2 cups Raisin Bran cereal, Divided
1 1/4 cups nonfat milk
1/4 cup margarine, melted, divided
1 egg
3/4 cup sugar
2 cups flour
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1 tablespoon sugar

Steps:

  • Pre-heat oven to 350 deg F.
  • Mix 1 ½ cups of Raisin Brand, Milk, 2 tablespoons of the Margarine in bowl.
  • Add Egg and ¾ cup Sugar, mix well.
  • Stir in Flour, Baking Powder and Cinnamon.
  • Mix till well blended.
  • Put in sprayed 9X5 loaf pan.
  • Mix remaining ½ cup of cereal, 2 tablespoons Margarine and 1 Tablespoon Sugar.
  • When well blended sprinkle over batter and press into the batter.
  • Bake 50 minutes. Cool 10 minutes before removing from pan.

1 cup hot, brewed coffee
½ cup raisins
½ cup shortening
1 cup white sugar
2 eggs
2 tablespoons molasses
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon ground ginger
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts

Steps:

  • Soak raisins in coffee until plump. Do not drain.
  • Cream together the shortening, sugar and eggs. Blend in molasses and vanilla.
  • In a large bowl mix together the cinnamon, nutmeg, cloves, ginger, flour, baking soda, and salt. Make a well in the center of the bowl.
  • Add the liquid ingredients to the well in the dry ingredients. Stir in coffee with raisins and nuts. Pour batter into a greased 9x5 inch loaf pan.
  • Bake in a preheated 350 degree F(175 degrees C) oven for one hour.

1 cup whole wheat pastry flour
1 cup oat flour
2 teaspoons baking powder
1 1/2 teaspoons ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 large egg
1 cup nonfat milk
1/4 cup light brown sugar, packed
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup dark seedless raisins

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease an 8 x 4 inch loaf pan.
  • In a large mixing bowl, whisk together whole wheat pastry flour, oat flour, baking powder, ground allspice, ground cinnamon, and salt.
  • In a medium mixing bowl, whisk together egg, nonfat milk, light brown sugar, melted butter, and vanilla extract.
  • Add wet ingredients to dry, and mix until just combined; then gently stir in dark seedless raisins.
  • Spoon batter into prepared loaf pan, and level the top.
  • Bake for 45 to 50 minutes, or until a wooden toothpick inserted into the center comes out clean.
  • Let bread cool in pan for 10 minutes; then remove from pan and transfer to a wire rack to cool completely before serving.
