- Combine sauce ingredients.
- Set aside.
- Cut bacon slices in thirds.
- Wrap bacon pieces around water chestnuts; secure with toothpicks.
- Place in 2 casserole dishes.
- Bake at 425 degrees for 10-15 minutes.
- Drain grease.
- Pour sauce over water chestnuts.
- Bake for about 30 minutes more or until bacon is cooked.

SPICY KETCHUP GLAZED BACON-WRAPPED WATER CHESTNUTS
These will be a huge hit at your party! the recipe may be doubled or tripled, you may wrap all the chestnuts hours in advance and refrigerate until ready to bake --- try to purchase the thin sliced bacon for this then slice each strip into three pieces --- I use the Heinz spicy ketchup, if you cannot find the spicy ketchup just add in some cayenne pepper, also try to purchase the thicker long toothpicks :)

- Set oven to 350 degrees F.
- Grease a 13 x 9-inch baking dish.
- In a small saucepan over low heat; cook the spicy ketchup with the brown sugar, stirring until no sugar granules remain; set aside (this can be done up to a day in advance).
- Dry each water chestnut using a paper towel.
- Wrap one small slice of bacon tightly around each water chestnut, then secure with a toothpick.
- Place into baking dish.
- Lightly cover the dish with foil.
- Bake for about 35-40 minutes or just until the bacon is crispy.
- If desired you may bake uncovered for a couple of minutes just to crisp up the bacon more.
- Remove from oven and drain the fat/grease.
- Drizzle the prepared sauce mixture over each chestnut, return to oven and bake uncovered for about 8-10 minutes more.
BACON WRAPPED WATER CHESTNUTS
My mother used to make these and keep them warm on a warming tray (the kind you plug into the wall) for appetizers. These are really easy and my dh loved these simple appetizers -- plus they can be considered emergency appetizers too as it's easy to have the three ingredients (bacon, a can of water chestnuts and brown sugar) needed to make these on hand all the time.

SUPER EASY BACON WRAPPED WATER CHESTNUTS (MODIFIED RUMAKI)
This is a quick and simple recipe for a hot Hors d'oeuvre or appetizer that is always a crowd pleaser. My family has been making these for years and I do not know where the original recipe came from.

Steps:
- Open can of water chestnuts and drain. Place the water chestnuts on paper towel and let air dry. If you're in a hurry, you may also pat them dry with paper towel.
- Cut each strip of bacon in thirds.
- Wrap bacon around water chestnut and secure with toothpick. Repeat until all are wrapped.
- Place bacon-wrapped water chestnuts on a cookie sheet sprayed lightly with cooking spray or lined with tin foil for easy clean up. If using tin foil, go ahead and spray the tin foil with cooking spray, as well.
- Brush each bacon-wrapped water chestnut with your favorite barbeque sauce. **OR** If you are lazy, like me, dump the barbeque sauce into a bowl and just dip each bacon wrapped water chestnut into the barbeque sauce and shake off excess.
- Place on top rack in oven under the broiler. Broil for about 10 minutes. Take them out of the oven and turn them all over. Brush again with barbeque sauce, if desired. Place under the broiler again for about another 10 minutes. You should watch these pretty closely to be sure not to burn. You are looking to cook the bacon through until it crisps.
- Serve and enjoy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cut each strip of bacon in half. Wrap one strip around one water chestnut. Secure with a wooden toothpick. Place in shallow baking dish.
- Bake at 350 degrees F (175 degrees C) for 20 minutes.
- While the wraps are baking, in a small mixing bowl combine brown sugar, mayonnaise, and chili sauce to make barbecue sauce. After the wraps have finished baking, transfer them (removing them from the grease) to a second shallow baking dish. Pour the sauce over the wraps.
- Bake at 350 degrees F (175 degrees C) for 10 to 15 additional minutes, or until bacon is crispy. Serve hot out of dish with toothpicks.

- Preheat oven to 350 degrees Fahrenheit.
- If desired, cut larger water chestnuts in half for easier eating and more pieces.
- Soak water chestnuts in soy sauce for 15 minutes, stirring a few times to make sure they are fully coated.
- Remove water chestnuts from soy sauce.
- Wrap 1/2 strip of bacon around each; secure with toothpicks.
- Reserve soy sauce.
- Place toothpick side "up" in a 9" x 13" glass baking dish.
- Bake at 350 degrees Fahrenheit for 20 to 30 minutes or until crispy.
- Remove from oven; drain bacon fat.
- Meanwhile, mix reserved soy sauce, ketchup and brown sugar in a bowl.
- Pour the mixture over the chestnuts to coat them evenly.
- Bake an additional 20 to 30 minutes (again checking for crispness of bacon).
- Serve hot, with or without seafood sauce.

The consensus is that even though you loose the strong bacon flavor when you put the rub on it, the hot and sweet flavors of the rub really kick this old time standard up. - I purchase the REAL thick bacon at Sam's Club. This way I use less pieces, but get more texture because of it's thickness. If you're using another (thinner) bacon, you'll have to adjust the cutting of the bacon appropriately.
- Work with the bacon cold, right out of the refrigerator. It will be a lot easier to cut because it will be relatively hard. If you let it warm up, it'll be too soft to be able to cut evenly.
- Cut the bacon into quarters, then each piece (lengthwise) in half. Let it sit out for at least 10 minutes before you begin wrapping the chestnuts to let it soften. If it's too cold, you won't be able to stretch the bacon around the water chestnuts.
- Wrap 1 piece of bacon around one water chestnut, and secure with a tooth pick. Be careful not to put the toothpick in too far because it will split the water chestnut. Place them in a bowl.
- Mix the rub by combining the blacken and the dark brown sugar, and mixing well. Dump it on the water chestnuts, and carefully mix it around to evenly coat all.
- It's OK to place these in a plastic bag and refrigerate overnight, but be sure to use the thicker freezer type bags otherwise the toothpicks will tear the bag up.
- Preheat oven to 350 degrees.
- Place a pieces of parchment paper in a sheet pan, and place the wrapped water chestnuts on so that they don't touch.
- Bake about 15 minutes. Or, until the bacon is crisp.
- Serve while hot.

- Marinate the water chestnuts in soy sauce for 1 hour.
- Drain.
- Roll each chestnut in the brown sugar.
- Wrap each chestnut with a piece of bacon.
- Secure with a toothpick.
- Arrange on a cake rack in a shallow baking pan.
- Bake at 400 degrees F for about 30 minutes or until golden brown.
- Drain on paper towels.
- NOTE: This can be prepared ahead of time and stored in refrigerator until ready to bake.
