CHEESY SPIDER DIP
Steps:
- In a stand mixer fitted with a paddle attachment, combine the cream cheese, Cheddar, Monterey Jack cheese, butter, salsa and some salt and pepper and beat until smooth. Alternatively, mix all the ingredients in a large bowl with a spoon. Reserve 1/3 cup of the dip and wrap in plastic wrap.
- Make 2 balls with the remaining dip, one twice as big as the other, wrap in plastic, and shape into balls. Refrigerate all three portions of the cheese until hardened and cold, 2 to 3 hours.
- Unwrap the two balls and coat in the crushed tortilla chips. Place on a platter directly next to each other and make eyes in the smaller ball with 2 olives. To make the legs, arrange 8 green beans to stick out of the "spider's" side, then place a small ball made out of the reserved 1/3 cup dip on the end of each bean and connect another bean to each ball to make long legs.
- Serve with vegetables, crackers or tortilla chips.

- Combine all cheese ball ingredients in bowl; beat at medium speed until creamy. Cover; refrigerate 1 hour.
- Reserve 2 tablespoons cheese mixture for legs.
- Shape 1/2 cup cheese mixture into ball for spider head. Shape remaining mixture into round spider body. Place poppy seed into large shallow dish. Roll cheese balls in poppy seed, pressing seeds onto balls to coat. Place onto large plate or platter to form spider. Place black olive and red pepper piece onto toothpick. Insert into spider's head for eye. Repeat for other eye. Place red pepper piece for mouth. Cover; refrigerate at least 4 hours or overnight.
- Just before serving, attach legs by breaking each pretzel rod in thirds. Insert 3 pieces into each side of body; use reserved cheese mixture to attach remaining pretzel piece to form bent legs.
- Serve with assorted crackers and vegetables.

- Divide cheese ball into 1 large part and one smaller part and 8 1 inch balls.
- Begin with the large part. Shape into the body of your spider. Set aside when you are happy with the shape.
- Next take the smaller part and shape it into the head. Make sure the head is somewhat wide to make room for the eyes.
- Roll the pieces in pecan chips and press together on a plate to make the head and body of the spider.
- Next get 16 bread sticks. press two into the front side of the body near the head, make them kind of forward facing.
- Press 2 bread sticks into the back part of the body and make them somewhat rear facing.
- Next attach the other 8 pretzel sticks to the ones sticking out of the body using the 1 inch balls of cheese ball to finish the legs. dab a bit of cream cheese on the plate where you want the legs to sit, just to hold them in place.
- Next press 8 boiler onions into the head for eyes.
- Cut the black olive into 8 tiny pieces. attach to the center of each boiler onion with a dab of cream cheese to make eye balls.
- Chill for several hours or over night. Serve with your favorite crackers.

- To a large bowl, add the cream cheese, cheddar cheese, and taco seasoning. Use an electric handheld mixer and beat the ingredients together until they're well blended.
- Add the green onions and stir them into the cheese mixture using a spoon until they're well combined. Cover the bowl and chill in the fridge for several hours.
- Scoop 1/2 cup of the cheese mixture and shape into a ball for the spider's head. Place on your serving plate.
- Set 2 tablespoons of the cheese mixture aside. Then, shape the remaining cheese into a flatter, oval shape that will become the spider's body. Attach this to the spider's head on your serving plate.
- Sprinkle poppy seeds all over the spider cheese ball. Use a paper towel to brush off any excess seeds from your serving plate.
- Adorn spider's head with 2 eyeball sprinkles for the eyes. For the legs, break each pretzel rod in half, sticking half into the spider's body (3 legs per side). Spread some of the reserved cheese from earlier onto the remaining pretzel half and attach at a slanted angle to the pretzel half that's in the spider's body.
- Serve with crackers on the side.
