SPICY GARLIC SHRIMP SKEWERS
Grilled shrimp skewers marinated in chilli, garlic and spices are delicious as an easy appetizer or a light dinner served with salad.

Steps:
- Soak bamboo skewers in boiling water for at least 30 minutes.
- Combine the oil, honey, soy sauce, lemon, chillies, garlic and salt in a blender or food processor (you can use an immersion blender too) and blend until smooth.
- Place the shrimp in a bowl then pour over the marinade. Mix to make sure the prawns are covered then allow to marinade for 10-20 minutes.
- Thread the shrimp onto the skewers, pushing the skewer first through the tail and then through the thicker part to ensure they are secure on the skewers. Brush each skewers with marinade.
- Preheat the grill for 5 minutes on high heat. Add the skewers and cook for 1-2 minutes per side until the shrimp are caramelized and opaque.
- Remove from the grill and serve with lemon wedges.

BAHAMA SHRIMP SKEWERS
Rum, shrimps, pineapple...Just a few of the great flavors in this dish that remind you of a relaxing Summer vacation in the Islands :) I often adjust one of my recipes ( Recipe #367464 ) that I posted a while ago. But since it doesn't really resemble the original anymore I thought I'd post it as a seperate recipe. I never really measure when I cook, so these measurements are only estimates. You have to adjust the amounts depending on how spicy or sweet you like your shrimps. I get the best results using fresh ginger and lime juice but bottled works too. (Cook time includes marinating time) The perfect side dish would be Recipe #382390

Steps:
- Mix the first five ingredients in a bowl or zip top bag.
- Add all the spices, mix well, taste and adjust ingredients. Set a small amount of the marinade aside for basting later on.
- Add the shrimps, pineapple and veggies. Marinate in fridge for at least 3 hours.The longer the better.
- Put shrimps, pineapple and veggies onto skewers. If you use wooden ones, first soak them in lemon water to prevent burning.
- Grill on the BBQ for 12-15 minutes or until done. Keep turning and basting with the marinade you set aside earlier.
JALAPENO TIGER PRAWN GINGER SKEWERS
I use jalapeno chillies for this dish because they have a delicate flavour. Try to get a variety of colours - red, green and yellow.

Steps:
- Slit open the chillies from top to tail, taking care to leave the stalks intact. Scrape out the seeds. Divide the shredded basil and chopped ginger between the chillies and generously season the chiilies inside.
- Shell the prawns, leaving the tail section intact. Place a whole prawn inside each chilli, leaving the tail poking out of the pointed end. Smear a little butter on top of each prawn, then squeeze the chillies together to enclose the prawns.
- Thread 3 chillies, alternating colours, onto 2 short, parallel bamboo skewers so that the chillies look like the rungs of a ladder - you will need to soak the skewers for 20 minutes before using them. Repeat to make 8 ladders.
- Cook the chillies over fairly hot coals for about 5 minutes, turning frequently until they are softened and a little charred, and the prawns are cooked through. Serve with wedges of lemon. Delicious.

- Combine the allspice, thyme, cinnamon, cumin, nutmeg, cayenne, black pepper and salt in a bowl. Add the shrimp and toss thoroughly.
- Heat 1 teaspoon of the oil in a small nonstick skillet set over medium-high heat. Add the shrimp in a single, uncrowded layer and cook until no longer translucent in the center, 2 to 3 minutes per side. Transfer to a plate.
- Heat the remaining 1 teaspoon oil in the skillet. Add the pineapple and cook until lightly browned, about 1 minute. Turn and cook until again lightly browned on the underside, 1 minute more. Remove from the heat.
- Thread each skewer in the following order: mint leaf, pineapple chunk, shrimp, pineapple chunk and mint leaf. Serve warm or at room temperature.

PINEAPPLE-GLAZED SHRIMP SKEWERS

"With a flavor that's somewhere between Asian and Caribbean, these skewers are hard to label but easy to make and tasty enough that they'll be a hit with the whole family. **NOTE: If you're using wooden skewers, soak them in warm water for 30 minutes beforehand, so they don't burn on the grill. **Note: There's just a touch of heat in the glaze from cayenne pepper. - Combine 2 cups of the pineapple, the sugar, vinegar, soy sauce, and garlic in a blender and blend on high until smooth, about 30 seconds.
- Pour into a medium saucepan and bring to a boil over medium heat.
- Skim off any foam and reduce heat to low.
- Simmer until glaze is thick and syrupy enough to coat the back of a spoon and has reduced to about 3/4 cup, about 30 minutes.
- Stir in cayenne and set aside to cool slightly, at least 5 minutes. Meanwhile, heat a gas or charcoal grill to high (about 400°F) or a grill pan over high heat until very hot.
- Skewer 1 shrimp, making sure to pass the skewer through the thick portion and the tail portion, then skewer 1 piece of the remaining pineapple. Repeat, alternating between the two and leaving a space in between, until you have 3 shrimp and 2 pineapple pieces per skewer. Brush skewers on one side with glaze.
- Rub the grill with a towel dipped in vegetable oil, place the skewers on the grill glaze side down, and brush the other side of the skewers with more glaze.
- Continue brushing and turning every few minutes until the thick portions of the shrimp are white and firm, about 10 to 15 minutes.
- Remove from the grill and serve immediately.

SPICY SHRIMP (PRAWN) SKEWERS
A Caribbean recipe. I haven't tried these but they sounded great. Shrimp are called prawns in Australia. Don't forget to soak your skewers. Prep time does not include time to marinate.

- Stir together the lime juice, honey, soy sauce, and oil in a large bowl. Season with jerk seasoning, hot pepper sauce, salt, and pepper.
- Add the prawns and toss well to coat. Cover, and refrigerate for one hour to marinate.
- Preheat an outdoor grill for medium-high heat.
- Remove skewers from the water, pat dry, and spray with nonstick cooking spray. Skewer the shrimp. Grill the shrimp on the grill on both sides until pink and opaque, about 5 minutes per side.
