This is a great cheesy and flavorful appetizer for holidays or any other time. Betcha can't eat just one as they are delicious. Great served with buttery round crackers. Extras can be frozen.

Steps:
- In a medium bowl, combine olives, pimentos and green onions; mix well.
- Combine butter or margarine, cream cheese and blue cheese; stir in olive mixture.
- Shape into balls or logs and roll in chopped nuts; serve.

- Heat oven to 350 degree F. Spray or grease bottom and sides of 15x10x1-inch pan. In large bowl, stir together veggie-cheese ball ingredients.
- Slightly wet hands with water for easier rolling; shape mixture into 1-inch balls; place on pan.
- Bake 20 to 25 minutes or until golden brown. Meanwhile, in small bowl, mix dipping sauce ingredients.
- Immediately remove balls from pan. Serve warm with sauce for dipping.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat oil in a skillet over medium heat. Saute onions until soft and translucent; transfer to a large bowl. Add ground chicken, baking mix, shredded cheese, garlic and red pepper flakes. Mix well, and form into 1 inch balls. Place on a non-stick baking pan.
- Bake in preheated oven for 15 to 20 minutes, or until browned.

SPICY FISH BALLS IN TOMATO SAUCE
I adapted this one from a great cookbook called 'The Fish Cookbook'. A good all year round recipe, I like to serve this with roast potatoes and a green vegetable.

Steps:
- Wash the fish, pat dry with kitchen paper and cut into small pieces.
- Place into the bowl of a food processor with the coriander, salt, pepper, eggs, cream or yoghurt, half the breadcrumbs and the lemon juice and process for 45 seconds until the mixture is smooth and creamy.
- Chill the mixture for an hour.
- Whizz all the sauce ingredients together in a food processor or blender to make a smooth sauce.
- When you are ready to cook the fish balls, pre-heat the oven to gas mark 6, 400F (200C).
- Heat a little oil in a heavy frying pan.
- Using your hands, form the fish mixture into snooker sized balls, roll them in the remaining breadcrumbs and fry them gently, turning them occasionally until they are an even golden brown.
- Place the cooked fish balls in a shallow baking dish and pour over the sauce.
- Bake in the oven for 20 minutes until bubbling.

- Mix grated cheese with 1/2 teaspoon chili powder. Take 1 teaspoon of the cheese mix and form a ball.
- When all cheese balls are done, roll them through flour. Mix egg with water and beat well. Mix the bread crumbs with remaining chili powder. Dip the cheese balls in egg, one at a time, then roll through flour again then back to egg dipping. Lastly roll through bread crumbs and nicely coat the whole ball.
- When all balls are coated as above, heat oil in a skillet. The oil should cover at least half the balls. Cook the cheese balls until golden, about 3 minutes on each size. Remove on a paper towel. Stick a toothpick so they're easier to grab and serve.
