CHEESY SPIDER DIP

Cheesy Spider Dip image

Provided by Nancy Fuller

Categories     appetizer

Time 3h35m

Yield 10 servings

Number Of Ingredients 10

Two 8-ounce packages cream cheese, softened
1 cup shredded sharp Cheddar
1 cup shredded Monterey Jack cheese
4 tablespoons unsalted butter, softened
1/4 cup salsa
Kosher salt and freshly ground black pepper
3 cups blue corn chips, finely crushed
2 olives
16 green beans, ends trimmed
Cut raw vegetables, tortilla chips or crackers, for serving

Steps:

  • In a stand mixer fitted with a paddle attachment, combine the cream cheese, Cheddar, Monterey Jack cheese, butter, salsa and some salt and pepper and beat until smooth. Alternatively, mix all the ingredients in a large bowl with a spoon. Reserve 1/3 cup of the dip and wrap in plastic wrap.
  • Make 2 balls with the remaining dip, one twice as big as the other, wrap in plastic, and shape into balls. Refrigerate all three portions of the cheese until hardened and cold, 2 to 3 hours.
  • Unwrap the two balls and coat in the crushed tortilla chips. Place on a platter directly next to each other and make eyes in the smaller ball with 2 olives. To make the legs, arrange 8 green beans to stick out of the "spider's" side, then place a small ball made out of the reserved 1/3 cup dip on the end of each bean and connect another bean to each ball to make long legs.
  • Serve with vegetables, crackers or tortilla chips.

CHEESE BALL RECIPE

Cheese Ball Recipe image

Provided by Beeta Hashempour

Yield 8

Number Of Ingredients 8

16 oz cream cheese (softened)
1 1/2 cups shredded cheddar cheese
1 oz taco seasoning
1/4 cup finely chopped green onions
poppy seeds (to sprinkle all over cheese)
eyeball sprinkles for eyes
pretzel rods for legs
assorted crackers (for serving alongside cheese ball)

Steps:

  • To a large bowl, add the cream cheese, cheddar cheese, and taco seasoning. Use an electric handheld mixer and beat the ingredients together until they're well blended.
  • Add the green onions and stir them into the cheese mixture using a spoon until they're well combined. Cover the bowl and chill in the fridge for several hours.
  • Scoop 1/2 cup of the cheese mixture and shape into a ball for the spider's head. Place on your serving plate.
  • Set 2 tablespoons of the cheese mixture aside. Then, shape the remaining cheese into a flatter, oval shape that will become the spider's body. Attach this to the spider's head on your serving plate.
  • Sprinkle poppy seeds all over the spider cheese ball. Use a paper towel to brush off any excess seeds from your serving plate.
  • Adorn spider's head with 2 eyeball sprinkles for the eyes. For the legs, break each pretzel rod in half, sticking half into the spider's body (3 legs per side). Spread some of the reserved cheese from earlier onto the remaining pretzel half and attach at a slanted angle to the pretzel half that's in the spider's body.
  • Serve with crackers on the side.

  • Place whole Oreo cookies (don't separate cookie from creme) in a blender or food processor. Pulse until they have been crushed into fine crumbs. Ensure there are no large pieces and transfer all but 2 tablespoons (set aside for later) to a large bowl or stand mixer.
  • Add the softened cream cheese (important it isn't too cold or melty) to the remaining Oreo crumbs. Using a hand mixer or the whisk attachment on a stand mixer, beat until ingredients are well combined and smooth. (If you don't have a mixer, knead with your hands until smooth and combined.)
  • Scoop Oreo "dough" by tablespoonsful (I like smaller balls so the ratio of Oreo to chocolate is bigger, but feel free to make them larger) and knead the balls until you can roll into a smooth and even ball. Repeat with all the dough until it is all rolled in balls.

  • Cut 1/4-inch thick slice from the Manchego and reserve. Shred remaining Manchego cheese on a box grater. In a large bowl combine the shredded Manchego, cream cheese, and goat cheese. Using an electric mixer, beat cheeses to combine, scraping the sides of the bowl occasionally.
  • Transfer 2/3 of the cheese mixture to a serving platter. Slightly dampen your hands and pat and shape the mixture into a round mound to form the spider’s body. Repeat with the remaining cheese to form the spider’s head. If the cheese is very soft, refrigerate until firm.
  • Using a small offset spatula or butter knife, spread the fig jam over the cheese to completely cover in a smooth, even layer. Cut 2 long thin triangles from the reserved Manchego cheese slice to form fangs. With a sharp knife, cut out 2 eyes from the remaining Manchego. Press the eyes and fangs into the spider’s head. Cut two small bits from the red pepper and press into the eyes for the pupils. Press the remaining red pepper above the fangs to form a smile.
