SPICY BEER-Y BLOODY MARY



Spicy Beer-y Bloody Mary image

Malty, sweet brown ale brings body and fizz to the classic Bloody Mary. This version is thinner than the standard brunch staple, making it all the better for sipping with snacks.

3/4 cup chilled tomato juice
1 teaspoon Worcestershire sauce
1/2 teaspoon prepared horseradish
1/4 to 1/2 teaspoon hot sauce, such as Tabasco
3/4 teaspoon chili powder
2 ounces vodka
1 ounce fresh lemon juice
1/4 teaspoon freshly ground black pepper
1 tablespoon Kosher salt
One 12-ounce bottle chilled brown ale, such as Newcastle
4 Spanish olives
2 cornichons
Special Equipment: 2 small, decorative skewers

Steps:

  • Stir together the tomato juice, Worcestershire sauce, horseradish, hot sauce, 1/2 teaspoon of the chili powder, the black pepper, vodka and lemon juice in a spouted liquid measuring cup. Combine the remaining 1/4 teaspoon chili powder and the salt in a small shallow bowl. Wet the rim of two highball cocktail glasses and dip into the salt mixture to coat evenly. Pour half of the tomato juice mixture into each glass and top each with half of the ale. Garnish each cocktail with two olives and a cornichon on a skewer.

MINI KALE SHAKSHUKA

Number Of Ingredients 15

2 tablespoons olive oil
6 cloves garlic, minced
1 1/2 teaspoons sweet paprika
1 pound kale, stemmed and coarsely chopped
Kosher salt
1/2 cup chicken or vegetable stock
4 ounces feta cheese, crumbled
Freshly ground black pepper
Pinch of red pepper flakes
Juice of 1/2 lemon
6 large eggs
Greek yogurt
Za'atar spice
Fresh flat-leaf parsley, chopped
Crusty bread

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium cast-iron cocotte, heat the oil over medium heat. Add the garlic and paprika and cook, stirring, for 30 seconds. Add the kale in 2 or 3 batches, allowing it to wilt slightly between batches so it all fits in the pot. Add a good pinch of salt and cook, stirring often, until the kale is softened, 7 to 9 minutes.
  • Stir in the stock and cook until slightly reduced, about 5 minutes more. Add the cheese, a few turns of black pepper, a pinch of red pepper flakes and the lemon juice. Taste and adjust the seasoning as desired.
  • Distribute the kale mixture among 6 mini cast-iron cocottes and create a well in the center of each. Crack an egg into each well. Bake, uncovered, until the whites are cooked but the yolks are still runny; check for doneness at 12 minutes.
  • Top each cocotte with a drizzle of yogurt and a sprinkle of za'atar, parsley, salt and pepper. Serve immediately with crusty bread.

Coarse black salt, for the glass
2 ounces silver tequila
1 ounce green juice
1/2 ounce fresh lime juice
1/2 ounce agave syrup
Kale leaf, for garnish

Steps:

  • Dip the top 2 inches of a mason jar in water and roll in black salt to coat.
  • Combine the tequila, green juice, lime juice and agave in a shaker with ice; shake well. Strain into the prepared jar; add ice. Garnish with a kale leaf.
