest 2 tablespoons of zest from the remaining lemons, then juice the lemons (you'll need 4 tablespoons of juice; reserve any additional juice for another use).
- Make the ice cubes: Stir the lemon zest, 2 tablespoons of the lemon juice, 2 tablespoons of the sugar and the hot water in a heatproof liquid measuring cup. Pour the liquid into a standard ice cube tray and freeze.
- Make the cocktail: In a mixer, shake together the tea, whiskey, 2 tablespoons lemon juice and remaining 2 tablespoons sugar. Shake and set aside for the sugar to melt.
- Serve: Arrange a few ice cubes in 2 glasses. Add a couple of ice cubes to the mixer and shake. Pour half of the cocktail mix into each. If you like, run the edge of the glasses with the lemon slices. Garnish the glass with the slices.
WHISKEY SPIKED PEACH ICED TEA
Steps:
- Bring water to a boil in a small saucepan; remove from the heat, add tea bags, and let steep 5 minutes. Remove tea bags and stir in sugar until dissolved. Transfer to a pitcher, add peach nectar, and stir to combine. Chill in the refrigerator for at least 1 hour.
- Fill tall glasses with ice and then pour peach tea over, leaving some room at the top for the whiskey. Stir in 1 shot of whiskey to each glass and garnish with a peach slice and fresh mint sprig.

- Tip the sugar into a pan with 250ml water. Bring to the boil slowly, ensuring the sugar is fully dissolved. Add the chopped peaches and cook until very soft. Remove from the heat, mash the peaches with a fork, and leave to infuse for 1 hr.
- Sieve the syrup through a fine sieve into a jug, mashing the fruit to release all the liquid. The syrup will keep in the fridge for one week.
- Put the teabags in a large heatproof jug and pour over 2 litres boiling water. Leave to steep for 4 mins, then carefully remove the teabags. Leave to cool, then transfer to the fridge until chilled.
- Stir the peach syrup into the iced tea with some ice, or pour a little of the syrup into tall glasses and add the tea. Top up with more water, sparkling water or ice. Add peach slices to serve.

- Serve the iced peach green tea over lots of ice with an extra squeeze of lemon if you like. This tea keeps in a sealed jar in the fridge for up to 3 days. Shake before serving.
