4 ounces linguine pasta
2 boneless, skinless chicken breast halves, sliced into thin strips
2 teaspoons Cajun seasoning
2 tablespoons butter
1 green bell pepper, chopped
½ red bell pepper, chopped
4 fresh mushrooms, sliced
1 green onion, minced
1 ½ cups heavy cream
¼ teaspoon dried basil
¼ teaspoon lemon pepper
¼ teaspoon salt
⅛ teaspoon garlic powder
⅛ teaspoon ground black pepper
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat.
  • In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5 to 7 minutes. Add green and red bell peppers, sliced mushrooms and green onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper, and heat through.
  • In a large bowl, toss linguini with sauce. Sprinkle with grated Parmesan cheese.

1 pound fettuccine
About 3 teaspoons Cajun spice mix
3 whole boneless, skinless chicken breasts, cut into cubes
2 tablespoons butter
2 tablespoons olive oil
3 cloves garlic, minced
1 whole green bell pepper, seeded and sliced
1 whole red bell pepper, seeded and sliced
1/2 large red onion, sliced
Salt
4 whole Roma tomatoes, diced
2 cups low-sodium chicken broth
1/2 cup white wine
1 cup heavy cream
Cayenne pepper, for sprinkling
Freshly ground black pepper
Chopped fresh parsley, for garnish

Steps:

  • Cook the pasta according to package directions. Drain when the pasta is still al dente; do not overcook!
  • Sprinkle 1 1/2 teaspoons Cajun spice (or more) over the chicken cubes. Toss around to coat. Heat 1 tablespoon butter and 1 tablespoon oil in a heavy skillet over high heat. Add half the chicken in a single layer; do not stir. Allow the chicken to brown on one side, about 1 minute. Flip to the other side and cook an additional minute. Remove with a slotted spoon and place on a clean plate. Repeat with the remaining chicken. Remove the chicken, leaving the skillet on high heat. Add the remaining butter and olive oil. When heated, add the garlic, peppers and onions. Sprinkle on the remaining Cajun spice, and add salt if needed. Cook over high heat for 1 minute, stirring gently and trying to get the vegetables as dark/black as possible. Add the tomatoes and cook for an additional 30 seconds. Remove all the vegetables from the skillet.
  • With the skillet still over high heat, pour in the chicken broth and wine. Cook for 3 to 5 minutes, scraping the bottom of the pan to deglaze. Reduce the heat to medium-low and pour in the cream, stirring/whisking constantly. Cook the sauce over medium-low heat for a few minutes, until the cream starts to thicken the mixture. Taste and add freshly ground black pepper, cayenne pepper, and/or salt to taste. The sauce should be spicy!
  • Finally, add the chicken and vegetables to the sauce, making sure to include all the juices that have drained onto the plate. Stir and cook until the mixture is bubbly and hot, 1 to 2 minutes. Add the drained fettuccine and toss to combine.
  • Top with chopped fresh parsley and chow down!

Spicy and creamy Cajun Chicken Pasta is packed with vegetables and loaded with flavor! This simple and quick dinner recipe features bell peppers, perfectly seasoned flavorful chicken breasts, and luscious cream sauce.

2 teaspoons smoked paprika
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon thyme
1 teaspoon marjoram
1 teaspoon garlic powder
1/4 teaspoon Cayenne pepper
1/4 teaspoon salt
2 tablespoons olive oil
1.5 pounds boneless skinless chicken breasts (, thinly sliced)
10 ounces pasta
1 red bell pepper (, diced)
1 yellow bell pepper (, diced)
1 cup heavy cream
1/4 cup Parmesan cheese (freshly shredded)
1/4 teaspoon red pepper flakes
salt (to taste)

Steps:

  • Combine ingredients for Cajun seasoning in a small bowl. Or, alternatively, use 2 tablespoons of your favorite Cajun seasoning. My recommendation is Frontier Cajun seasoning.
  • Place 2 chicken breasts in a shallow bowl and coat on both sides with 1/2 of the Cajun seasoning. Save the remaining 1/2 of the seasoning for pasta. Note: be sure to use thinly sliced chicken breasts. That means if you bought large chicken breasts, slice each one in half horizontally.
  • Heat 2 tablespoons of olive oil in a large skillet on medium-high heat. Add the chicken breasts seasoned with Cajun spice and cook for about 4 minutes on each side. Turn off the heat, cover the skillet with the lid, and let the chicken sit, covered, off heat for about 10 minutes until it's completely cooked through. Remove the chicken to a plate and slice chicken thinly.
  • In the meantime, bring a large pot of water to boil. Add pasta and cook according to the package instructions (that usually means somewhere between 10 or 15 minutes). Drain pasta.
  • Add diced bell peppers to the same, now empty, skillet that you just used to cook chicken. Cook on medium heat for about 4 minutes until bell peppers are slightly softened. Remove 1/2 of the cooked bell peppers to a plate, leaving the remaing 1/2 in the skillet.
  • To the same skillet with 1/2 of the cooked bell peppers, add the cream, the remaining 1/2 of the Cajun seasoning, and freshly shredded Parmesan cheese. Bring to a brief boil, reduce to simmer, and cook, constantly stirring, until the cheese starts to melt, for several minutes.
  • Add drained cooked pasta to the skillet with the cream sauce and heat through on low heat. Season with red pepper flakes, more salt and extra cayenne pepper, if desired. Top with sliced cooked chicken and the remaining 1/2 of cooked bell peppers.

SAUCE:
1 (10-ounce) package fettuccine pasta
1 boneless chicken breast, cooked and sliced into strips
1 tablespoon grated parmesan cheese
1 teaspoon parsley, chopped
2 tablespoons olive oil, plus more to taste
1 tablespoon fresh garlic, chopped
1/2 cup onion, coarsely chopped
1/2 cup green pepper, coarsely chopped
1/2 cup red pepper, coarsely chopped
1 cup chicken stock
1 cup V-8 juice
1/8 teaspoon cayenne pepper
1 tablespoon cornstarch
2 tablespoons cold water
salt and pepper, to taste

Steps:

  • Cook fettuccine to al dente, drain, and set aside. SAUCE: In large size saucepan, heat the oil. Add garlic, and sauté for about 30 seconds or until fragrant. Add onions and sauté until translucent, about 1 minute, then add peppers and continue to sauté for another minute. Deglaze with chicken stock, bring to a simmer, and reduce by half. Add V-8 juice and cayenne pepper and bring to a boil, reduce heat, and simmer for 10 minutes. Mix cornstarch with cold water to make a slurry. Add slurry to sauce, stirring constantly until it reaches saucy consistency. Season with salt and pepper. Add the fettuccine to the sauce and gently mix until it is heated. Arrange the fettuccine on serving dish and top with chicken breast. Sprinkle with parmesan and parsley. Drizzle with olive oil if desired.

4 boneless skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
cajun seasoning (I use homemade "Essence")
garlic powder
fresh ground pepper
4 -6 ounces cream cheese
1/2 cup half-and-half (approx.)
1/4 cup grated fontinella cheese

Steps:

  • Heat olive oil & butter in a skillet over medium-high heat.
  • Generously season one side of each chicken breast with Cajun Seasoning, garlic powder and black pepper.
  • Place chicken in skillet then season the other side.
  • While chicken is cooking prepare pasta according to package directions.
  • When chicken is cooked through and browned on both sides, remove to platter, cover and keep warm.
  • Reduce heat to low. Add cream cheese to pad drippings, add half-and-half. Amount of cream cheese and half-and-half will vary depending on desired consistency and spiciness. Stir to melt cream cheese - do not boil.
  • Serve sauce over cooked pasta. Top with sliced chicken and shredded cheese.

1/4 cup butter
1 green bell pepper, chopped
1 red bell pepper, chopped
1/2 white onion, sliced and quartered (1 cup)
1 garlic clove, pressed
2 boneless skinless chicken breast halves
2 tablespoons olive oil
1 medium tomatoes, chopped
4 -6 mushrooms, sliced (1 1/4 cup)
1 cup chicken broth
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
1/4 teaspoon paprika
1/4 teaspoon dried thyme
12 ounces fettuccine
2 teaspoons parsley, fresh is preferred

Steps:

  • Melt 2 tbs butter in large skillet over medium-high heat. Saute the bell peppers, onions and garlic in the butter for 8-10 minutes until softened slightly. If you like your veggies blackened in this type of dish, like I do, give them a couple more minutes until the edges start to turn black.
  • While the veggies are cooking, cut the chicken breast into bite size pieces.
  • Prepare a medium size pan over high heat with the olive oil. When the pan is hot, add the chicken and cook, stirring for 5-7 minutes, or until the chicken is no longer pink.
  • When the vegetables are softened or blackened to your liking, add the chicken to the pan.
  • Add the tomatoes, mushrooms, chicken stock, 1/4 tsp salt, cayenne pepper, paprika, pepper and thyme and simmer for 10-12 minutes until thickened. If you like your sauce a little thicker, just add 1/2 teaspoon cornstarch to a couple tablespoons of the liquid from the saucepan. Stir until smooth, remove pan from heat and whisk in cornstarch/sauce mixture, then put back on the heat.
  • While the sauce is simmering, prepare fettucini according to package directions and serve sauce over plated noodles. Sprinkle a little parsley over each serving to complete.
