SPICY KING RANCH CHICKEN

Spicy King Ranch Chicken image

My Grandmother used to make this when I was a child. When she passed, I found the recipe in one of her old cook books. I have since tweeked it a little bit. I think it has more flavor this way.

1 cup diced onion
1 cup diced green bell pepper
4 garlic cloves, diced
5 tablespoons olive oil, divided

Time 55m

Number Of Ingredients 8

1 Can Rotel tomatoes, I like the hot variety
1 can cream of Chicken *, Gluten-Free of course!
1 can chicken broth **, Gluten-Free as well
4 cups cubed chicken or you can use two, 12.5 ounce cans of canned chicken!
2 cups shredded cheese, plus some for sprinkling on the top of the dish., I prefer colby-jack for this recipe
1/2 chopped red onion
crushed red pepper flakes or sriracha to taste, we like it spicy and we use both!
Gluten-Free corn tortillas (10-12 depending on the size of tortilla, but one package of tortillas will be enough)

Steps:

  • Preheat the oven to 350 Fahrenheit.
  • In a large bowl, combine all ingredients (except for the tortillas). Stir to combine.
  • In a 9 x 13 baking dish, layer a single layer of the tortillas on the bottom of the pan.
  • Place 1/3 of the mixture on top of the tortillas. Do this tortilla-mixture layering two more times (so there is 3 layers total of each of the two layers)
  • Sprinkle the top of the casserole with the extra shredded cheese and then bake for 50-60 minutes, or until the top is golden brown and the chicken pieces are cooked thoroughly. Let sit 5 minutes to cool and set and then enjoy!

A TRUE TEXAN'S KING RANCH CHICKEN

A True Texan's King Ranch Chicken image

The quintessential Texan feel-good comfort casserole. From a friend who used to own a well-known catering business in Humble, Texas. This is the best! You can make this LOW-CARB by substituting R.W. Garcia Low-Carb Tortilla Chips (or other kind) for the Tostitos.

Provided by Tropical Texan

Categories     One Dish Meal

Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 8

6 boneless skinless chicken breasts, cooked and shredded
1 (10 1/2 ounce) can condensed cream of chicken soup
8 ounces sour cream
1 cup medium heat salsa (I use Pace)
1 (5 ounce) can evaporated milk or 5 ounces heavy whipping cream
1 lb shredded colby-monterey jack cheese, divided
1 (5 ounce) can sliced black olives
1 (12 ounce) bag tostitos gold yellow corn chips

Steps:

  • Preheat oven to 350*F.
  • Take 1/2 the bag of chips and layer them on the bottom of a greased 13" x 9" x 2" casserole dish. Then place shredded chicken atop the layer of chips. Layer half of the cheese on top of the chicken.
  • In a separate bowl, prepare sauce. Combine salsa, sour cream, cream of chicken, evaporated milk (or heavy cream), and olives and mix well. Pour over casserole, then add the remaining cheese on top. Cook for 1 hour, or until the top is brown and bubbly. Check it when there is about 15 minutes left--you may want to cover with foil for remainder of cook time.

KING RANCH CHICKEN

King Ranch Chicken image

Here is my twist on this classic dish. My family loves it creamy and loaded with tons of vegetables. It is a one-dish wonder. Of course, veggies can be changed-up, based on what is in season and in the house when cooking. I have even wondered if black beans would be good in it. Mix it up and make it work for your family too!
